Ingredients

cup
ginger
, grated
1
cup
sugar
1/2
cup
lemon juice
, pulp and all

water

Instructions
Peel and grate fresh ginger root (a bit of skin doesn’t matter as it will be strained)
Add to a small pot with sugar, lemons and water. Bring to a gentle simmer and cook until the sugar dissolves.
Remove from heat. Let steep for 15 minutes- 1 hour, as desired.
Strain the mixture and place the liquid in a pitcher.
Add ice to cool it down. Serve over more ice to chill and dilute.
