Okra Stew with Beef & Eggplant

The truth is, children pick up everything from their parents, from what’s for dinner to more serious considerations, like world views, either loaded with prejudice or full of grace. While sipping soup or nibbling rolls, they overhear snippets of conversation; verbal jabs and eye-rolls are noted. And nowhere is this more noticed, than at the dinner table. Roasted Pepper Spread | Ajvar

Some days I dream about reinventing myself – pulling myself up, out of the ordinary into the wildly wonderful. Roasted Pepper & Eggplant Salad

While I’ve always loved a good ratatouille, there’s something so … soft about it. While that’s fine for a cloudy sort of day, on bright, cheery days, I’m in the mood for definition. Clear edges. Decisiveness. Which brings us to today’s roasted salad, from the Macedonian Global Table. She’s all of those things while still being easy-breezy. The reason she’s so defined? The eggplant and peppers are pre-cut and roasted, which gives good browning and clean edges. Once tossed with fresh tomatoes and a sprinkling of lemon juice, this salad just begs to be eaten with crusty bread and a glass of wine (Macedonia has long produced good wines and CNN even called her the new Napa Valley in 2010). Baba Ghanoush with Roasted Garlic

When I’m at parties I like to dip, dip, dip. You’ll recognize me immediately – I’m the one in the corner, filling up on dip before the meal ever comes. And if, for some reason, I’m not? Just know that’s where I really want to be. When it comes to dips, baba ganoush is everything I never thought it would be.  Roasted eggplant, far from bitter, transforms into a smoky and smooth treat , able to fill my belly in just the right sort of way – without that greasy, pop-out-my-bellybutton feeling some foods leave me with. In fact, baba ganoush strikes me as one of those diet foods that is actually as comforting and every bit as delicious as French fries. But I’m crazy like that. Ratatouille

Serves 4 When I was little, mom made ratatouille all the time. We ate it hot in the winter and cold in the summer, but always with loads of garlic. She’s half Italian, half Hungarian so – naturally – I figured ratatouille was a dish from our own, personal heritage.Later, when I moved to France, ratatouille turned up everywhere. Who knew? Ratatouille is French, French, French. Most popular in the south of France, around Nice (one of the hotspots for rich and famous folk, on the French Riviera), ratatouille means “to toss food together.” They key to great flavor is browning the veggies. With summer on the horizon, I dream about grilling each ingredient and tossing together into a ratatouille inspired salad. Mediterranean Roast Veggies |Briam

Serves 4 This simple layered casserole is vegan, rich, and addictive. The vegetables cook down into a soft casserole, but can be uncovered half way through cooking to reduce the effects of steaming. Ingredients: 1 zucchini 1 small eggplant 1  potato 1/4 tsp pepper 1/2 tsp salt 1/2 tsp oregano 1/4 cup olive oil 2/3 cup tomato sauce 1 1/2 quart casserole Method: Preheat the oven to 375F. Meanwhile, slice all the veggies into thin discs. Resist the urge to see if they’ll fly, like frisbees, across your kitchen. Drop some liquid sunshine (olive oil) into a 1 1/2 quart casserole (you can scale this up pretty easily, if you need to feed more people). Layer on some potatoes… Gather the salt, pepper, and oregano together… And sprinkle the blend onto each layer… Add on the eggplant… and more olive oil. Embrace the oil – this is supposed to be a luxuriously rich dish. Next up, zucchini. And half your tomato sauce. Keep piling everything on in layers… with spices and oil each time… Ending …

Roasted Eggplant & Bell Pepper Dip | Kyopolou

Serves 4-6 Kyopolou melds roasted, sweet peppers, eggplant, and ripe tomatoes to make a dipping sensation. Serve with pita bread or alongside white fish. Be sure to prepare a day ahead (or at least several hours) so that the flavors can properly distribute. Otherwise the garlic will be too sharp and bitter. If you simply must serve this dish right away, use less garlic. Ingredients: 3 eggplants 4 red bell peppers 3 tomatoes (I used roma) 2-5 cloves garlic fresh parsley, to taste 1-2 Tbsp red wine vinegar olive oil, as needed salt pepper Method: 1. Rinse and poke holes in the eggplant. This prevents unsightly explosions. 2. Roast eggplant, bell peppers, and tomatoes on a medium-low grill for about an hour, flipping once. You may also cook them at 350F in a conventional oven. NOTE: For a mellow garlic flavor, you may roast the cloves. Wrap in foil and remove when soft and sweet – about 30 minutes. Everything will get all wrinkly and charred. I know what you’re thinking. Roasted Eggplant Dip | Uukkous Al-Badinjan

Serves 4 Make this dish a day ahead to allow time for the flavors to mingle. Uukkous Al-Badinjan blows baba ganoush out of the water! Ingredients: 3 eggplants 4 cloves garlic, crushed 2 Tbsp olive oil 1/4 tsp cayenne 1 1/2 tsp sweet paprika 2 Tbsp lemon juice 1/4 cup fresh parsley, minced 1/2 – 1 tsp salt Method: 1. Using a fork, poke eggplants all over. Roast eggplants at 350F for about 1 hour or until soft. NOTE: Today it’s pretty hot in Oklahoma, so I decided to keep the house cool and grill the eggplants. Grill at 350F for about an hour or until soft. 2. Remove from oven and let cool until you can handle the eggplants. With a knife, split eggplants open and scoop out all the flesh into a food processor or blender. Or if you’re like me, into a bowl and use your immersion blender. 3. Add remaining ingredients and puree. Taste and adjust seasonings if necessary. Chill and serve with flatbread or as an accompaniment to main meal. …

Spicy Braised Eggplant | Burani Bonjon

This Afghan braised eggplant dish is best served at room temperature. The cayenne gives the eggplant an enjoyable kick, while the turmeric gives it a golden glow. Serve with Seer Moss (Garlic Yogurt Sauce). Ingredients: 1 large eggplant (about 8″ long) 1/2 can diced tomatoes 4 cloves garlic, crushed or minced 4-6 Tbs vegetable oil 1 Tbs dried cilantro (use fresh for garnish if you have it) 1 tsp turmeric 1/8 tsp (or up to 1 tsp) cayenne pepper (mild or death-by-cayenne) Salt & Pepper, to taste Method: 1. Slice eggplant lengthwise 1/4 inch thick. Salt liberally on both sides and lay on a cooling rack over a cookie sheet for about an hour. The salt will draw out bitterness. Rinse the salt off of the eggplant and pat dry. 2. Saute crushed garlic in olive oil until fragrant in a large, heavy bottomed skillet. Set aside garlic in a small container. 3. Add  vegetable oil to the skillet and heat on medium-high. Add eggplant and brown, cooking in batches if necessary. The eggplant should be relatively soft when done. …
