Ingredients

sugar

water

vanilla extract

cassava root
, peeled, rough fibers removed, and cubed

tsp
salt
red food coloring
green food coloring

Instructions
Peel and cube cassava (yucca).
Steam for 30 minutes or until cooked.
Add sugar, water, and vanilla extract to a small saucepan. Heat over low until sugar dissolves.
Add salt
Run cassava through a food mill to remove all of the fibers.
Mix cassava with saucepan ingredients
Split the mixture between two bowls and add the food coloring to each and roll into balls.
