Apricot Fruit Leather | Quamar-el-Deen

Makes about 8 strips Feel free to play around with this recipe to make flavors and combinations that you like. Be sure to check out the tips in Technique Thursday. Time may vary on when this is done, depending on your oven. Please check multiple times so as not to overcook this! Ingredients: 12 ounces dried apricots, quartered 1 cup water 2 Tbsp honey 4 cardamom pods Method: 1. In a small pot, simmer dried apricots with water, honey, and cardamom pods. Simmer about 20 minutes. 2. Carefully remove cardamom pods. Using an immersion blender, puree mixture. The mixture should be a bit thicker than applesauce. 3. Line a baking sheet with silpat (or microwave safe saran wrap). Pour apricot mixture over silpat about 3/8″ thick. Spread evenly. 4. Place baking sheet in a warm oven for 6-8 hours, or until apricot leather is just tacky to the touch. Coconut Bimini Bread

Coconut Bimini Bread, fresh from the oven Makes 2 small loaves or 1 large “Pullman” style loaf Coconut Bimini Bread is easy with the help of a bread machine or standing mixer fitted with dough blade. Sweet and doughy, try serving leftover slices in French Toast or Bread Pudding! Ingredients: 2 1/4 tsp instant dry yeast 4 1/2 cups unbleached flour (plus extra , if the dough comes out too wet) 1 tsp salt 1/4 c nonfat dry milk powder 1/3 cup sugar 1 cup coconut milk (if you warm this slightly it will help the dough rise quicker) 3 Tbsp honey 3 Tbsp butter, softened 1/3 cup vegetable oil 3 eggs Method: 1. In the mixing bowl of bread machine add all ingredients in order given. Set on dough cycle (just mixing and rising). The dough cycle usually lasts about 1 1/2 hours. Sweet Saffron Custard with Rose Water

Serves 4 This dessert combines crunchy almond pieces with creamy custard.  I learned from my Global Table dinner people either love or hate the contrast of texture. Enjoy with hot tea. Ingredients: 3/4 cup slivered almonds 2.5 cups milk 1/4 cup sugar 1 Tbsp butter 1/8 cup semolina 1/4 tsp ground cinnamon 1 tsp rose water pinch saffron, crushed slivered almonds & cinnamon – garnish Method: 1. Finely grind the almonds in the bowl of a food processor. Heat ground almonds with milk and sugar. Bring to a boil, to infuse the almond flavor into the milk. Remove from heat and let cool slightly. 2. Meanwhile, in a medium saucepan, toast semolina in butter, stirring for a few minutes. 3. Add milk mixture to semolina in a smooth, steady stream. Simmer, uncovered for about 15-20 minutes or until thickened like pudding. Add saffron and cinnamon. NOTE: If you let this boil by accident, the bubbles are like volcanos. Austrian Chocolate Tart with Apricot Jam | Sacher-torte

Serves 8-10 When made properly, Sacher-torte is enrobed in a silky, smooth layer of chocolate ganache. This cake will satisfy any sweet tooth. I made sure to make enough glaze that even the novice decorator will be able to coat the entire cake. Please note: This is *not* the same recipe as published in my upcoming article in AFAR Magazine. Armenian Hazelnut Cake in Honey Syrup | Revani

Serves 8 This dense cake has a muffin like texture. Depending on how coarse you grind the nuts, you can experience quite a bit of “crunch.”  Serve chilled or room temperature with vanilla ice cream. Ingredients: For syrup: 1 cup water 3/4 cup sugar 2 Tbsp honey 2 pieces cinnamon stick 2 lemon slices 3 Tbsp brandy For Cake: 4 large eggs, separated 1/2 cup sugar 3 Tbsp vegetable oil 1/4 cup greek yogurt 1 cup flour 1 1/2 cups toasted, skinned, ground hazelnuts (you can grind them up in a food processor) 1/3 cup ground walnuts 1 1/2 tsp baking powder 1 tsp ground cinnamon 1 orange, zested 1 lemon, zested optional garnish – hazelnut halves Method: For the syrup: 1. Crepes with Milk Fudge | Panqueques de Dulce de Leche

Serves 4 Got a sweet tooth? Argentine crepes with dulce de leche will satisfy. The creamy carmel like filling makes this dessert date night material. Ingredients: For the crepes: 1 cup flour 1 cup milk 2 eggs 1 1/2 tsp vanilla extract butter For the dulce de leche: Recipe Method: For the crepes: 1. In a medium bowl, whisk all ingredients together. Set in refrigerator overnight. This important step removes all lumps and makes for a great texture. 2. Heat a frying pan over medium heat. Add a bit of butter. When pan is hot, add about a 1/4 cup of crepe batter to the pan and swirl it around to spread into a disc shape. When the surface of the crepe no longer changes from looking wet to looking dry, turn over and cook for about 1 minute longer. There should be only light browning on the crepe. 3. Baked Brown Sugar Bananas

Serves: 4 Baked bananas are delicious in brown sugar and butter. Serve hot over ice cream, making sure everyone gets a little of the sauce. NOTE: not all rum will light. I had coconut rum on hand and it does not flambe (however, it did add great flavor to the bananas). You will need to buy Bacardi 151 for this. Also try Benin’s Baby Bananas in Orange Sauce. Ingredients: 6 ripe bananas peeled 1/2 cup brown sugar 4 Tbsp melted butter 2 ounces coconut rum 1 ounce bacardi 151 (to light it on fire) Vanilla ice cream Method: 1. Preheat the oven to 350F. 2. Lay bananas in a casserole dish. In a small bowl combine brown sugar with butter. Spoon mixture over bananas. 3. Bake for 20 minutes (longer if bananas are firmer). 4. Coconut Dessert | Cocada Angolana

Serves 4-5 Cocada Angolana is an intensely sweet dessert. Make sure to add plenty of cinnamon; the warm spice rounds out the flavor. Ingredients: 1 cup water 2 cups sugar 4 whole cloves 4 cups grated coconut 1 1/2 cups whole milk 1-2 Tbsp cinnamon Method: 1. In a large pot over medium heat, cook water sugar, and cloves. Stir until dissolved. Heat until mixture reaches soft-ball stage on a candy thermometer (about 240F). 2. Using a spoon carefully discard cloves. 3. Add coconut and milk. The mixture will clump. Continue to stir until smooth. Simmer for a few minutes. 4. Spoon into serving dishes and refrigerate at least 30 minutes. 5. Sprinkle with cinnamon. Serve chilled. Bil Zbib (Sweet Couscous)

Serves: 4 Bil Zbib is eaten for breakfast or dessert in North Africa.  Serve this sweet couscous warm in the winter and cool in the summer. Ingredients: 1/4 cup golden raisins 4 dried apricots, diced 2 prunes, diced 1 1/2 cups water 1 1/8 cup dried couscous 2 tablespoons melted butter 2 tablespoons sugar 1 tsp cinnamon 1/8 cup powdered sugar Method: 1.  In a small pot combine the raisins, apricot, prunes, and water. Heat until boiling. Add couscous, cover, and turn off heat. Let sit 5 minutes. 2.   Add butter, cinnamon and granulated sugar. Gently fluff the couscous; pile in a mound on a small shallow platter. If you haven’t enjoyed rose water and cardamom before, you’re in luck! The bold flavors of this Afghan Firnee are a novel delight for the western palette. Rose water and cardamom give this creamy custard an ethereal quality, while the ground nuts add a mystifying texture. Enjoy with tea and dried apricots. (Serves 4) Ingredients: 2 1/4 cup whole milk 1 cup sugar 4 Tbsp cornstarch 1 tsp ground cardamom 1 capful rosewater 2-4 Tbsp pistachios, finely ground 12 whole pistachios for garnish Method: 1. Heat milk in a small, heavy bottomed saucepan over low heat. 2. In a small cup mix cornstarch with a few tablespoons milk. Stir to create a smooth, gravy like consistency. This is called a cornstarch slurry. 3. Add cornstarch slurry, sugar, cardamom, and rose water to saucepan. Stirring constantly, heat mixture until it thickens and a few bubbles break through the surface. 4. Remove from heat and ladle into serving dishes.
