Pneumonia make cause my heart to race, my nerves to slacken, and my breathing to rasp, but it will never stop me from making my sweetheart his birthday dinner. To celebrate in style, I cobbled together the most unexpectedly glorious arroz con pollo. Unexpected, because I honestly wondered how great could chicken and rice be? Fantastic, turns out. Put your trust in centuries of Latin American and Spanish history; the next time you have a big dinner party, make arroz con pollo. Under a gracious layer of 100% love, you’ll find a one-pot chicken and rice dish which delights in bright bursts of briny olives and capers, blushing rice (thanks to a sprinkling of ruddy ground annato and a whole lot of chopped tomatoes), and a flurry of vivid green cilantro. Next time you go to a potluck, spice up everyone’s life with pakistani mixed bean salad. Each bite has bits of chickpea, northern white beans, tomato, onion, and peppers. The salad can be spicy or mild, tart or savory. It all depends on how you mix it. Either way, it’s fresh, healthy, and – thanks to being seasoned with lemon juice, cilantro, and garam masala – just on the other side of unusual. This week we dove into a summery garden spread from Oman. Kofta are grilled hand-formed sausages enjoyed in Oman and neighboring countries. In fact, versions of kofta are enjoyed as far east as India (although these are typically served in meatball form). These Omani kofta sizzle with earthy cumin, warm flutterings of cinnamon, and are rounded out by coriander seed, fresh parsley and cilantro. The sauce – entirely vegan, by the way – is loaded up with fresh zucchini, garlic, parlsey and such a little sprinkle of mint, noone will know what your secret ingredient is. You can make it as spicy as you’d like with red pepper flakes (or go wild with cayenne, if you must). P.S. This sauce would be great for a variation on our vegetarian Shakshouka that we made back with Israel. Shakshouka is also enjoyed in Oman. If you’re going to serve an egg sandwich, you best do it up right. Layer hot, scrambled eggs in a crusty, toasty baguette and wrap ’em up. Make sure there’s something green in there to keep you strong and healthy. Tie it with a bow. Simply put: turn breakfast into a present for your belly. I learned this trick from Niger. When I dug around for traditional recipes I kept stumbling upon the same thing: eggs sandwiches sold by street vendors. Simple. Comforting. Filling. This is the kind of thing people crave once they leave Niger – a fond memory in the making. Most people say they come wrapped in old newspapers, but any old paper does the trick. When I read that New Zealander’s love “kumara,” I wondered what this dreamy word could mean. When I found out kumara are simply a variety of New Zealand “sweet potatoes,” I was thrilled. Sweet potatoes are on my “will-eat-any-time-of-day-for-any-reason-especially-for-my-last-meal” food list. Not many foods make that cut. Today’s salad takes inspiration from New Zealand’s love of barbecue. For color I combined two kinds of sweet potatoes on the grill before tossing them with bacon, green onion, and a quick, zingy honey mustard dressing. This is grilled sweet potatoes, dressed up for a party in your mouth. P.S. Since I couldn’t get my hands on actual kumara, I used an orange fleshed sweet potato and a white fleshed sweet potato. This makes for a really pretty salad. If you do the same, be sure to watch the cooking times. Some varieties tend to cook quicker than others. P.P.S. If I were to make a potato salad, it would not be loaded up with mayo, nor would it be heavy as a brick. No. My picnic table would have something far more glorious: I would make this Dutch potato salad. She’s full of bright, juicy apples, smoky cubes of ham steak, sweet corn, and tiny, salty gherkin slices. She’s an entire meal, surrounded by tender lettuce, hard-boiled eggs, cucumbers, tomatoes, more gherkins, and whatever else you’d like to nibble on. Radishes? Sure. More apple slices? Absolutely. Steamed asparagus? That’s totally Dutch. Swap the ham for beef? Yes, yes. Want to eat your potato salad in a lettuce wrap? Do it with a smile! If you wake up in Nepal, chances are you’ll be eating Dhal Baht. In fact, you’ll probably also eat Dhal Bhat as the sun bobs below the horizon. Nothing wrong with eating the same dish twice in one day. There’s a beautiful simplicity in waking up and knowing that, as certain as the sun will circle the sky, there will be Dhal Bhat. Ah, yes.
