Israeli folks know – loaded hummus is everything. An entire meal can be made from a cozy bowl of warm chickpea puree when loaded with caramelized onion and cumin-laced mushrooms. There’s a whole head of garlic up in these cyber pages. By now you should be able to smell it through the screen. I know. You have boys to kiss. Important business meetings and no Altoids. You don’t have time to smell like garlic. But indulge me for a moment, please. We’ve eaten a whole head of garlic on this Adventure before, as with our Lebanese garlic sauce Toum, but this time our garlic is making friends with lentils and Swiss chard. They bubble and steam up together, considerably mellowing out the flavor. To round out the flavor, there’s a squeeze of fresh lemon juice, a splash of pomegranate syrup, and a pile of cilantro. Slovenia is known for her soups – each bite captures the taste of the earth and sky, rolling hills and grand mountains. They are the answer to frosted windows, the worst sort of bone-chill, and that scratchy feeling in the back of the throat. Slovenian soup is the sunshine to your snowy day. Today, in particular, we explore Ričet, one of the more beloved soups found throughout Slovenia. She’s made with barley, a soft, earthy grain that reminds me faintly of pasta, but chewier and more wholesome. When paired with beans, carrots, potatoes, onion, and garlic, an entire meal is made. A slice of rye bread on the side would be grand. While Ričet could certainly be made vegan, traditional Slovenian soups would include sausage or, as I have done, bacon. This New Year, I’m making room for sunlight to lay across the floor. No more discarded shoes to trip over. No more stacks of books or useless tchotchkes. Senegal inspired me. One of our readers, Annabelle, suggested we try today’s Cod Fish Feijoada. This filling, yet healthy Portuguese stew made it’s way to the islands of São Tomé and Príncipe during colonization. Things have evolved quite a bit since then. While most Feijoada’s involve black beans (even as far away as the one we made for Brazil), the islanders favor this white bean version and make it with readily available fish (and sometimes pork). The entire principal is a slow-cooked, tender meal full of flavor from raw beans. In the old country, a variety of herbs and spices might be added, but things are simplified on the islands. Some recipes don’t even include the carrots as I have (and they might as often be substituted with cabbage). The really distinct part of São Tomé and Príncipe’s recipe is the red palm oil – a signature ingredient in West African cooking. There’s an old Rwandan saying “The most extensive land is the human belly.” I like to think there’s mountains and streams in there, glorious sunsets and easy, glimmering sunrises. Is that somehow unsavory? I don’t know. I do know I want this land to be vast, and include as much variety as possible. I want to fit the whole world in there. And this, my friends, includes the plantain. Plantains have been an issue for my family from the beginning. Ava isn’t really keen on them (or bananas). Mr. Picky has consistently pushed aside his in favor of other foods (except for that time I made Plantain Chips with Sea Salt for Panama and that other time I used them as a butter-fried cheese wrapper, a.k.a. tortas de plantano). Next time you go to a potluck, spice up everyone’s life with pakistani mixed bean salad. Each bite has bits of chickpea, northern white beans, tomato, onion, and peppers. The salad can be spicy or mild, tart or savory. It all depends on how you mix it. Either way, it’s fresh, healthy, and – thanks to being seasoned with lemon juice, cilantro, and garam masala – just on the other side of unusual. If you wake up in Nepal, chances are you’ll be eating Dhal Baht. In fact, you’ll probably also eat Dhal Bhat as the sun bobs below the horizon.
