Peking Walnuts

In the spirit of DIY deliciousness, why not start off the Chinese New Year with something sweet and savory? Peking Walnuts are an impressive affair – the glossy walnuts appear lacquered, but it’s really just a simple sugar coating that’s been dunked in a vat of hot vegetable oil. While the walnuts cook, the sugar caramelizes onto the crust and takes on a reddish hue – just like Peking Duck. The red color makes Peking Walnuts lucky. What’s the story with the color red and Chinese New Year? Legend has it that a Chinese beast called Nian lives under the sea and mountains. He is afraid of the color red. Chinese families use lots of red during the New Year to scare him away.Today, red signifies both luck and joy in Chinese culture. How to make Peking Walnuts (and impress all your friends): Grab a bunch of walnuts. Boil them until their skins fall off. Dry well. Honey & Pistachio Stuffed Quince

Say “Quince” to an Uzbek lady, and you just might see her flush with delight. Though they aren’t eaten raw, baked quince are soft and tender, like a pear.  The taste is mild, something like an apple, but with traces of pear, too. Uzbekistan is the third greatest producer of quince, after Turkey and China. They include the fruit in plov, stir it into preserves, and they bake it up with honey, and sometimes even stuff it nuts… as we’re doing today. How to choose a quince: – look for white fuzzies on the stem end, which indicate freshness – a ripe quince is yellow, although slightly green fruit can be used for this recipe – it can be bumpy and odd-shaped, but there should be no scarring or other markings. 5 Step Mole Poblano

I’ll be honest. On the onset, learning how to make Mole Poblano sounded a lot like learning how to knit a wedding dress. Outrageously epic, but not entirely something I had the skills for. In case you’ve never heard of it, we’re talking a Mexican recipe from Puebla that has a million, gazillion ingredients (ok, really just about two dozen), many cooking phases, and centuries of history behind it. Yikes. After staring at dozens of recipes, drinking several cups of tea, and more than a little sleep lost, I broke mole poblano down into 5 basic steps. Deep sigh. Smile. This feels better. Five steps are manageable. So, my goal today, is to make you Mole happy. To encourage you to give it a try. Because if you do, you’ll be in Mexico with every bite. Spiced Tea | Ainar

I drink a lot of tea, so I would have thought I’d seen it all. Apparently not. Introducing Ainar, the tea brewed especially for baby mama’s and the guests who stop in to dote on their pretty newborns. In case you didn’t know, Mamas need lots of things after having a baby. Rest. Love. Good, warm food. And this tea. The cool thing about Ainar is the treat at the bottom of the cup. Nuts. After cooking a bunch of warming, fragrant spices like cinnamon, caraway, anise, and nutmeg in a large pot of water, the hot tea is splashed over assorted nuts as as much sugar as you can stand. Walnut, almond, and pine nuts are the most common. The super hot tea softens the nut and the total effect is something like spiced nuts… mixed with “good.” Rumor has it that the anise in ainar is supposed to help moms recover after childbirth. Char-grilled Red Pepper Dip | Muhammara

Makes 3 cups If you’re wilting and melting and generally crying for a reprieve from the heat, try Muhummara. This Middle Eastern roasted pepper dip takes the heat out of summer in the most fingerlicking way. The walnuts add body, but you don’t taste them. The pomegranate syrup gives a slightly tart tang and the cumin gives earthy warmth, but the ingredients are so balanced and subtle you’ll be seduced before you know it – and you won’t exactly know why. Just like falling in love with the most wonderful person you know. NOTE: Some like to add hot paprika or cayenne to this recipe. Garlic and Walnut Sauce | Garo

Makes 4 cups This bold tasting spread/sauce from Georgia will have your mouth asking “What is in this!”  I couldn’t decide what it reminded me of, which I find exciting (trying new flavors is the purpose of eating the world, A-Z!). The bold flavor of cilantro and walnut are the main body of flavor, with an earthy, almost bitter note from the spices. You can knock the bitter profile back a bit if you use less fenugreek seeds. Danish Apple Cake | Æblekage

Makes One 6″ Cake Æblekage can be made any number of ways, but this recipe is super special because Anne A., one of our Danish readers, found it in her mother’s recipe box.  We did a little tweaking and, voila… Global Table’s Aeblekage, a little like Anne’s mamma used to make. The texture is on the muffin-side of things; you’ll love it with coffee or tea. Ingredients: 1/2 cup butter, softened 1 cup brown sugar 2 eggs 1 tsp vanilla extract 1 teaspoon baking powder 1 teaspoon cinnamon 1 1/2 cups flour 1 small apple, halved and sliced thinly 1 small apple, diced Topping: 1/8-1/4 cup brown sugar 1/8-1/4 cup chopped walnuts Dots of butter Use a 6″ cake pan Method: Put a load of laundry in the washer (optional). Armenian Hazelnut Cake in Honey Syrup | Revani

Serves 8 This dense cake has a muffin like texture. Depending on how coarse you grind the nuts, you can experience quite a bit of “crunch.”  Serve chilled or room temperature with vanilla ice cream. Ingredients: For syrup: 1 cup water 3/4 cup sugar 2 Tbsp honey 2 pieces cinnamon stick 2 lemon slices 3 Tbsp brandy For Cake: 4 large eggs, separated 1/2 cup sugar 3 Tbsp vegetable oil 1/4 cup greek yogurt 1 cup flour 1 1/2 cups toasted, skinned, ground hazelnuts (you can grind them up in a food processor) 1/3 cup ground walnuts 1 1/2 tsp baking powder 1 tsp ground cinnamon 1 orange, zested 1 lemon, zested optional garnish – hazelnut halves Method: For the syrup: 1.
