Wash, peel and coarsely grate the potatoes.
Put the potatoes in a cloth and press all the moisture out.
Add the potatoes to a large bowl with the chopped onion, parsley, eggs, and flour. Add enough flour to thicken the potatoes so that they hold their shape when placed in the oil.
Sizzle-fry the potato mixture in hot oil (about 350-375F). While you can deep-fry it, I simply put 3/4 inch in a skillet.
Fry on both sides until deep golden brown.
Drain on paper towels and serve hot with ketchup or sweet, homemade apple sauce.
