We’ve eaten a whole head of garlic on this Adventure before, as with our Lebanese garlic sauce Toum, but this time our garlic is making friends with lentils and Swiss chard. They bubble and steam up together, considerably mellowing out the flavor. To round out the flavor, there’s a squeeze of fresh lemon juice, a splash of pomegranate syrup, and a pile of cilantro. (To my cilantro haters: don’t worry, the offending leaves get waaay cooked down. If you can eat Salsa, you can eat these lentils). Swaziland’s swooping slopes are dotted with crops; it is here that the Swazi grow the freshest produce, from sunshine yellow lemons, to buttery avocados. With farming of that caliber, it should come as no surprise that Swazi Salads are especially grand. This is not to say they are carefully composed salads. (Most things that are careful, aren’t nearly as delicious.) No, these are simple, heaped piles of chopped veggies. But you can get them on the side of even the most humble plate of beans, which counts for, well, everything. Introducing Geodangan, your answer to healthy munchies. (Honestly, I’m not sure if there’s such a thing as healthy munchies. But if there were, then this is it.) This Asian-style salad that is incredibly popular in Suriname. And for good reason. Don’t be shy. Geodangan is everything spring has to offer – crisp green beans, giant cabbages, golden yolked eggs… with the addition of a coconut, lime, yogurt dressing. (The dressing could also be coconut sambal, a spicy shredded coconut condiment.) Either way, you’ll feel like your in Suriname… by way of Indonesia. And that’s definitely a good thing. Today’s recipe for Goedangan is adapted from Holidays of the World Cookbook for Students; they suggest serving the salad for a traditional Surinamese lunch, which I think sounds just lovely. Lemongrass. Coconut milk. Slushie. Pink. Pink. Pink. Hello. The weather’s been heating up lately, so when I happened up this Dawet recipe so beloved in Suriname, I knew we had to try it. When I discovered it was also enjoyed in slushie form? I did a little dance. Slushies are always a good idea. The refreshing, tropical drink is made with an easy, homemade lemongrass syrup, a swirl of coconut milk, and a splash of water (or ice, if making a slushie). Dawet originates from Asia, and is especially popular in Indonesia. The drink was brought to Suriname and popularized as a result of colonization and immigration. In my research, I found several photos of the dawet in Suriname, and it seems the slushie is popular among street vendors. Ava and her friend were fans. There’s so many ways to make this drink. The South Sudanese love a good, chopped tomato salad on the side of their meals. Often, it’s no more than tomato, onion, and hot, green chili peppers… perhaps a spot of parsley… But other times, a bit of peanut butter and lime juice makes for a grand dressing… and tastes just like home, if you happen to be from South Sudan. When I was deciding which of the two recipes to try, the choice was clear: if peanut butter is involved, the answer is yes. Most definitely, yes. You can make this vegan recipe as spicy as you’d like by adding more (or less) chili peppers. I thought two Thai birds made a nice, mild/medium heat (bordering on hot if someone bit directly into a piece of pepper). For little ones, you can always leave the chili peppers out. A cucumber salad is a thing of beauty. It cools, it refreshes, and it provides important nutrition thanks to a happy scoop of yogurt and tons of fiber from the cucumber (not to mention garlic’s anti-vampire qualities). While cucumber salads span the globe in one form or another, this version is popular through the Middle East, western Asia, and even parts of Europe (with minor variations). Under the pulsing noonday sun, Tea Ladies line the streets of Sudan. They soak up what little shade they can find. Water simmers over charcoal stoves. They swirl a mishmash of ingredients through the steam, into the pot. You can pick your combination. Will it be mint? Or what about ginger? Making Paella is quite the trick. Making authentic paella is even harder. My mission this week was to make a simple, yet flavorful paella for our Spanish Global Table. Something easy enough for a Monday, but special enough for a Friday. One that would be rather… well… business in front, party in the back. Or maybe not. Friends, I did my research. In fact, I spent a lot of time reading mediocre online reviews of what should have been amazing paella recipes. These recipes were crafted by chefs and superstars yet, without fail, half of the commenters complained of the paellas being bland, while the other half loved the bold flavors. I was mystified, until I happened upon this comment: “If you’re going to use saffron, then use it.” The recipe had, like so many, called for a “pinch” of saffron. After speaking with friends, we agreed that a “pinch” of saffron might lead someone to add three meager strands of saffron.. whereas another might grab a hefty pinch more equitable to a teaspoon (think of Emeril Lagasse’s “BAM” style). …

During the week, I’m always looking for a way to get beyond ordinary b-b-boring boiled rice. Hello. Cue our friends of South Africa… they have the answer with “Geelrys,” which literally translates to “yellow rice.” Imagine a pot of turmeric and raisin bejeweled rice… a simple side dish as flavorful as it is gorgeous. Geelrys tastes like a sunrise on the most beautiful morning of your life. Or, like happy a hug from a good friend. Or, maybe it just tastes like really, really good rice. While you can make Geelrys with any kind of rice you like, I prefer it with Basmati, as does my South African friend, Janine. The cooking time for Basmati is longer than standard white rice, but much gentler; the end result is tantalizingly delicate. Are you ready for a big bite of everything, ever? South Africa’s Bobotie (ba-boor-tea) reminds me of when I was a little girl, playing in the kitchen next to mom. I’d dump every possible ingredient into my little inventions, hoping they’d come out amazing. While chopped apples and pickles didn’t pan out when I was a kid, bobotie most decidedly does. But don’t worry – there’s no apple or pickle in it. So what is in it? Some people call Bobotie South African Moussaka, but I’m not convinced that gives the dish enough credit. My friend Janine says Bobotie is from the Cape Malay region and belies much more Indian influence. At her most basic, Bobotie is a spiced meat casserole topped with egg custard and a few bay leaves. Inside, you’ll find everything from rich curry power, to garlic, ginger, lemon juice, raisins, and almonds. There’s even a scoop of chutney.
