Beef Rendang

Beef Rendang is an art. And I could eat it every single day of my life. While there are many ways to make this flavorful curry, there are two things for certain – the dish must be slow-cooked until the flavor absorbs completely into the meat, and – secondly – the curry must explode with flavor. In a good way. The flavor part is the easiest. In fact, there are so many amazing ingredients – galangal, ginger, lemongrass, kaffir lime leaves to name a few – that you can’t help but make an amazing curry just by throwing them in a pot together. As for the slow cooking? Follow those famous words of wisdom and just  “Let it be.” NOTE: If you would like your hot pepper to grind smooth, simply soak it in hot water for half an hour. Coconut Sticky Rice in Banana Leaves | Lemang

Today we’re going to make a tower… a tower of glorious height. And this tall, sturdy tower is going to be made out of rice. Our inspiration? The Petronas towers of Malaysia. Aren’t they stunning? I adore the fact that the skyscrapers are connected by a tiny walkway that seems to be a million, zillion miles up in the sky. But that’s a story for another day. The fact is, I am simply thrilled to make rice towers from Malaysia. You see, I’m falling more and more in love with glutinous rice which is the secret to building our edible tower. I first made glutinous rice for Laos and, yikes, was I ever scared of messing it up. After that Adventure, however, I learned that glutinous rice is much more forgiving than traditional long-grain rice. It’s very hard to screw up. Macedonian Pizza | Pastrmajlija

The air buzzes with excitement. Ava pats the dough and we’re on our way to Macedonian pizza (Pastrmajlija), an addicting combination of diced pork, olive oil, and cracked eggs.  Together, her little hands next to my big hands, we shape the pizza two ways -first in a traditional full-moon circle and then in a Valentine’s-inspired heart. While some might say the shapes taste the same, I beg to differ. Anything heart-shaped tastes infinitely better than that same thing not heart-shaped. Dressed up in a dusting of black pepper, the pork sizzles in the oven and turns slightly golden. The rich, golden yolk makes the entire pizza taste like a dreamy breakfast. Simple to make and yet so full of flavor. That’s love. NOTES: Traditional Pastrmajlija is made with pork smoked in a “pusnici” during the cool winter months (October-February).  This video shows what a pusnici looks like. Pork Roast with Boozy Prunes

Remember the Sunday afternoon roast? How, as it slowly sizzled and crackled in the oven, the most wonderful smell crept throughout the house until there was nowhere to hide, and you were so hungry you almost couldn’t stand it? Eventually, playing outside was the only possible distraction. Lao Rice Noodle Soup | Foe

It’s time we take back the expression “Have it your way” from that mega corporate burger joint and put it back where it belongs – into our homes, onto our own homemade-with-love meals. Take this soup from Laos, for example. Traditionally served for breakfast, but great any time of day, Foe is a celebration of individuality, creativity and having it exactly how you want it – without chemicals, junk and gunk. Foe is a rice noodle soup from Laos, typically made with beef, pork or chicken. In Laos you might find funny organs floating in your soup and other delectables, but the real star is the bouquet of herbs, sauces, and spices which each person adds to taste, making each person’s soup bowl totally unique. Today we serve the simplest version of all – thinly sliced raw beef which cooks under the heat of the boiling broth and then topped how you’d like it. Kyrgyz stuffed & rolled pasta | Oromo

Truth: anything coiled up is infinitely better than the same item not coiled. Think cinnamon rolls… princess Leia’s hair… really flexible kitty cats napping… and now, as never seen in my kitchen before Global Table Adventure, Oromo. This Kyrgyz dish of rolled and coiled pasta filled with various stuffings is pure genius. Unlike Italian stuffed pastas, no cheese is used as binder. Instead the filling is commonly meat and veggies (such as sweet potatoes or pumpkin). While it remains a decidedly simple recipe, some southern regions of Kyrgyzstan are said to add herbs to their fillings. Still, however you slice it, Oromo is also more comforting than cinnamon rolls, princess Leia and kitty cats combined. True story. Notes: before you get started on this little journey you’ll need a steamer, preferably metal but bamboo will do just fine. Machboos

Certain times call for celebration. Babies. Birthdays. Finding the love of your life. Daydreaming about the love of your life. When a light turns green at the exact right moment, before you have to apply the brakes. For those times, I present Machboos. Take a dive off the deep end with this beloved Kuwaiti dish that boasts warm hits of cinnamon, turmeric, saffron mingled with sweet caramelized onions and raisins. We made ours with chicken, but you can also make it with fish or lamb. If you get a big enough chicken it can feed a happy collection of people (about 4-6). For our version the traditional preparation involves simmering the chicken in fragrant water (which is then used to make the rice). Next, we rub the chicken with more seasoning and pop it in the oven to brown. All kinds of flavor goodness. It took me to happy town, and it can take you there, too. Beef & Sausage Stuffed Peppers

I love presents. Surprises. Happy faces. So does my daughter. Imagine her ecstatic two-year old delight, then, when her dinner was a lidded present filled with a bounty of rice, sausage and beef? But the real surprise wasn’t her reaction – it was Keith’s. My very own Mr. Picky has been asking for stuffed peppers ever since I made them last week.Who knew this man would fall so hard for a simple stuffed pepper. Who knew he’d be so easy to please. Quick Kimchi

Makes 1 quart Do you know a picky eater? Are you a picky eater? Even I have my moments… I’m here to warn you that kimchi is one of those dishes – a Mount Everest for some culinary Adventurers and a potential moon landing for our beloved but stubbornly picky eaters. Here’s why: Kimchi is fermented, pickled, fishy, spicy, and totally funky.  It can take months and months to make, fermented in large vats with such delicacies as raw oysters or fish chunks. Astonishingly, the end result shouldn’t be overly fishy but mildly sweet and sometimes spicy, although there’s a little residual zing from the fermenting. Lest you run away in fear, let me assure you – two entire countries – North and South Korea – eat kimchi with giddy enthusiasm some people reserve for birthday cake… so I say go for it. Today is my late brother’s birthday – he would have been 34 and into who knows what kind of trouble. No joke. I like to think that, if he were here, he’d take a break from his ornery ways and we’d eat this sizzling Korean specialty together. As it cooked in front of us – at the table – we’d celebrate him with big bursts of goofy laughter. Bibimbap is perfect for celebrating superstars – like him. Like you. Sure, there are days when we don’t feel like superstars. When everything seems heavy and ordinary. But that’s when we can look around with fresh eyes – when we can find the sparkle on a mud puddle or see the sensual curves of a gnarly pumpkin. Central Asian Noodle Stew | Lagman Shurpa

Serves 4 Are you in need of some revitalization? A breath of fresh air? Are you worn out, tired, or just plain sad? Are you cold? I’m with you. I’m all of the above. When I feel like this I just don’t know what I want. I want everything. And nothing. All at once. I want to sleep. I want to watch movie after movie. I want soup. I want lots and lots of noodles. And then I feel guilty and want some veggies. But not the crunchy, raw kind. Nope, the cozy cooked kind. Kazakhstan has the answer. Lagman Shurpa, a.k.a. noodle stew. According to the old Kazakh saying “Meat brings strength, shurpa brings beauty” (from Please to the Table), it sounds like it will help just about every ailment. Makes 4.5 cups cooked rice (enough for 6 half rolls)  Some things in life take a lifetime to master. Sushi rice is one of those things. Every time I make it I get better. With every bite my smiles grow bigger and my belly happier. But I also look forward to the next time – and improving it – just as much. If you want to try – go for it! While it is admittedly difficult to make professional quality sushi rice, it’s surprisingly easy to make good sushi rice. As longs as you buy the right rice, you’ll be all set (Sushi rice is a special short grain rice, usually labelled as “sushi rice” right on the package).
