A spoonful of Tanzania’s Coconut Potato Soup garnished with moons of buttery avocado will transport you to the windswept slopes of Mount Kilimanjaro.  Never fear: The howl you’ll hear as you chow down won’t be the wind on your face, or some dangerous beast – but rather the horn of the Wakonyingo, calling for help. Wakonyingo: Fact or fiction? More than a hiker’s haven, Mount Kilimanjaro is a wellspring of legends involving the Wakonyingo pygmies. The stories fall somewhere between history and fairy tale. History reports that the Wakonyingo were an early tribe inhabiting Kilimanjaro, driven out or absorbed by invading tribes. The fairy tales report a far more interesting story – that the Wakonyingo fled beneath the mountain, where they remain today. Legends claim they are still down there, hidden from sight in a network of tunnels and caves, living a life any gnome would love. Bean n’ Barley Soup | Ričet

Slovenia is known for her soups – each bite captures the taste of the earth and sky, rolling hills and grand mountains. They are the answer to frosted windows, the worst sort of bone-chill, and that scratchy feeling in the back of the throat. Slovenian soup is the sunshine to your snowy day. Today, in particular, we explore Ričet, one of the more beloved soups found throughout Slovenia. She’s made with barley, a soft, earthy grain that reminds me faintly of pasta, but chewier and more wholesome. When paired with beans, carrots, potatoes, onion, and garlic, an entire meal is made. A slice of rye bread on the side would be grand. While Ričet could certainly be made vegan, traditional Slovenian soups would include sausage or, as I have done, bacon. This adds another layer of complexity, making it all the more likely that I’ll be reaching for a bowl of Ričet when the winter snows float down. Dutch Potato Salad | Huzarensalade

If I were to make a potato salad, it would not be loaded up with mayo, nor would it be heavy as a brick. No. My picnic table would have something far more glorious: I would make this Dutch potato salad. She’s full of bright, juicy apples, smoky cubes of ham steak, sweet corn, and tiny, salty gherkin slices. She’s an entire meal, surrounded by tender lettuce, hard-boiled eggs, cucumbers, tomatoes, more gherkins, and whatever else you’d like to nibble on. Radishes? Sure. More apple slices? Absolutely. Steamed asparagus? That’s totally Dutch. Swap the ham for beef? Yes, yes. Want to eat your potato salad in a lettuce wrap? Do it with a smile! When all is said and done, and you look down at your plate, you’ll find a fairly healthy meal. This is the perfect platter for any party. I can see it at a baby shower or bridal shower luncheon.
