Weeknight Cod Fish Feijoada

One of our readers, Annabelle, suggested we try today’s Cod Fish Feijoada. This filling, yet healthy Portuguese stew made it’s way to the islands of São Tomé and Príncipe during colonization. Things have evolved quite a bit since then. While most Feijoada’s involve black beans (even as far away as the one we made for Brazil), the islanders favor this white bean version and make it with readily available fish (and sometimes pork). The entire principal is a slow-cooked, tender meal full of flavor from raw beans. In the old country, a variety of herbs and spices might be added, but things are simplified on the islands. Some recipes don’t even include the carrots as I have (and they might as often be substituted with cabbage). The really distinct part of São Tomé and Príncipe’s recipe is the red palm oil – a signature ingredient in West African cooking. I found mine at Whole Foods, but you can get it a lot cheaper at local African markets (such as Ebute Tropical Market in Tulsa). Since the fish …

When I look up at the turmeric-colored leaves that dangle in our now somewhat skeletal trees, I know I need a change. I crave something warm, comforting and full of spice. But I need it to happen quick, so I can run back outside, lay on my back, and watch those leaves shimmy and shake on their way down to the ground. Unless, I can find a compromise. Tuna & Chickpea Salad | Atum com Grão

Paulo from Portugal told me Atum com Grão is the salad he served at his wedding. The wedding was in France, but they wanted to imbue the reception with a taste of his homeland. Being a very visual person, I immediately imagined his elegant, windswept bride in flowing white gown, chowing down on tuna and chickpeas tossed with onion, lemon juice, and parsley. To be honest, I relish the thought of a bride with tuna and onion breath. How brave. How confident! How awesome these people honor their traditions above and beyond all else. I love it. So here’s to crossing a bridge to new beginnings with the security of tuna and chickpeas on your side. If they can do it, so can we. (P.S. Spiced Tea | Ainar

I drink a lot of tea, so I would have thought I’d seen it all. Apparently not. Introducing Ainar, the tea brewed especially for baby mama’s and the guests who stop in to dote on their pretty newborns. In case you didn’t know, Mamas need lots of things after having a baby. Rest. Love. Good, warm food. And this tea. The cool thing about Ainar is the treat at the bottom of the cup. Nuts. After cooking a bunch of warming, fragrant spices like cinnamon, caraway, anise, and nutmeg in a large pot of water, the hot tea is splashed over assorted nuts as as much sugar as you can stand. Walnut, almond, and pine nuts are the most common. The super hot tea softens the nut and the total effect is something like spiced nuts… mixed with “good.” Rumor has it that the anise in ainar is supposed to help moms recover after childbirth. Serves 6-8 Listen, friends. I thought Jollof sounded weird. Scary. Difficult. It’s not. This is rice with veggies. And spices. Sometimes meat, but not here. Not today. All over West Africa people enjoy Jollof. They make it with whatever they have on hand and more often that not it does not include meat. This recipe is flexible. It’s usually spicy. And it always has some version of tomato sauce/paste in it. The rest is a fun improvisational dance. So, go on – boogie, boogie through that bottom drawer and pull out whatever veggies inspire you. Coca Cola Rice | Arroz con Cola

Serves 2-4 Ahhh… nothing like a nice glass of cola. But what about in rice? The slightly sweet taste will leave you begging for more, especially when served with spicy food (as is common in Colombia). Ingredients: olive oil 1 small onion, chopped 1 cup rice 1 cup broth or water 1 cup cola salt pepper Method: Add a little oil to a small pot. Olive oil makes the world go round. Heat over medium and add chopped onion. Stir and cook for about five minutes. Once they are soft and starting to turn golden, add rice. Stir and cook another few minutes, until rice is hot. Add stock… (or water)… And some cola. Beware the fizzies. Mmm. Drink the leftovers. Or use it to make a Brazilian Mocha Cola! Add salt and pepper. Um. I totally added way too much pepper. Brazilian Iced coffee | Mocha-Cola

Serves 4 Brazilian iced coffee has the spirit of a root-beer float. Rich chocolate milk and fizzy cola sweetens the drink, while the coffee gives it a nice kick (although decaf is a great option, too)! Kids will love the novelty of plain old chocolate milk with cola, without the coffee. Feel free to top with vanilla ice cream, instead of whipped cream. Mmm…. Ingredients: 1 cup double strength coffee 12 oz can cola 3 cups chocolate milk Whipped cream or vanilla ice cream Method: 1. Brew coffee twice as strong as package recommendations. I used instant because I haven’t been drinking coffee lately, but you can, and should, use the best quality you have. Chill coffee. Roasted Acorn Squash Salad with Arugula and Chevre

Serves 4 I first heard of making a salad inside a hot, roasted pumpkin from the Argentine chef, Francis Mallmann. My version of this unusual salad is streamlined for the home cook. Enjoy this wonderful comfort food on a cold day. Makes enough for a light meal, or use it as an impressive starter in a larger feast. Ingredients: 2 acorn squash (or pumpkin – whatever is in season) olive oil salt pepper For the vinaigrette: 1 1/2 Tbsp chopped fresh mint 1 1/2 Tbsp chopped fresh oregano 1/4 cup red wine vinegar 1/2 cup olive oil 1 tsp salt 1/2 tsp pepper bunch baby arugula 8 ounces Bucheron goat cheese (this is aged goat cheese – regular goat cheese is a fine substitute) Method: 1. Bread with garlic & tomato | Pa amb Tomaquet

Serves 4 Pa amb Tomaquet is like an Andorran bruschetta. Instead of piling the bread high with ingredients, however, simply rub thick slices of country bread with garlic and tomato. Ingredients: 4 thick slices country bread 4 garlic cloves, peeled 1 heirloom tomato or vine ripe tomato, halved 1/4 cup olive oil Salt Fresh cracked pepper Method: 1. Toast bread under broiler (or on a hot grill) for about 30 seconds per side 2. Bring to table. Give everyone a garlic clove to rub onto their toasted bread. Then rub tomato halves on toast. 3. Warm Spinach and Mushroom Salad

Serves 4 Wild mushrooms give this spinach salad Andorran appeal. The crunch of slivered almonds and the sweet of the golden raisins add another dimension. Ingredients: 12 oz assorted mushrooms (Iused 4 oz French Horn Mushrooms; 8 oz Oyster Mushrooms) 2 cloves garlic, thinly sliced 3 Tbsp olive oil, plus 1 Tbsp for the last step 1/4 cup white wine 1/4 cup raisins 1/2 lb baby spinach 1/4 cup slivered almonds salt, pepper Method: 1. In a large skillet over medium high, saute mushrooms in 3 Tbsp olive oil until reduced and golden brown. Add garlic. Saute a few more minutes, until fragrant. Add raisins. Deglaze with white wine. 2.
