Raw garlic with nothing but a heap of lemon juice and olive oil to thin it out? They do it in Lebanon. And it’s fabulous. Just one thing … No one will ever kiss you again. Except your mother. Bam! Cranberries. Right now. It’s their time to shine. Latvians know what’s up when it comes to the cranberry. They eat it whipped in clouds of pudding, layered with breads, and beyond. Today, however, is about a mountain of sugar. A squiggle of orange zest. A few minutes on the stove and you’re done. It’s really that simple. Here’s what I did: 4 cups cranberries 1 cup water 1 cup sugar, extra to taste 2 tsp strips of orange zest. Quickly look through your cranberries as you put them in the pot – weed out any squishy, yucky ones. Add all the other ingredients to pot. Bring to a simmer and cook 10-15 minutes. Taste and add more sugar if desired. Refrigerate until cold. Don’t be scared of the popping. It’s just the cranberries saying hello. You can add cinnamon sticks, fresh ginger, or whatever suits you to fancy it up. Minty Garlicky Yogurt is an oddball recipe. An oxymoron. Personally I love loads of garlic. I don’t mind dragon breath. I don’t mind scaring away the cat. So, I suppose Minty Garlicky yogurt sauce is good for people with garlic regret. As you eat it, the garlic infuses your breath but then – woops – the mint comes along for the ride, sweetening things up in the background. Of course, you’ll probably still need to brush your teeth after eating this dip. You’ll find similar recipes all over north Africa, central Asia and beyond. The nomadic peoples of Kyrgyzstan have no shortage of dairy, thanks to their herding lifestyle. To keep things interesting they blend yogurt with either mint or cilantro and plenty of fresh garlic. Gotta love anything that ends with an affirmative. Since papayas are beloved in Guinea and Guinea Bissau, I really wanted to make papaya jam for you today. Unfortunately, jam making all but requires a chemistry major. I’m too footloose for that, so I made chutney. The cool thing about chutney is that it’s made the same way as jam, with the same ingredients… minus the powdered pectin and careful measuring. In other words, minus the headache. And, honestly, it’s quite a bit more authentic for West Africa. To give the chutney a bit of body I used the natural pectin found in orange peel. The result? With a quick whizz-whirr in the blender, this vegan sauce (a.k.a. recado) blends the smoky flavor of roasted, toasted seeds and other goodness with a half stick of cinnamon and dried chili peppers. Makes about 1 1/2 cups Mustard-lovers unite. This tangy, spicy Scandinavian recipe goes great with meaty salmon. Take the time to buy really excellent mustard – the spicier the better. If you have leftovers try spreading a little on a sandwich. That’s what I did! Ingredients: 3/4 cup (7 oz) spicy dijon mustard 1 1/2 ounces fresh dill, stems removed and chopped (about 1 cup) 1/8 cup vinegar 1 tsp salt 1 1/2 tsp sugar 3/4 cup oil Method: First things first. Start a small herb garden and grow a mound of dill. You’ll be glad you did because this recipe calls for a lot. About 2 of those insanely expensive plastic containers the supermarkets carry. Makes 2 cups Spicy, garlicky, and tangy, this “doctored” tomato sauce goes great with pasta, rice, or all of the above (a.k.a. kushary … noodle, rice and lentil casserole). Feel free to tone down (or up) the heat, if you like things a little milder. Often extra sauce is placed on the table so diners can heap it on in whatever quantity desired. Ingredients: 1 can tomato sauce (15 oz) 4 cloves garlic, crushed 1/2 tsp cayenne (or to taste) 1 tsp vinegar salt (only needed if your sauce is “no salt added” sauce) pepper Method: Add tomato sauce to a small pot.
