Mauritian Chili Poppers | Gateaux Piments

If you have a hankering for a munchin’, come with me via “stove top travel” to Mauritius. While there, we’ll cozy up, picnic-style, with a basket of Gateaux Piments. These crisp, crunchy poppers are quite a bit like falafel and I got to try them thanks to you, dear readers, since they won your vote on our Facebook Fan Page as the split pea recipe you’d most like me to try. (Thank you!) What I find most exciting about these chili poppers is their intense, fresh flavor. Each bite reveals earthy nips of cumin seed, springy green onion and cilantro sprigs, all tossed around in a golden tumeric glow. These “gateaux piments” would taste fantastic on any salad but, if you want to be totally authentic, try them sandwiched inside a buttered baguette [recipe], perhaps while overlooking the laughing horizon. Indonesian Salad | Gado Gado

Nope. That would be weird. No, this is peanut sauce, the perfect complement to Gado Gado. And what is Gado Gado, you ask? The coolest way to stay cool in Indonesia. Made from an assortment of tofu, tempeh, young jack fruit, cooled boiled potatoes, eggs, and green beans, Gado Gado is a dream-come-true for those of us who like to use leftovers. Of course, to keep things fresh and crunchy, most Gado Gado salads also add a blast of cabbage and sprouts. If that sounds too healthy, no worries. While I went light on the peanut sauce, I’ve read that many salads are swimming in the stuff. I got the same effect by dipping each bite until totally coated in peanut sauce. It was brilliant. Serves 4-6 Have you always wanted to dye your hair red, but have never had the courage? Do the next best thing – cozy up to a bowl of west-African “Red Red.” Ginger people look dull in comparison to this electric one pot wonder. The bright red color comes from the addition of shockingly excessive amounts of red palm oil – up to one cup for three cups of beans in some recipes. Traditional recipes include so much oil that a red ring forms around the base of the beans. I’ve been fairly modest with my addition for health reasons and because I find the flavor of red palm oil quite strong. Play around with it – start with 1/8 cup, and add more at the end of cooking until you like the taste. Serves 4 Let’s thank Eritrea for this giant, vegan bowl of deliciousness – a happy mixture of spicy lentils, offset by sweet carrots and tomatoes. The heat comes from berberé, the regional spice blend that should be added with a heavy hand. You know, for authenticity purposes. And lots of sweating. Edited to add: One of our readers posted a great tip in the comments section of our Ethiopian menu which also applies to Eritrean cooking: When I watch Ethiopian cooks in Ethiopia they chop up red onion very tiny (I use a food processor and stop short of pulverizing as it helps it cook down faster) and then dry cook it in the pan — no oil. Makes about a quart On the streets of Cairo, Egypt, people on their way to work stop by a street vendor to grab a few bites of Ful Medames. They hover around, scooping the dip up with Egyptian flatbread – a sight as common as an American dunking a donut into their coffee. Ingredients: 1 cup sofrito olive oil 2 cans red kidney beans 1 cup stock or water salt & pepper Method: Heat up some oil in a medium pot. Add sofrito and cook… past the point where it releases all its juices… To the point where it starts to get toasty. That is the yummy bits that will make your beans incredible. Next, add the beans. Black Beans and Rice | Gallo Pinto

Gallo Pinto is enjoyed by Costa Ricans year-round, for breakfast, lunch, or dinner. The beans and rice are mildly seasoned, however the Worcestershire sauce gives the dish an unusual kick. Ingredients: 2 1/2 cups leftover, cooked white rice 2 cans black beans, drained and rinsed 1 onion, chopped 4 cloves of garlic, crushed oil 1/2 tsp paprika 1/8 cup Worcestershire sauce 1 cup broth or water salt and pepper Method: Heat oil over medium heat. Peasants Cachupa (Cachupa Pobre) Vegan

Makes about 1.5 gallons Cachupa is the quintessential Cape Verdean dish. While there are countless variations, almost all Cachupas have hominy, beans, and potatoes. Some add yucca. Any assortment of vegetables and legumes can be added, depending on availability. For those who can afford it, dried and smoked Portuguese sausages are also added for tremendous “stick to your bones” flavor. Fish, such as tuna and wahoo, is a little more attainable for the average citizen. Our version is vegan and more affordable. More in the mood for breakfast? Leftover Cachupa will suit you too. In fact, refried cachupa (cachupa rafogado) is often served with fried eggs. Nothing like sight, smell, and sound of sizzling eggs in the morning… Tradition vs. our version: Traditionally and typically, the hominy is pounded prior to cooking, however our version leaves the kernel whole for texture. Babenda

If you enjoy the flavor of funky blue cheese, dried or smoked fish, and bitter greens, then Babenda is for you! I know. I’m asking a lot. Although we might be a select group of people with such accommodating palates, this one pot meal is a common staple in Burkina Faso. Babenda is like a jazz orchestra in the mouth, making wild taste sensations and pungent high notes meander whimsically through mouth and home. Ingredient Overview: The Greens: Any bitter greens can be used for Babenda, including spinach, kale, swiss chard, or mustard greens. Of these, swiss chard is the mildest. If you use a more intensely bitter green (like kale), Burkinabe traditionally add a dash of potash (or baking soda) to mellow the flavor out. Soumbala: Soumbala (also called dawadawa) is fermented locust bean. I found it frozen at a Tropical market in Tulsa. Balkan Baked Beans | Prebranac

Serves 2-4 Prebranac is rich, comforting, and tasty. This baked bean dish is like a warm hug from Bosnia, the “Heart of Europe.” The key is to slowly cook the onion until the golden, sweetness develops. I will be making Prebranac over and over again. I suggest you do the same! 🙂 Ingredients: 1 cup dry Lima beans, cooked (or 2 cans, drained) 2 medium onions, chopped 1/8 cup olive oil 3 garlic cloves, crushed 1 Tbsp paprika seasoning salt pepper 1 Tbsp of flour Method: 1. Preheat oven to 400F. Heat up olive oil in a pot over medium heat. Add onion and cook until golden. 2. Add garlic, paprika, flour, salt, and pepper. Cook a few minutes until spices are fragrant and flour is moistened. 3. Add beans and stir to combine. 4. Pour into a casserole and bake until crusty on top, about 15 minutes. Enjoy hot! Pureed Black-eyed Peas

Serves 4 Benin’s Pureed Black-eyed peas are smooth and creamy thanks to peeling the beans. If you do not have the patience for peeling the beans, use a food mill or omit the step all-together. The resulting mash is rich and flavorful, but it looks a lot like mashed potatoes so you might give unsuspecting guests a heads-up. Ingredients: 2 cups dried black-eyed peas salt pepper 1 stick butter Method: 1. Soak beans overnight in cool water. Drain the beans and slip the skins off. For detailed explanation see Technique Thursday: Peeling Beans. 2. Cover beans with about an inch of water and simmer for about 15 minutes, then season with salt and pepper to taste. Continue simmering until tender. 4. Drain liquid off and puree. I used an immersion blender. You could use a ricer, food processor, blender, or a large mortar and pestle. 5. Serves 4 Peas n’ Rice really is “beans” and rice. This savory side will go with almost anything – chicken, pork, fish, vegetables – especially grilled or roasted. In Barbados Peas n’ Rice is often served with fried fish. Ingredients: 2 Tbsp vegetable oil 1 onion, diced 1 Anaheim pepper, minced 1 habanero pepper, minced (optional) 3 cups water + extra as needed 1/2 cup dried black eyed peas, soaked overnight 1 1/2 cups rice 1 tsp salt 1/2 tsp pepper 2 Tbsp fresh parsley Method: 1. In a large pot, add oil and fry onion, Anaheim pepper, and habanero pepper (if using) until golden, about 15 minutes. Add the black eyed peas, stir and sauté for about 5 minutes. 2. Add 3 cups of water, and simmer covered until the peas are almost done (just slightly hard still). This might take 45 minutes or so. Just taste a bean every once in a while. 3.
