Gnocchi is always associated with Italy. Gondolas. Striped shirts. Butter and sage. But take a trip southeast, across the Mediterranean, to the old mountain villages of Lebanon and you’ll encounter something very similar. It’s called Maakroun – a thick homemade pasta that is either fried and served sweet, or boiled and served with an intense garlicky lemon sauce called toum. While Maakroun is not made with potatoes, the shape is nearly the same – a little longer perhaps. I would have never guessed that the Lebanese have something so similar to gnocchi. Never in a million years. But that’s what this Adventure is all about – discovery and trying something new. So get off your gondola, and put on your hiking shoes. We’re headed to Lebanon. Adding a handful of spices to a pot of sauce can be cause to say “Bam.” Or so I’ve heard. But how about making sauce with an entire head garlic? Raw garlic? Raw garlic with nothing but a heap of lemon juice and olive oil to thin it out? They do it in Lebanon. And it’s fabulous. Just one thing … No one will ever kiss you again. Except your mother. Bam! NOTE: Use sparingly. Especially on hot days, when your pores are likely to sweat out the scent of this intense pasta sauce. Makes 1/2 cup Ingredients: The cloves from 1 head garlic 1/3 cup olive oil 1/4 cup lemon juice (about 1 lemon, juiced) 1 tsp salt Serve over Maakroun, Mountain Gnocchi Method: First, you have to get the garlic started. I drink a lot of tea, so I would have thought I’d seen it all. Apparently not. Introducing Ainar, the tea brewed especially for baby mama’s and the guests who stop in to dote on their pretty newborns. In case you didn’t know, Mamas need lots of things after having a baby. Rest. Love. Good, warm food. And this tea. The cool thing about Ainar is the treat at the bottom of the cup. Nuts. After cooking a bunch of warming, fragrant spices like cinnamon, caraway, anise, and nutmeg in a large pot of water, the hot tea is splashed over assorted nuts as as much sugar as you can stand. Walnut, almond, and pine nuts are the most common. The super hot tea softens the nut and the total effect is something like spiced nuts… mixed with “good.” Rumor has it that the anise in ainar is supposed to help moms recover after childbirth. When I’m at parties I like to dip, dip, dip. You’ll recognize me immediately – I’m the one in the corner, filling up on dip before the meal ever comes. And if, for some reason, I’m not? Just know that’s where I really want to be. When it comes to dips, baba ganoush is everything I never thought it would be. Roasted eggplant, far from bitter, transforms into a smoky and smooth treat , able to fill my belly in just the right sort of way – without that greasy, pop-out-my-bellybutton feeling some foods leave me with. This recipe is so familiar. Each bite feels like a nibble straight out of my childhood. The funny thing is I’ve never, ever had this recipe. But, with cinnamon, cardamom, apples and pancakes-so-thin-they’re-basically-crêpes all rolled together with heaps of honey and yogurt, I can practically see my mom buzzing around the kitchen table. I smell the butter melting, crackling, sizzling, and I go right back to those days when I was too short to see into the mixing bowl. Cranberries. Right now. It’s their time to shine. Latvians know what’s up when it comes to the cranberry. They eat it whipped in clouds of pudding, layered with breads, and beyond. Today, however, is about a mountain of sugar. A squiggle of orange zest. A few minutes on the stove and you’re done. It’s really that simple. Here’s what I did: 4 cups cranberries 1 cup water 1 cup sugar, extra to taste 2 tsp strips of orange zest. Quickly look through your cranberries as you put them in the pot – weed out any squishy, yucky ones. Add all the other ingredients to pot. Bring to a simmer and cook 10-15 minutes. Taste and add more sugar if desired. Refrigerate until cold. Don’t be scared of the popping. It’s just the cranberries saying hello. You can add cinnamon sticks, fresh ginger, or whatever suits you to fancy it up. And then, to eat it, dress up in a pretty bowl and spoon the sweet tart goodness all over a thick pork chop, Latvian-style. Eat …

Birthdays are fun but birth days are even more so. Family and friends hugging, smiling, crying – everyone in wide eyed at the wonder of a new child’s most innocent gaze. Since Keith’s grandson was born last week, I thought it appropriate to make a birthday cake in his honor. I sought out such a thing in Latvia,only to find something very unexpected. Latvians have a tradition of baking pretzel-shaped sweet bread – not exactly cake – and topping it with candles. The Klingeris, as its called, can be used to celebrate birthdays and name days – which, as it sounds, is the day dedicated to celebrating your particular name. From what I’ve read, Latvians celebrate name days with gifts and parties, and often these celebrations are even larger than their standard birthday celebrations. I have a problem. Mangoes. I ate an entire crate of mangoes when I was pregnant with Ava. Ten mangoes in less than a week. Or was it twenty? Mangoes are so outrageously good right now. I used to think rice was a boring, safe choice, back before this Adventure. Then there was Persian Sour Cherry Rice. I died. Rice cooked in banana leaf tubes, called Longton. Lovely. Rainbow Rice. I smile on the inside and outside. Kushary – mixed with noodles, spaghetti and lentils. What? Coca Cola Rice. Who? Bottom line – rice is epic the world around. We’ve done a half ton of cool rice dishes on this Adventure. It goes on and on, and on, and on – no need to ever be bored with rice again. Which brings us to today’s recipe from Laos – sticky, sticky rice, a.k.a. glutinous rice. Another win. Another smile for your face. Sticky rice is a staple in Laos. It took me a few tries to figure out what Jeow means. Turns out Jeow is a lot of things, but mainly any sort of dipping sauce, typically made with char-grilled veggies. Sometimes spicy. Sometimes not. Always delicious. It could be vegetarian or it could be made with crushed beetles. Or anything in between. I’ll skip to the chase: my version is beetle free. Phew. And it’s also really easy. Recipe for a Simple Jeow 3 tomatoes 3 Thai bird chilies 1 head garlic pinch of cilantro And, if you’re not vegan, add several shakes of fish sauce. Method: Roast tomatoes, chilies, and garlic over a campfire, on a grill, in a comal (flat pan available at Latino markets) over medium heat or in the oven until blackened and soft. Minty Garlicky Yogurt is an oddball recipe. An oxymoron. Personally I love loads of garlic. I don’t mind dragon breath. I don’t mind scaring away the cat. So, I suppose Minty Garlicky yogurt sauce is good for people with garlic regret. As you eat it, the garlic infuses your breath but then – woops – the mint comes along for the ride, sweetening things up in the background. Of course, you’ll probably still need to brush your teeth after eating this dip. You’ll find similar recipes all over north Africa, central Asia and beyond. The nomadic peoples of Kyrgyzstan have no shortage of dairy, thanks to their herding lifestyle. To keep things interesting they blend yogurt with either mint or cilantro and plenty of fresh garlic. The secret is to let this mixture sit overnight or the garlic will be much too harsh.
