We are coming up on our Mexican Global Table Adventure. Eek! Fun!
Here’s the thing. There’s quite a bit of pressure to get this one right. So, as I did with France, I’m reaching out to you.
Please help me select the menu.
First, let’s start things off with a traditional Mexican drink. Here is a list of several – you choose what sounds good to you.
Then, we have to have a dip or side dish. There are several authentic ones that would be fantastic … I’m at a total loss, so I’m counting on you.
Finally, the main course. After much consideration, I decided on a mole (a thick, richly flavored sauce that goes over meats or even vegetables, if desired. You simply need to select the kind of mole:

This website is… simply amazing. I don’t really have any other words for it. Amazing recipes that even I can make, world peace, drool-worthy photographs of not only the food but the places where it comes from…. simply amazing.

i’m glad my choice of moles is winning, but i’d rather you do enchiladas! couldn’t you do both? I voted for the yellow mole, cuz i’d never heard of a Mexican dish with saffron, but i love saffron! i use it in Middle Eastern cooking. it will be fun to see it uned a different way. <3
Hmm.. yellow Mole is often used in enchiladas, so there may be a way to grant your wish… as for the saffron – this is actually “Mexican Saffron” which is unrelated to the saffron you would use on the other side of the planet… sorry for the confusion… I am off to update the poll for clarity.
