About the food of Trinidad & Tobago

If you’d like to dig into a melting pot, try visiting Trinidad and Tobago via stovetop travel. These Caribbean islands, right off the coast of Venezuela, are known for having absorbed a bit of Spain, Portugal, France, Dutch, China, Africa, Creole, and Indian cooking… and spat it back out in their own, lovely cooking style. From what I can tell, the food is spicy, bold, and – like a brilliant tapestry – layered with infinite threads from the many influences… which weave an intricate flavor portrait. Curry is probably Trinidad and Tobago’s most popular food, often seasoned with an incredibly hot batch of Green Seasoning, or some variation thereof. This could be fish curry, chicken curry, long bean curry, or pretty much whatever your heart desires. My very global Christmas menu is… vegan!

Sometimes I have my act together. Like Thanksgiving. I was pretty well organized and knew what I wanted to make way ahead of time. I had a grocery list two weeks before necessary and practically had everything timed out to the minute. Not today. I am still desperately trying to figure out what to make for our big holiday dinner in just a few days. Mom”s been mostly vegan these last couple of years days so I’m thinking we’ll have mostly vegan and vegetarian dishes, with one or two other treats, for Keith and I. O’ happy day. We’re almost halfway.

97 Over the last (almost) two years we’ve eaten meals from 97 countries* of the world. That means we’ve eaten just about half the world. Deep breath. Smile. Yum. We’re on our way. 12 In addition, I’ve met more than a dozen people exactly when I needed them to help me cook their countries. And when I say exactly, I mean in the week or days leading up to the country in question. Some straight-up knocked on my door, some were my checkout girls at Whole Foods, others were random mommies at library story times, while still others reached out via email.** Meeting someone who could help me with my recipes exactly when I needed them once is cool. Twice is a little creepy. More than a dozen times? Totally and completely epic. What does it all mean? The stars have aligned. I am on the right path. Correction: we’re on the right path. Gingerbread Cuteness; Celebrating our Local Winner

I’d like to frost my hair. Not in the 80’s “cool-hip-extra-frosted-spiky-tips” way, but with actual frosting. That way I could nibble on my hair whenever I got peckish. And, if given the choice, I definitely would live in a gingerbread house, like the witch in Hansel and Gretel. But I wouldn’t be a witch; I’d simply eat candy all day long. Our Globally Inspired Thanksgiving

Hi Friends! This week we’re taking a break from our A-Z cooking Adventures for the week. I’m not sure what to make of that. I feel sort of exposed. Vulnerable. Like I’m in one of those dreams in which I am not dressed appropriately for the situation. Like… at all. The Amazing Sophie Herbert

“Me, me, me” is most certainly not Sophie Herbert’s mantra. Sophie’s passion for social activism on a global scale shines like a bright light. Everything she does is for the benefit of others – from yoga, to singing; from films, to writing. She’s been to India 8 times, spending a total of about 14 months there as a volunteer and yoga instructor.  She’s also taught yoga in Kazakhstan for 3 months. Imagine if this was your view… Imagine if you could be in these places… Imagine if the world was your back yard. You’re in for a real treat today – Audrey Scott and Dan Noll from Uncornered Market are here to answer a few questions. They live a life I can only dream about. They explore the world for a living. The world is their back yard. That’s right. In 2006 left their corporate desk jobs, got rid of their belongings, and went off to… well, wherever the wind blows them. They support themselves by writing travel articles, sharing their inspiring photography, and with their web site. What does this mean?
