Jamaican Jerk Seasoning

Makes about 3 cups Are you in need of a lil’ pep in your step? Do you want to go beyond your comfort zone? Would you like to make your taste buds burn with the fire of Jamaican delight? I am. I do. I would. Also, a friend’s birthday is coming up, and she loves spicy food. In a pretty bottle, with a cute recipe card, jerk seasoning makes quite the fabulous gift. So, join me friends. Let’s go on a stovetop journey to the clear waters of Jamaica, where we can heat things up for ourselves and a friend or two. Tabbouleh

Serves 4 If you’re feeling a bit cloudy, a bit rainy, a bit under the weather – let the bright flavor of lemons and parsley uplift you. Tabbouleh is a quintessential Middle Eastern salad recipe. No mezze is complete without it. While most authentic recipes include more parsley than bulgur, you can play around until you have the quantity you like best. NOTE: All parsley, green onion, and mint quantities came out rather heaping (see photos) Ingredients: 1/2 cup bulgur (I used coarse, but medium or fine is traditional) 1/2 cup fresh lemon juice (measured, then strained) 1 bunch parsley, minced (1 heaping cup) 2 tomatoes, diced 3 green onions, minced 1/4 heaping cup minced mint 1/3 cup olive oil salt Method: Rinse bulgur in a little water. Then add to a bowl and pour on the strained lemon juice. Set aside while you prepare the other ingredients. The bulgur will absorb the lemon juice as you work. Indonesian Fried Rice with cow’s eyes | Nasi Goreng

Serves 2-4 Let’s get up and greet the day like an Indonesian. Stretch your arms to the sky. Touch the earth. Pile your plate with fried rice. And cow’s eyes. Now, don’t get me wrong. I don’t mean a cow’s cow eyes. I mean fried eggs. That’s simply what they call them in Indonesia. As far as breakfast goes, Nasi Goreng is incredibly satisfying. Especially if you eat it on top of an 8th century Buddhist monument. And why not? With stove-top travel, we can go wherever we want. Note: This recipe is best made with day-old rice. If you cannot take the time for this, cool your rice in a thin layer on a cookie sheet in the fridge. You should be able to use it after an hour or two. You’re basically looking for it to be dry to the touch. Moist rice will not fry up right – it will get mushy. Also, I left out the chili pepper so Ava could eat it, but locals would often add sliced red chili pepper …

Caribbean Green Seasoning

Makes about 1 1/2 cups Ouch and yum. This seasoning blend should feel like molten lava as it slides down your throat; Guyanese use up to six habaneros in a recipe like this one. However, if you don’t have Caribbean friends coming over for dinner – or the time to replace your throat – feel free to make a mild version. For example, mine (certainly laughable to Caribbeans), uses only a 1/4 of a habanero. In my defense I have a two year-old. Call me crazy, but I don’t have the heart to feed her a paste made with six scorching habaneros, even if she does like a little spice from time to time. Plus, I’m pretty wimpy, myself. So whether you like it hot, or not, just be sure to whip up a batch – you can use it on almost anything, from curries, to stews to grill marinades. Serves 4 Hello. I realize it’s summer, but let’s shut our eyes for a moment and daydream about winter. In Guyana. Are you ready for Christmas? Shall we deck the halls? (do people really do that?). Ready or not, today’s recipe is going to take you to December 25th, Guyanese-style. Read this: The kids got their little presents, got their pictures taken on my lap, and everyone ate fried rice, chow mein, and chicken curry. You know, traditional Christmas food. Makes about 18 triangles While I probably ate Spanakopita in Greece, I can’t be completely sure. You see, I was much too busy singing “Some say love” to my first boyfriend while walking around ancient ruins, holding hands. Literally. We blushed occasionally. Our palms were sweaty. Gosh. Corny doesn’t begin to describe it, but – even still – I will attempt to convince you of the wisdom of Bette Midler which, ironically enough, applies directly to the mighty spanikopita: It’s the heart afraid of breaking that never learns to dance. It’s the dream afraid of waking that never takes the chance. So here’s my message for you: no matter what your trepidations might be, suppress them long enough to make spanakopita. Don’t worry about unwieldy phyllo dough breaking – just keep it covered with plastic wrap so it doesn’t dry out. Don’t worry about falling asleep while making them – borrow a friend to help you. West African Spinach with Groundnuts | Peanut Butter

Serves 4 I’m not sure why this idea seemed so strange to me. West Africans love greens with peanut butter (they call them groundnuts), and I should have never doubted them. The earthy peanuts stand up to the mighty bitter spinach. It balances out nicely with the sweet peppers, but spicy would work wonderfully as well. If you can pick up the spinach and onions from your farmer’s market, I highly recommend it. The fresh flavors will crunch and zip and smile inside your mouth. Ingredients: peanut oil (or regular) 3 green onions, sliced 1 lb fresh spinach 1 red bell pepper 1/4 cup natural peanut butter 1/2 cup water salt pepper or cayenne Method: I was just so happy the farmer’s market opened up for business the same day we cooked The Gambia. Look at these green onions and the healthy, sultry spinach. That’s right. I said sultry. Cook the pepper in hot peanut oil (or vegetable oil if you don’t have any) Add in peanut butter and water. Makes 1 omelet I cracked a mighty big smile when I read that omelets are all over Africa, especially in former French colonies. When I attended the Culinary Institute of America I learned from our Drill-Sargent chef how to make a perfect French omelet, as tidy as a neatly folded blanket. For my final exam I had to make one in less than 90 seconds. In fact, I had to plate it and walk it across the kitchen to the chef in less than 90 seconds. As if that wasn’t hard enough, we lost marks if the golden blanket was soiled with any flecks of brown or – like a Victorian showing her ankle, was crass enough to reveal any filling. I never thought in a million years I’d be able to do it, but after making several dozen I figured it out. Fijian Coconut Ceviche | Kokoda

Serves 4 (as an appetizer) Until Kokada entered my life, ceviche was uncharted territory for me. Raw fish dishes are definitely not native to my hometowns – Boston, Atlanta, Paris, or Luxembourg – they’re really more of a tropical item. (Is it weird to say I have more than one hometown? It’s all I know…) I had my reservations about consuming raw fish in landlocked Tulsa, Oklahoma – but, after taking a big sniff, the fishmonger assured me the mahi-mahi was fresh. What a flavor sensation it is – mild fish swimming in a blast of tart lime juice and cloaked in creamy coconut milk. I added a bit of hot pepper to give even more dimension, but you can use regular green peppers if you’d prefer. TIP: Ask your fishmonger to skin the fish and remove its bloodline. TIP 2: If you have leftover coconut milk from a can, use it to make some Grilled Corn with Coconut Milk. Ingredients: 1/2 lb fresh mahi mahi (skinned & bloodline removed) 2 limes, juiced 1/4 tsp …

Ecuadorian Potato & Cheese soup with Avocado | Locro de papa con queso

Makes a gallon (4 quarts) If you’ve never had locro de papas, you’re in for a surprise. The fine people of Ecuador love this comforting and healthy soup, especially on a chilly day. And why not? Tinged orange from ground annato, most of the flavors remain familiar – potato, cheese, avocado, and cilantro. Feel free to substitute parsley if you hate cilantro. Just so long as you try this soup. You’ll love it. Ingredients: 1 onion, chopped 3 garlic cloves, crushed 1/2 tsp cumin 1 tsp ground annato/achiote 3 giant baking potatoes, peeled and cubed (each about 6″ long) 2 cups of milk enough water to cover the potatoes 1-3 cups extra milk for thinning to desired consistency salt & pepper 1 cup shredded cheese – cheddar or Monterey jack a palmful of chopped cilantro For the Garnish: chopped cilantro crumbled queso blanco 1-2 avocados, cubed green onion, sliced Method: Prepare yourself for an assault of deliciousness. Ecuadorian Open-Faced Cornmeal Omelet with Cheese

I’m not sure what Saturday morning breakfast looks like at your house but make me one promise… some Saturday soon… whip up one of these crazy open-faced cornmeal omelets.  Tip: make life easier on yourself and cook up the cornmeal with dinner, the night before. Happiness is just two eggs away! Serves 1 For the omelet: 1 tablespoon butter 1/8 cup green onion 2 eggs 1/2 cup cooked cornmeal 1 Tbsp chopped cilantro 1/4 cup shredded cheese (monterey jack and cheddar blend) Garnishes: Shredded cheese Cilantro Green onion Method: Whisk eggs together with cooked cornmeal. Add in the cheese, cilantro, green onions, salt, and pepper. Melt butter in a non-stick pan over medium heat. Trust me on the non-stick part. I tried to make this in a regular pan and it stuck like crazy. When the butter is sizzling, pour in the egg mixture. Cover and cook gently. Chicken Meatball Soup | Bakso Noodle Soup

Serves 6 When it’s cold outside, gather around a steaming bowl of Bakso Noodle Soup – you’ll be refreshed by the bright flavors and warmed by the chili sauce. You can bring this soup to a potluck – just keep the tofu, green onions, and chili sauce in a separate dishes for diners to garnish their own bowls.
