If you wake up in Nepal, chances are you’ll be eating Dhal Baht. In fact, you’ll probably also eat Dhal Bhat as the sun bobs below the horizon. Nothing wrong with eating the same dish twice in one day. There’s a beautiful simplicity in waking up and knowing that, as certain as the sun will circle the sky, there will be Dhal Bhat. Ah, yes. There’s something to be said for consistency. And for not having to make quite so many decisions during the day. I’m not sure what in my life is that certain. Perhaps my daily cups of tea. All day long I drink glass after glass of the stuff. This fancy name simply means lentils, split peas, or other pulses (dhal) with rice (baht), but each bite reveals so much more. Burmese Coconut Chicken Noodle Soup | ohn-no-khao-swe

Oh, yes. Even on the hottest day in steamy, tropical Myanmar, you’ll find gaping bowls heaped with noodles, chicken, and silky coconut curry. It doesn’t matter if you’re sick. It doesn’t matter if your skin is tacky with salty sweat.  “Ohn no khao swe” is what’s for dinner. . You can call it Coconut Chicken Noodle Soup, if you’d like. To a local, this curry topped with egg and a garden of garnishes is breakfast, lunch, or dinner. It’s as easy to find in rambling shacks as it is in roadside stalls. I can’t get over how easy it is to make. Chop a few things, toss them in a pot and simmer. After a happy mingle serve with noodles and enough garnishes to bring out even the Grinch’s smile, not to mention little Miss Ava (have I told you lately how much kids like to help build their own meals?). . As a teenager in Luxembourg, I never really thought about high class cuisine. We spent a lot of time over at Quick, the aptly named fast food place. If we weren’t there, we were eating a the local pizzeria, bar, or patisserie. It’s a shame, really, because the world’s first and only female winner of the Bocuse d’Or, a highly competitive culinary competition, is from Luxembourg and has two restaurants right around the corner from where we hung out. Talk about missed opportunities. The chef’s name is Lea Linster and her impeccable dishes show that country food can be just as classy as city food. As I watched her speak about this traditional green bean soup, I knew I had to try it. It’s time we take back the expression “Have it your way” from that mega corporate burger joint and put it back where it belongs – into our homes, onto our own homemade-with-love meals. Take this soup from Laos, for example. Traditionally served for breakfast, but great any time of day, Foe is a celebration of individuality, creativity and having it exactly how you want it – without chemicals, junk and gunk. Foe is a rice noodle soup from Laos, typically made with beef, pork or chicken. Sweet Pumpkin Porridge with Rice balls & Red beans

While I don’t typically dive into steaming hot bowls of sweet pumpkin soup, I just might make an exception today. And, if I did, I just might use one of those rice balls as a floaty. No judgments, please. I just like pumpkin a whole lot. The unusual thing about this soup is not how sweet it is, or even the fact that there’s rice balls in it (that’s not much different than a dumpling) – it’s that there’s a scoop of sweet red beans lurking at the bottom of the bowl, waiting for the unsuspecting diner to slurp and nibble and glump. Sweet Coco Pumpkin with Pandan Leaves

If you’ve been to the grocery store lately you’ve seen it. Mounds and mounds of pumpkins. They’re bright fire orange, forest green, haystack yellow, cloud white, and even sorceress gray. Some are bumpy and some are flat out gnarly. They’re all saying hello, strutting their stuff, hoping you’ll take them home. Every year I take a few more home than the year before. I can’t help it. I like the teeny weeny ones best. The kind Ava can practically palm in her small 2 year-old hand. Central Asian Noodle Stew | Lagman Shurpa

Serves 4 Are you in need of some revitalization? A breath of fresh air? Are you worn out, tired, or just plain sad? Are you cold? I’m with you. I’m all of the above. When I feel like this I just don’t know what I want. I want everything. And nothing. All at once. I want to sleep. I want to watch movie after movie. I want soup. I want lots and lots of noodles. And then I feel guilty and want some veggies. But not the crunchy, raw kind. Nope, the cozy cooked kind. Kazakhstan has the answer. Lagman Shurpa, a.k.a. noodle stew. According to the old Kazakh saying “Meat brings strength, shurpa brings beauty” (from Please to the Table), it sounds like it will help just about every ailment. Sweet Rye Bread Soup | Brauðsúpa

Serves 6 This is the strangest soup I’ve ever sipped, and I owe it all to Iceland. Actually, “sip” isn’t really the right word. It’s actually somewhere between chew and sip – this soup is thick and hearty. The sugar and raisins give it a sweet, desserty feel, but still it feels like comfort food. Add rhubarb “raisins” if desired. Ingredients: 4 slices light rye bread, chopped (5 cups) 3 slices whole/dark rye bread, chopped (3 cups) 1/2 cup lingdonberry or sour cherry jam 1/4 cup sugar, or more to taste 1/2 cup homemade rhubarb raisins water, as needed Method: Icelanders love rye bread. The love it in the morning. They love it in the night. The love it on the “road”… and they love it chopped up for soup. Let’s create a little Icelandic comfort. Add the cubed bread to a pot and cover with water. Then stir in the jam and bring to a simmer. Puree with an immersion blender until smooth. Add raisins and sugar, to taste. Tart Rhubarb Soup (chilled)

Serves 2-4 Friends, when rhubarb season calls, you must answer. This cold rhubarb soup from Iceland is like a big sip of sunshine. It tastes like lemonade. It tastes like rhubarb. It tastes like “good.” We only have a little more time in rhubarb land until next spring, so hop over to the grocery store and get some! Ingredients: 4 cups chopped rhubarb (cut into 1″ pieces) – about 1 bunch 2 cups water 3/4 cup sugar, more as needed 2 tsp lemon juice Method: Rhubarb, rhubarb, rhubarb. It makes me happy. Almost as happy as these pictures make me… just look at his mane. It’s enough to make any pony jealous Once you chop up the rhubarb, there’s almost nothing left to do. Toss everything in a pot, let simmer for 15 minutes and puree. Chill for a few hours, until cold. Chilled Cherry Soup

Serves 2-4 Relaxing has never been so easy. Dive into this cool bowl of deep violet cherry soup and feel the blissful calm of Hungary overtake you. It only takes 12 minutes to make, 10 of which you’ll be daydreaming in a lawn chair with your sunglasses on. That’s the kind of cooking I can get behind on a hot summer’s day. If you can get your hands on fresh tart cherries (a.k.a sour cherries), the soup will be even better. In fact, if you do, you’ll be able to float some whole cherries on top of the soup as a garnish. Serves 4 Hello summer, nice to see you again. This year let’s stay cool, no overheating, no frustration, no sweaty t-shirts. I have to admit I don’t think you’re playing fair – soaring above 100F in June, but I’ll take drastic measures to keep the peace, if need be. I can curl up in an ice bath. Thankfully, however, there’s something better and tastier: cold soup. Inspired by the Guyanese in South America and their love of Caribbean flavors, today’s special is mango and coconut-tastic. I’m ready to do laps in this chill goodness. The flavor is light – thanks to the coconut water – silky, even. This is high class – good for breakfast, lunch or dinner. Oil Down with Yucca

Serves 6 Stressed out? Time for a Caribbean Oil Down – and I don’t mean massage. This heavy duty dish is made by stewing cassava or bread fruit in coconut milk and curry. The result is a thick, indulgent stew worthy of any party. Our version is vegan, but pork bits are typical. With such rich ingredients, Oil Down seems more suited to a ski slope than a beach party, but, still, Grenadians eat this dish in their bathing suits. Brave, brave people. Oil Down is so rich that you may be able to stretch this one pot dish a lot further than six people. Especially if said people are teeny weeny or even tall, yet thin. The stew gains its richness thanks to the coconut milk which is a defining feature of this popular Caribbean meal. Serve with rice.
