Poached Egg Soup | Changua con Huevo

Serves 4 Rethink eggs! Poached eggs swimming in milky broth is a delicious Colombian specialty which is perfect for breakfast, brunch, lunch, or a light dinner. You can easily make this soup vegetarian by using vegetable broth. Ingredients: 4 cups broth (vegetable or chicken) 2 cups milk 4 eggs 3 green onions, sliced sprig cilantro, chopped salt pepper Method: Add stock to a large pot. Sploosh. Then add milk. Splash. Heat the broth and milk to almost simmering. Meanwhile, spread some thinly sliced green onion on the bottom of the bowls. Sprinkle with some chopped cilantro, too. When a few bubbles barely break through the surface of the hot liquid, you are ready to drop your eggs in to poach. Except you never, ever “drop” them. If you do, they’ll break, separate, make a big mess…. Instead, Break the eggs into a small, heatproof ramekin and gently “dip it and tip it” into the water. Let me show you what I mean. Bolivian Hot Sauce | Llajua

If you want to eat like a Bolivian, I highly recommend you try Llajua.  Bolivians happily splash this liquid fire over their meals as casually as Americans use ketchup – perhaps even more profusely. The stuff goes on everything – from soup to grilled meat, boiled vegetables, savory pies (like the Salteña), and more. The heat originates from the locato pepper, rated between 30k and 100k on the Scoville Unit. From what I gather, the locoto is like a mild habanero. Ha. Mild. Habenero. What an oxymoron.  If I know one thing, I know I can’t handle any kind of habenero with grace, mild or not. In fact, I about went into apocalyptic shock during the Angolan Global Table, when I threw part of a habenero down the garbage disposal and ran it. Yes, I meant apocalyptic. Death fumes shot right up into my eyes, nose, and throat, making even my toenails sweat. It was ugly. Fish and leeks in Hot Mustard Sauce | Sorse Bata Diya Maach

Serves 4 We made this flavorful dish with salmon which became incredibly tender after an overnight marinade and gentle steaming. Although not very spicy, the mustard sauce reminds me of wasabi. Ingredients: About 1 1/2 lbs of fish pieces or 4 fish filets (salmon or trout are ideal) 1 large leek, cleaned and sliced thin (only white and medium green, not dark green parts) 4 green onions, sliced thin For the sauce: 1/4 cup chopped cilantro 4 cloves garlic, crushed 1 1/2 inch fresh ginger, grated (about 1 Tbsp) 2-6 green chilis (4 = Medium Hot) 1 tsp cracked mustard seed (Rai Kuria) 1 tsp turmeric 1/2 tsp cumin 1 tsp garam masala 1/2 tsp salt 1 15oz can diced tomatoes 1 Tbsp mustard oil Method: For the sauce: 1. Put all ingredients in the bowl of a food processor. Puree. (or use an immersion blender). 2. Add sauce and fish to a casserole. Sink fish into the mixture and cover completely. Bahraini Shrimp Balls | Chebeh Rubyan

Serves 4 Shrimp balls blend the flavors of the Middle East with India. Though these are traditionally stuffed with minced onion, I prefer the simplicity of unfilled balls. If you like spicy food, add a sprinkle of cayenne. The way the recipe stands, however, this dish is mild, but wonderfully flavorful. TIP: Use the cheapest shrimp because you are just going to puree it anyway. Armenian Spiced Feta | Brinza

Serves 4-8 Spiced feta is wonderful wrapped up in flatbread with fresh herbs. Feel free to improvise on this recipe with your favorite herbs and spices. Ingredients: 1/2 lb feta cheese 1 Tbsp white wine vinegar 1/4 cup olive oil 1/2 tsp Hungarian paprika 1/2 tsp dried tarragon 1/2 tsp dried oregano 1/2 tsp dried cilantro 1/4 tsp sumac (optional garnish) 2-6 sprigs each of basil, oregano, mint, and chives Method: 1. Spread fresh herbs down in a shallow serving dish. Slice feta into 4 slices. Arrange on top of herbs. 2. In a small bowl, whisk together vinegar, oil, paprika, and dried herbs. Drizzle over feta. Let sit for at least an hour, or over night. Spicy Braised Eggplant | Burani Bonjon

This Afghan braised eggplant dish is best served at room temperature. The cayenne gives the eggplant an enjoyable kick, while the turmeric gives it a golden glow. Serve with Seer Moss (Garlic Yogurt Sauce). Ingredients: 1 large eggplant (about 8″ long) 1/2 can diced tomatoes 4 cloves garlic, crushed or minced 4-6 Tbs vegetable oil 1 Tbs dried cilantro (use fresh for garnish if you have it) 1 tsp turmeric 1/8 tsp (or up to 1 tsp) cayenne pepper (mild or death-by-cayenne) Salt & Pepper, to taste Method: 1. Slice eggplant lengthwise 1/4 inch thick. Salt liberally on both sides and lay on a cooling rack over a cookie sheet for about an hour. The salt will draw out bitterness. Rinse the salt off of the eggplant and pat dry. 2. Saute crushed garlic in olive oil until fragrant in a large, heavy bottomed skillet. Set aside garlic in a small container. 3.
