If there’s one thing I’ve learned from this Adventure, it’s that my family’s unfaltering love of peanuts inexorably links us to the fine people of West Africa, where this little legume is enjoyed in both savory and sweet concoctions. Peanut soups and cookies are both fair game, but today we explore Kanya, an altogether new delight. Kanya are naturally gluten free and beyond simple, made with just three ingredients: peanuts, sugar, and toasted rice flour. That’s it! Kanya remind me of fudge, but with a drier, slightly crunchy texture thanks to the toasted rice flour. There’s just one catch (there always is, isn’t there?)… If you want to make Kanya the old fashioned way, you’re going to need arms of steel to push, and punch, and grind the mixture until it is so pulverized that it begins to stick together. In Senegal’s villages, which dot lazily between scrubby fields, life is slower. People gather barefoot on stoops, pounding millet or boiling rice. Talk and dance reverberate in rhythm with hide-covered drums, around outdoor fires, as though there were nothing more to do with the day than to live. There’s a popular proverb: Yarude seesa haɗtaa yettaade* or Going slowly does not prevent you from arriving. The words make me wince a little. Even with this Adventure I’m often in a hurry, rushing out the door, arms too full to hold Ava’s hands, or trying to slap a meager dinner on the table conjured up halfheartedly bagged, frozen helpers, all the while mind racing with checklists. Slowing down, I’ve realized, is a privilege and luxury that I often don’t indulge in. I could take a lesson from slow, easy Senegal. One of our readers, Annabelle, suggested we try today’s Cod Fish Feijoada. This filling, yet healthy Portuguese stew made it’s way to the islands of São Tomé and Príncipe during colonization. Things have evolved quite a bit since then. While most Feijoada’s involve black beans (even as far away as the one we made for Brazil), the islanders favor this white bean version and make it with readily available fish (and sometimes pork). The entire principal is a slow-cooked, tender meal full of flavor from raw beans. In the old country, a variety of herbs and spices might be added, but things are simplified on the islands. Some recipes don’t even include the carrots as I have (and they might as often be substituted with cabbage). The really distinct part of São Tomé and Príncipe’s recipe is the red palm oil – a signature ingredient in West African cooking. It’s fun to let a recipe go “wrong” on purpose. Maiale al Latte is one of those dishes: pork braised in milk for hours, until the milk gives way to tender, nutty, herb flavored curds. Some will tell you this “curdled milk” is a mistake. I’m here to tell you what everyone in San Marino and Italy already know – this is homemade cheese ripe for the snacking, an epic byproduct of an already amazingly tender roast, soaked with sage and rosemary, garlic and bay leaves, milk and wine. There’s a tall, skinny window, in a full-of-love kitchen in Brooklyn, where one can set a giant pot of rice to cool. Under the icy winter sun, steam rolls up and fogs the panes. With a swipe of the hand you can peer out at the city below, but the glass now clings to a dream of sauteed peppers, onion, garlic, celery, and thyme. It’s a fact of life: when the wind howls, children everywhere refuse to wear their coats. They arch their little backs, squeal-whine and assert “I don’t need a coat, mama.” In this situation, we have two choices. We can hunker down and try (struggle) to put their coat on, until one or both of us are crying. Or. (Or is that beautiful word that keeps life bearable and tantrums at a minimum.) Or… we can stand outside with them, coatless in the wind, just for a moment. We can feel that autumn chill tickle our souls, laugh at how the air nips our noses, and then – only then – rush inside to put on that silly coat after all. There’s an old Rwandan saying “The most extensive land is the human belly.” I like to think there’s mountains and streams in there, glorious sunsets and easy, glimmering sunrises. Is that somehow unsavory? I don’t know. I do know I want this land to be vast, and include as much variety as possible. I want to fit the whole world in there. And this, my friends, includes the plantain. Plantains have been an issue for my family from the beginning. Ava isn’t really keen on them (or bananas). I don’t usually give a lot of thought to Dracula, except for that one era in the nineties when several movies came out and I read “Interview with a Vampire” in two and a half late-night sittings. For a long time afterwards my brain bore the imprint of fear. Do not leave the windows open in the glittering, eerie night, a little voice told me. When I look up at the turmeric-colored leaves that dangle in our now somewhat skeletal trees, I know I need a change. I crave something warm, comforting and full of spice. Time and time again I’ve failed to entice Ava with stuffed grape leaves. I tried back when we cooked Armenia, when the grape leaves were laced with an intoxicating blend of cinnamon, allspice and currants and she was an innocent, unquestioning 8-month old. Let’s just say she wasn’t ready – neither for the somewhat chewy outer “skin,” nor the mystery of what was inside. Little kids like to know what mom is feeding them. Not one to give up easily, I spent the last 3 years casually pushing them onto her plate whenever we stopped by the Whole Foods salad bar for a quick meal. Paulo from Portugal told me Atum com Grão is the salad he served at his wedding. The wedding was in France, but they wanted to imbue the reception with a taste of his homeland. Being a very visual person, I immediately imagined his elegant, windswept bride in flowing white gown, chowing down on tuna and chickpeas tossed with onion, lemon juice, and parsley. To be honest, I relish the thought of a bride with tuna and onion breath. How brave. How confident! How awesome these people honor their traditions above and beyond all else. I love it.
