Today’s inspiration comes from Syria and the pucker of sour cherries, which will be in season sometime in the next few weeks, depending where in the world you live. Syrian Lamb Kebabs with Cherries can be made two different ways. The first is easy – you string up the meat along with the sour cherries. The second involves creating a gravy of sorts with the sour cherries and serving the whole shebang on a platter over pita bread. The latter is more of a winter dish, so we’re going all summer, all the way. Yes, I have a three year old daughter. No, I don’t hide a head of cauliflower in her mashed potatoes. I never slip zucchini in her pancakes when she’s not looking. And I refuse to bury carrots in her cake. I don’t cater to my daughter that way. Don’t get me wrong. On any old Monday, Ava can blow through a bowl of cauliflower mashed potatoes. Swaziland’s swooping slopes are dotted with crops; it is here that the Swazi grow the freshest produce, from sunshine yellow lemons, to buttery avocados. With farming of that caliber, it should come as no surprise that Swazi Salads are especially grand. This is not to say they are carefully composed salads. (Most things that are careful, aren’t nearly as delicious.) No, these are simple, heaped piles of chopped veggies. But you can get them on the side of even the most humble plate of beans, which counts for, well, everything. I’ve had lots of corn bread before, but never something as rich and flavorful as this Mealie Bread. The main difference between this and ordinary corn bread is that it doesn’t rely on cornmeal, but actual corn to flavor the bread. Mealie Bread is a treat you will find throughout southern Africa. Introducing Geodangan, your answer to healthy munchies. (Honestly, I’m not sure if there’s such a thing as healthy munchies. But if there were, then this is it.) This Asian-style salad that is incredibly popular in Suriname. And for good reason. Don’t be shy. Geodangan is everything spring has to offer – crisp green beans, giant cabbages, golden yolked eggs… with the addition of a coconut, lime, yogurt dressing. (The dressing could also be coconut sambal, a spicy shredded coconut condiment.) Either way, you’ll feel like your in Suriname… by way of Indonesia. And that’s definitely a good thing. Today’s recipe for Goedangan is adapted from Holidays of the World Cookbook for Students; they suggest serving the salad for a traditional Surinamese lunch, which I think sounds just lovely. The South Sudanese love a good, chopped tomato salad on the side of their meals. Often, it’s no more than tomato, onion, and hot, green chili peppers… perhaps a spot of parsley… But other times, a bit of peanut butter and lime juice makes for a grand dressing… and tastes just like home, if you happen to be from South Sudan. When I was deciding which of the two recipes to try, the choice was clear: if peanut butter is involved, the answer is yes. Most definitely, yes. You can make this vegan recipe as spicy as you’d like by adding more (or less) chili peppers. I thought two Thai birds made a nice, mild/medium heat (bordering on hot if someone bit directly into a piece of pepper). For little ones, you can always leave the chili peppers out. The best thing about thinking I don’t like something, is finding out how wrong I am. I’ve always operated under the assumption that flaked coconut is much too squeaky between my teeth. Sri Lanka and these Coconut Roti proved me wrong. There’s something so refreshing about dumping three ingredients in a bowl and emerging with warm, doughy flatbread that smells like a day in the tropics. Or Sri Lanka, to be specific. In fact, I did an entire post cataloging the best recipes with three ingredients or less from around the world. I learned how to make these by watching my friend shake flour and coconut shreds into a bowl. There wasn’t a measuring cup in sight. She added the water by feel, too. When I asked her the ratio of coconut to flour, she shrugged and said “a little coconut. more flour.” So, as you make these, remember her advice. There really is no wrong way to make coconut roti. Much to my husband’s dismay, I am not well acquainted with deep-fried desserts. There is one exception: the apple cider doughnuts mom made when I was little. She’d set up a giant pot of bubbling oil and we’d cut and drop discs of cider dough into the shimmering oil, waiting with glee until tiny donuts bobbed up to the surface, golden brown and irresistible. Then we rolled the puffy rounds in cinnamon sugar. But then… this week… Spain introduced me to Churros… and the words “deep fried” and “cinnamon sugar” popped back into my life… delighting me, Keith, and Ava in equal measure. Are you ready for a big bite of everything, ever? South Africa’s Bobotie (ba-boor-tea) reminds me of when I was a little girl, playing in the kitchen next to mom. I’d dump every possible ingredient into my little inventions, hoping they’d come out amazing. While chopped apples and pickles didn’t pan out when I was a kid, bobotie most decidedly does. But don’t worry – there’s no apple or pickle in it. So what is in it? Some people call Bobotie South African Moussaka, but I’m not convinced that gives the dish enough credit. My friend Janine says Bobotie is from the Cape Malay region and belies much more Indian influence. At her most basic, Bobotie is a spiced meat casserole topped with egg custard and a few bay leaves. Inside, you’ll find everything from rich curry power, to garlic, ginger, lemon juice, raisins, and almonds. There’s even a scoop of chutney. It’s just as important to be frugal in times of plenty as it is in times of hardship. As my mom likes to say “Waste not, want not.” In the Solomon Islands, when Papaya trees hang heavy with more fruit than locals know what to do with, they don’t let it rot and fall to the ground. They don’t let the monsoons sweep the fruit away, either. Oh, no. Instead, they make use of the papaya at every stage of growth… ripe or unripe… which is how PawPaw Curry makes its way onto the dinner table. While the sweet flesh of ripe papaya is grand (perhaps baked with sweet coconut cream?), pawpaw curry is made with the mild, firm flesh of an unripe papaya. A green papaya. Unlike the deep orange interiors of their ripe sisters, green papayas are pastel on the inside, just barely dawning with orange. The act of “saucing” food in Singapore is not as simple as I expected it to be. From what I can tell, there’s two schools of thought on the matter. First: the ‘dip & dunk’ variety, a.k.a. those who keep a bowl of incendiary hot sauce next to their plates for regular food baths. Second: the ‘drizzle & bedazzle’ variety, a.k.a. those who let the sauce rain down over their food, free-form. While I wouldn’t normally expect this to be a big deal, the foodies of Singapore are so impassioned that they are more than happy to come up to you and show you their preferred method… especially if you look even the littlest bit unsure (this happened to Bourdain countless times on his No Reservations trips there). If there’s one thing I’ve learned from this Adventure, it’s that my family’s unfaltering love of peanuts inexorably links us to the fine people of West Africa, where this little legume is enjoyed in both savory and sweet concoctions. Peanut soups and cookies are both fair game, but today we explore Kanya, an altogether new delight. Kanya are naturally gluten free and beyond simple, made with just three ingredients: peanuts, sugar, and toasted rice flour. That’s it! Kanya remind me of fudge, but with a drier, slightly crunchy texture thanks to the toasted rice flour. There’s just one catch (there always is, isn’t there?)… If you want to make Kanya the old fashioned way, you’re going to need arms of steel to push, and punch, and grind the mixture until it is so pulverized that it begins to stick together.
