Serves 2-4 I love this easy, no-nonsense, super healthy side dish from Botswana.  Simply steam spinach in its own juices until all the vegetables are soft. If you’d like to leave the tomatoes a little firmer, add them half way through cooking. Ingredients: 1 lb baby spinach 1 large onion, sliced thinly 2 tomatoes, chopped 1 green pepper, sliced thinly oil salt pepper Method: 1. Add all ingredients to  a large skillet or wok. Cover and heat over medium-low, stirring occasionally. Cook for about 30 minutes, or until all vegetables are soft. Serve hot. The thinner the onion, the quicker it will cook and become tender. Serves 2-4 Prebranac is rich, comforting, and tasty. This baked bean dish is like a warm hug from Bosnia, the “Heart of Europe.” The key is to slowly cook the onion until the golden, sweetness develops. I will be making Prebranac over and over again. I suggest you do the same! 🙂 Ingredients: 1 cup dry Lima beans, cooked (or 2 cans, drained) 2 medium onions, chopped 1/8 cup olive oil 3 garlic cloves, crushed 1 Tbsp paprika seasoning salt pepper 1 Tbsp of flour Method: 1. Preheat oven to 400F. Heat up olive oil in a pot over medium heat. Add onion and cook until golden. 2. Add garlic, paprika, flour, salt, and pepper. Serves 4 Even my husband ate this vegan salad up. Perhaps because it was a lot like a fresh salsa in an avocado bowl, instead of the “rabbit food” salad he is used to. Serve slightly chilled (cold takes away from the flavors – you won’t be able to taste the buttery avocado as well.) Make the tomato mixture several hours ahead if you want. Makes 1 Butter Grilled Poblano Here’s to my new favorite way to eat peppers! I got the idea from Kunzang Choden, a Bhutanese author who speaks of her father grilling chili peppers this way. We had to wait as he incised slits in the chillies and filled them with fresh butter and salt. When the chillies were ready they were put on bamboo skewers and placed over the flames in the hearth. After much sizzling and hissing took place, each of us received two to three chillies on our rice. The chilli would be slightly roasted from the outside, and the butter inside would have melted and absorbed into the chilli. Serves 2-4 Ema Datshi is considered the national dish of Bhutan and it’s traditionally screaming hot! Use whatever chili peppers you like, from mild poblano, to scorching thai bird chilies. My blend of Anaheim and Serrano chilies is very hot, but you can reduce the heat by leaving out the seeds. In Bhutan they serve Ema Datshi over rice (pictured here with cracked red rice). My husband likes dipping corn chips into the cheesy goodness. I’d like to tell you he’s a fool but, really, the combination was excellent. Traditionally served with cracked red rice. Ingredients: 2 anaheim pepper 1 serrano chili 1/4 cup farmer’s cheese 2 cups grated monterey jack water as needed Method: 1. Slice peppers into strips, removing seeds if desired. 2. Serves 4 Benin’s Pureed Black-eyed peas are smooth and creamy thanks to peeling the beans. If you do not have the patience for peeling the beans, use a food mill or omit the step all-together. The resulting mash is rich and flavorful, but it looks a lot like mashed potatoes so you might give unsuspecting guests a heads-up. Ingredients: 2 cups dried black-eyed peas salt pepper 1 stick butter Method: 1. Soak beans overnight in cool water. Drain the beans and slip the skins off. For detailed explanation see Technique Thursday: Peeling Beans. 2. Cover beans with about an inch of water and simmer for about 15 minutes, then season with salt and pepper to taste. Continue simmering until tender. 4. Drain liquid off and puree. I used an immersion blender. You could use a ricer, food processor, blender, or a large mortar and pestle. 5. Serves 6 Sweet Potato Pone is a slightly spiced, dense custard-like dessert, reminiscent of pumpkin pie. Adjust sugar according to your tastes. This version will give you cavities on the first bite. Ingredients: 1 lb finely grated sweet potato 1 12 ounce can evaporated milk (or coconut milk) 1 egg 1 cup brown sugar 1/2 tsp cinnamon 1/4 tsp nutmeg 1/4 tsp ginger pinch salt Method: 1. Preheat oven to 350F. Meanwhile grate sweet potato and combine all ingredients in a large bowl. NOTE: You want to grate your sweet potatoes as finely as possible. I think mine were too large because the texture, instead of being smooth, was rather coarse (see finished photo at the bottom of recipe) Perhaps a food processor could help in this situation? 2. Ladle into 6 individual ramekins (be careful not to overfill them. I did and they spilled over… making a sticky, ugly mess – give yourself about 1/4 inch buffer at the top). Ingredients: 2 extra large baking potatoes (about 2.5 pounds total) quart of vegetable oil salt Method: 1.  Cut all edges of potatoes to make a rectangle. Slice into 1/2″ slabs. Cut each slab into several sticks. 2. Immerse in cold water for at least 30 minutes (you can also store them in the fridge overnight this way). Alternatively, rinse potatoes under cold water until water runs clear. You are trying to get rid of all the loose starch that will make the fries stick to each other. 3. This recipe works great for nights that require something a little fancy, but you don’t have a lot of time to cook. Almost impossible to mess up, my version uses shredded cheese. You can get fancy if you want and serve this with a cheese sauce instead. Serves 4 Ingredients: 2 Endive 4 slices ham 1/2 cup shredded Gruyère dash nutmeg Method: 1. Preheat oven to 4ooF. Cut endives in half. Cook in boiling water for about five minutes. Drain well. 2. Wrap endives in ham and place in a casserole dish.
