Mexican Mango with chili and lime juice

Mexicans offer up an unexpected appetizer for the margarita lover in all of us. Take a walk along a Mexican beach and you’re likely to find carts of mangoes being peeled and cut into elaborate flowers and wands. Mango carving is not unique to Mexico – the art can be found wherever the fruit is grown – but Mexican mango flowers smack of lime juice with puffs of chili powder and salt. Just look at this video: I planned to make a mango flower for you today. How could I not? Real Talk: When I tried to replicate his mango carving technique I ran into trouble. My first problem was that the ripe mango slid down any stick I put it on (I tried chopsticks and skewers). And, without the proper handle, carving the flower became a slippery, dangerous mess. Sweet & Spicy Korean Braised Turkey

You’ve had roast turkey and deep-fried turkey… but what about turkey with real international flavor? This Thanksgiving let’s honor our melting pot culture with a recipe worth talking about. This Korean stuffed turkey breast is perfect for a smaller gathering of curious epicureans, happily feeding 4-6. I can’t decide if the best part is the sweet and spicy glaze (made with soy sauce, mirin, ginger and garlic)… … or the butternut squash stuffing (complete with chestnuts, glutinous rice, and jujube dates)… Or maybe it’s the fact that it can be made on the stovetop… saving the oven for more important things like pie. Lots of pie. The recipe is inspired by a Korean stuffed chicken breast recipe in The Flavors of Asia by Mai Pham. There’s only a couple of watch spots with the recipe. Zambia’s Spiced Tilapia Stew

  “Leading a race does not mean that you will win it.” Zambian Proverb It’s a chilly, wintery, blustery sort of day. Even the trees shudder, their leaves falling down in chatterings. Thankfully, Zambia makes quick work of dissipating the cold, with this Spiced Tilapia Stew.  Each bite pops with fresh lime juice, tomatoes, and Napa cabbage. A dusting of cumin, mustard seeds, fresh ginger and garlic give the broth depth. But it’s the Thai Bird chilies that’ll clear your sinuses.  Even just one in the pot promises a mellow tingle in every spoonful.   This is another kind of DIY soup, because of the garnishes. Children will especially enjoy squeezing lime juice on their soup and sprinkling their bowl with parsley.  Adults will enjoy seeing how many Thai Bird chili peppers they can handle. Rosemary & Lemon Harissa Kebabs

Summer still catwalks through the August air, unabashed and sizzling. There’s still time to grill, still time to sit out under the stars without a coat, or even a hoodie. There’s time to wear out those flipflops and kick back in sunglasses. And there’s still time to try Uganda’s kebabs, adapted  from Marcus Samuelsson’s beautiful cookbook Discovery Of A Continent – Foods, Flavors, And Inspirations From Africa.  The flavors are intense. Bright lemon juice starts of the explosion. A long marinade brings out bright sparks from the citrus. Then there’s a needling burn from the Harissa, a traditional spice often found in North African cooking. How much heat is there? As much as you can handle. Or as little as you’d like. Tip: You find Harissa mix at Whole Foods in the spice aisle (to be combined with water, olive oil, and crushed garlic), or you can buy a canned paste at a Middle Eastern market. Green Papaya Salad | Som Tam

Whomp. Womp. Womp. Everything worth doing takes a little bit of work. And so it is with Som Tam. The mortar and pestle crushes the garlic, mashes a Thai bird chili peppers,  and wooshes the fish sauce and lime juice into the green beans and papaya. I put the bowl on the table, dotted red with tomatoes. Ava thinks the papaya is spaghetti. The pale green shreds curl around her fork. “It’s something like that…” I say, hoping she believes me. She takes a bite, then another. Soon the forks on plates are the only noise. While I adore Thai food, I’d never had green papaya salad before this week. Singapore Chilli Sauce

The act of “saucing” food in Singapore is not as simple as I expected it to be. From what I can tell, there’s two schools of thought on the matter. First: the ‘dip & dunk’ variety, a.k.a. those who keep a bowl of incendiary hot sauce next to their plates for regular food baths. Second: the ‘drizzle & bedazzle’ variety, a.k.a. those who let the sauce rain down over their food, free-form. While I wouldn’t normally expect this to be a big deal, the foodies of Singapore are so impassioned that they are more than happy to come up to you and show you their preferred method… especially if you look even the littlest bit unsure (this happened to Bourdain countless times on his No Reservations trips there). Should this ever happen to you, my advice is to enjoy the free cultural lesson – the chance to learn from a local. There are hundreds of Singaporean recipes for Chilli Sauce (P.S. Ginger & Rocoto Ceviche

Last week I spoke with “Kelly,” a short, black-haired Peruvian restaurateur whose father had a thing for Western names (he also named one of her brother’s Kennedy – and, as she admitted with downcast eyes, another brother “Hitler”). If that wasn’t enough to blow my mind, she added in her thick, rolling accent that halibut ceviche is the “Dunkin’ Donuts” of Peru. I asked her twice to repeat herself. Each time her smile grew bigger and her words clearer. Ceviche is the Dunkin Donuts of Peru. Ceviche- Peru’s pride and joy – is light, fresh, and healthy, so I found the comparison strange. Unlike the doughnut, which takes a dip in a bubbling cauldron of oil, the seafood “cooks” in the acid of lime or lemon juice. Nothing could be cleaner. Each bite is bright, flavorful, and often spicy with the addition of the rocoto pepper (although any hot pepper can be used to taste) and a hit of fresh ginger. Spicy Coconut Shrimp

Fact: Shrimp are like relationships. They should be warm and inviting. Not cold and clammy. I’ve never been a fan of cold shrimp at cocktail parties. I eat them begrudgingly (if only because I’m an eternal grazer). All the while, I daydream of a crackling, crusty, and “fried-until-golden-brown” shrimp. I’m not sure why I settle on cold and clammy at cocktail parties, but I do it every single time. Thankfully, I didn’t make the same mistake when choosing my husband. And, after this week’s Global Table, I may never do it again with shrimp. While you won’t find Coconut Shrimp in the remote villages of Papua New Guinea, you will find it in the country’s coastal restaurants. In fact shrimp would be the dainty option; often they’ll use humongous prawns and serve spicy chili sauce on the side for dipping. Tandoori marinade for fish or chicken

“It smells good in here.” That’s what Keith said as he wandered by. I was leaning in, photographing spoonfuls of spices that I’d later mix with yogurt for beautiful tandoori marinade. There was sweet, grassy coriander and bright lemon juice. Tangy yogurt and earthy garam masala. The ingredients slid together into intoxicating deliciousness – not without a bit of sass thanks to the fresh ginger and spicy garlic. Tandoori is enjoyed from Pakistan to India … even, as we learned this week, as far as the tiny island country of Palau, way out in the Pacific. To eat proper tandoori, you need a tandoori oven. These cylinders of shimmering heat create addicting char-grilled flavor while retaining perfect moisture. At home you can approximate the flavor of good tandoori in your regular oven or on the grill. 5 Step Mole Poblano

I’ll be honest. On the onset, learning how to make Mole Poblano sounded a lot like learning how to knit a wedding dress. Outrageously epic, but not entirely something I had the skills for. In case you’ve never heard of it, we’re talking a Mexican recipe from Puebla that has a million, gazillion ingredients (ok, really just about two dozen), many cooking phases, and centuries of history behind it. Yikes. After staring at dozens of recipes, drinking several cups of tea, and more than a little sleep lost, I broke mole poblano down into 5 basic steps. Deep sigh. Smile. This feels better. Ginger n’ Spice Tomato Sauce | Rougaille

If there is one recipe that reflects the Mauritian potluck of global flavors, this is it. Rougaille. Let’s take a walk through the flavors of this unusual sauce – I have a feeling you just might make friends. First, imagine a simple, homemade tomato sauce. The deep red goodness smells sweet and fresh. This sauce can be found in homes all across the world. Tomatoes, onion, garlic. Standard fare. Until you take a bite. Then you realize, this is more complex than you could have ever known. This “rougaille” is … unusual. First, there’s a hint of the French influence – a smattering of parsley, thyme, and even the optional splash of white wine. Mauritian Chili Poppers | Gateaux Piments

If you have a hankering for a munchin’, come with me via “stove top travel” to Mauritius. While there, we’ll cozy up, picnic-style, with a basket of Gateaux Piments. These crisp, crunchy poppers are quite a bit like falafel and I got to try them thanks to you, dear readers, since they won your vote on our Facebook Fan Page as the split pea recipe you’d most like me to try. (Thank you!) What I find most exciting about these chili poppers is their intense, fresh flavor. Each bite reveals earthy nips of cumin seed, springy green onion and cilantro sprigs, all tossed around in a golden tumeric glow.
