Ugandan Rolex | Breakfast Wrap

Uganda’s “Rolex” is breakfast luxury that can be purchased on any street corner. Whipped egg is the gold setting. Precious studs of tomato and purple onion glitter across the surface like garnet and amethyst, while fine strands of cabbage sparkle like peridot. The completed jewel is nestled safely in a soft chapati wrap. Ridiculous? Maybe. But shouldn’t every day food be as precious as a “real” Rolex? What is a Ugandan Rolex? Rolex is classic Ugandan street food. The similarity to the luxury watch brand is happenstance: Once upon a time the vendors who made this treat called out “Rolled Eggs” – nothing more. The basic idea is eggs cooked with cabbage, onion, tomato, and sometimes peppers, which is then wrapped in chapati. But, as the words careened off their tongue, “Rolled Eggs” sounded more like “Rolex” to visitors. This much Russia knows: the chilly, early days of spring go hand-in-hand with cabbage. Throughout the countryside, rows of cabbages can be found poking through the ground even as the last freeze thaws. The tough, squeaky heads are impenetrable to all but the peskiest of creatures, but give them some attention with a sharp knife and persistent flame and you’ll see why cabbage is the pride of Russian home cooking. From cabbage rolls to borscht, Russian cookbooks are fat with ideas to use up the spring harvest – and at a mere $2-$3 per head at the market, it’s tempting to attempt them all. But if I had to pick just one, cabbage pie seems to shows off the humble vegetable’s truest potential. Harvest Stew | Dimlama

If it were up to me, every gardener would know about Dimlama, the Uzbek one-pot answer to harvest-time (no canning required). While every Uzbek family makes it a little differently, potatoes, carrots, peppers, and tomatoes are standard fare, as is a hearty sprinkling of whole cumin seeds. The key to dimlama rests in the layering. First of all, lamb is browned, then onions are added in the mix. One they submit to browning, the remaining vegetables are layered (and, once they’re added, you never stir the pot!). The final layer is always cabbage, which helps seal in the moisture. When the vegetables release their juices, they drip down to the bottom of the pan and deglaze all those nummy browned bits. The result? A luscious brown gravy worthy of being sopped up by a nice piece of Central Asian Yogurt Naan. Mixed Vegetable Salad with Coconut Dressing | Goedangan

Introducing Geodangan, your answer to healthy munchies. (Honestly, I’m not sure if there’s such a thing as healthy munchies. But if there were, then this is it.) This Asian-style salad that is incredibly popular in Suriname. And for good reason. Don’t be shy. Geodangan is everything spring has to offer – crisp green beans, giant cabbages, golden yolked eggs… with the addition of a coconut, lime, yogurt dressing. (The dressing could also be coconut sambal, a spicy shredded coconut condiment.) Either way, you’ll feel like your in Suriname… by way of Indonesia. And that’s definitely a good thing. Today’s recipe for Goedangan is adapted from Holidays of the World Cookbook for Students; they suggest serving the salad for a traditional Surinamese lunch, which I think sounds just lovely. Cabbage patch kids always seemed creepy to me when I was little. What kind of baby grows out of a cabbage? Could you still eat the cabbage once you harvested the baby? This doll raised lots of questions. Not to say this stopped me from wanting a cabbage patch doll more than Rainbow Brite leggings, because I did. The urge was major. Now that I am a couple (few) decades older, I know exactly what was going on – mostly because it’s starting to happen with Ava. I wanted those dolls because all the other kids wanted them. They were collected in the 80’s quicker than Michael Jackson gloves. Lime & Cabbage Slaw with Yucca | Vigoron

Today we’re taking a bite of Nicaraguan sunshine. This is the kind of sunshiny soul food that satisfies cravings. Bored cravings. Excited cravings. Lonely cravings. I’m ready for winter cravings. Momos are carefully folded dumplings, each crease like a ridge in the most glorious of mountains, Mount Everest. (Did you know Nepal has 8/1o of the world’s tallest mountains?) Indonesian Salad | Gado Gado

Nope. That would be weird. No, this is peanut sauce, the perfect complement to Gado Gado. And what is Gado Gado, you ask? The coolest way to stay cool in Indonesia. Made from an assortment of tofu, tempeh, young jack fruit, cooled boiled potatoes, eggs, and green beans, Gado Gado is a dream-come-true for those of us who like to use leftovers. Of course, to keep things fresh and crunchy, most Gado Gado salads also add a blast of cabbage and sprouts. If that sounds too healthy, no worries. While I went light on the peanut sauce, I’ve read that many salads are swimming in the stuff. I got the same effect by dipping each bite until totally coated in peanut sauce. It was brilliant. West African Rice with Veggies | Jollof

Serves 6-8 Listen, friends. I thought Jollof sounded weird. Scary. Difficult. It’s not. This is rice with veggies. And spices. Sometimes meat, but not here. Not today. All over West Africa people enjoy Jollof. They make it with whatever they have on hand and more often that not it does not include meat. This recipe is flexible. It’s usually spicy. And it always has some version of tomato sauce/paste in it. The rest is a fun improvisational dance. So, go on – boogie, boogie through that bottom drawer and pull out whatever veggies inspire you. Ingredients: 2 cups frozen green peas vegetable oil 1 onion, chopped 2 cloves garlic, sliced 1 tsp ginger (fresh grated or ground) 1/2 tsp ground cinnamon 1/4 tsp cayenne 15 oz can tomato sauce or puree 1 small head of cabbage, chopped 2 cups white rice 1 quart water or stock salt and pepper, to taste Method: My boogie, boogie led me to peas, which is a fairly common addition to Jollof. Salvadoran Pickled Cabbage Slaw | Curtido

Makes 1 giant bowl. Vinegar lovers unite! With very little effort you can have this Salvadoran slaw at your next barbecue or gathering. To be authentic, serve slightly “pickled” – about 1-3 days after making it. This should be vinegary and with the slightest hint of heat. Serve with pupusas. Ingredients: 1 cabbage, cored and sliced thinly 1/2 red onion, sliced thinly 2 carrots, grated 1 tsp dried oregano 1/2 tsp red pepper flakes 1/4 cup white wine vinegar 1/8 cup olive oil salt and pepper, to taste (I put in 2/3 tsp salt) Method: Time to get out all your aggression on some red onion, cabbage, and carrot. Chop, chop, chop like there’s no tomorrow. Well really… slice thinly. Chopping is a bit too coarse for this recipe. When you’re done, mix the vinegar with olive oil, red pepper flakes and oregano. Shrimp and Vegetable Curry | Sayur Lodeh

Serves 4 This yellow, mild curry is a great way to mix up monotonous meal plans. A little spice and creamy coconut milk do the trick for a show-stoppingly good meal. Ingredients: Rempah Curry Spice Mix 1 can coconut milk 1/2 cup water 1/2 head of green cabbage, thinly sliced 3 cups mushrooms, sliced 3 cups long beans or green beans, trimmed and cut into small pieces 2 carrots, sliced 16 shrimp vegetable oil Method: 1. Add rempah to hot vegetable oil in a large pan and cook for about 5 minutes, or until fragrant and slightly browned. Add one beautiful, thick can of coconut milk. And a little water to thin things out. 2. Let simmer for about 10 minutes. Meanwhile, chop your veggies. First the cabbage. Cabbage is so underrated. Then the mushrooms.
