Today I’m partnering with your mother. It’s cold outside. Let’s all bundle up in our favorite fuzzy-wild-animal-looking hoodies. Let’s wear face masks and giant mittens. And let’s definitely eat our vegetables. Lots and lots of veggies. Today’s recipe is inspired by moroko, a dish enjoyed in the African country, Lesotho. Typically, Moroko is made with onions and greens, sauteed in oil with a bit of broth, not unlike the Kale (Sukuma Wiki) we made recently for Kenya. Moroko can be made with any dark greens you’d like, such as kale, spinach, chard, or mustard greens. Optionally, beans or potatoes can be added. But I have a secret – the most wonderful mash around is when you add mustard greens to potatoes. And this mash, inspired by Lesotho, is what we’re serving up today. Take a dive off the deep end with this beloved Kuwaiti dish that boasts warm hits of cinnamon, turmeric, saffron mingled with sweet caramelized onions and raisins. We made ours with chicken, but you can also make it with fish or lamb. If you get a big enough chicken it can feed a happy collection of people (about 4-6). For our version the traditional preparation involves simmering the chicken in fragrant water (which is then used to make the rice). Serves 2-4 Let’s get up and greet the day like an Indonesian. Stretch your arms to the sky. Touch the earth. Pile your plate with fried rice. And cow’s eyes. Now, don’t get me wrong. I don’t mean a cow’s cow eyes. I mean fried eggs. That’s simply what they call them in Indonesia. As far as breakfast goes, Nasi Goreng is incredibly satisfying. Especially if you eat it on top of an 8th century Buddhist monument. And why not? With stove-top travel, we can go wherever we want. Note: This recipe is best made with day-old rice. If you cannot take the time for this, cool your rice in a thin layer on a cookie sheet in the fridge. You should be able to use it after an hour or two. You’re basically looking for it to be dry to the touch. Moist rice will not fry up right – it will get mushy. Serves 4 It’s creamy. It’s earthy. It’s one of my favorite dishes from India. Ladle saag panner over basmati rice and it’s also a surefire way to get a picky man to eat his spinach. Ingredients: vegetable oil 1 tsp fresh grated ginger 1 tsp fresh grated turmeric 2-3 tsp homemade garam masala 1 onion, chopped 3 cloves garlic Serrano chili, sliced thinly (to taste) 1 lb frozen spinach, thawed, juices retained homemade paneer, to taste salt pepper finishing touch 2 Tbsp butter 1/4 cup half and half (or more to taste) Method: There’s only one way to get a picky man to love spinach. Load it up with good flavor. Blend it so it’s no longer slimy. And add some delicious cheese to distract him from all the green. First step: gather the ingredients. “Whose recipe is this? No, no, no. Much more paprika! Heap it on!” And so the Adventure to recreate a favorite childhood supper began. I say this is mom’s chicken paprika, but it didn’t start out that way. I had a basic recipe and then asked for her help to execute it. As we simmered along, however, mom tossed corrections my way – saving me from disaster and cluing me into how she would have made it, if she was the one wielding the wooden spoon. I promise you – although Chicken Paprika is not much to look at (especially if you add chunky chopped onions, like I did), it tastes amazingly creamy and – if you use good, half-sharp paprika – surprisingly spicy. Serve with buttered noodles for a completely addicting bite of Hungary.
