Smoked Ham & Green Bean | Jollof

I’m that girl who orders the same thing over and over again at restaurants. I know – not what you’d expect from someone cooking the world. But I can’t help it. I like knowing what to expect. Plus, there’s nothing worse than wasting hard-earned money on a dish that I could possibly end up hating. After all, it’s not like I can send the food back just because I don’t like it. Now, to be fair, I’m a completely different person at home. Without the burden of outrageous restaurant bills, I’m a free spirit.  I play with food. Experiment. Get all MacGyver on it. Beef & Sausage Stuffed Peppers

I love presents. Surprises. Happy faces. So does my daughter. Imagine her ecstatic two-year old delight, then, when her dinner was a lidded present filled with a bounty of rice, sausage and beef? But the real surprise wasn’t her reaction – it was Keith’s. My very own Mr. Picky has been asking for stuffed peppers ever since I made them last week.Who knew this man would fall so hard for a simple stuffed pepper. Who knew he’d be so easy to please. West African Rice with Veggies | Jollof

Serves 6-8 Listen, friends. I thought Jollof sounded weird. Scary. Difficult. It’s not. This is rice with veggies. And spices. Sometimes meat, but not here. Not today. All over West Africa people enjoy Jollof. They make it with whatever they have on hand and more often that not it does not include meat. This recipe is flexible. It’s usually spicy. And it always has some version of tomato sauce/paste in it. The rest is a fun improvisational dance. So, go on – boogie, boogie through that bottom drawer and pull out whatever veggies inspire you. Serves 4 Suffering from 1 digit weather? Ice, snow, and rain? What about sleet? Let’s warm things up with Skoudehkaris. Known as the national dish of Djibouti, this heavy stew is a spicy, comforting treat. The bonus? It’ll make your house smell amazing. Ingredients: 1 lb lamb, cubed 1 onion, chopped 1-2 Tbsp ghee or vegetable oil 1 tsp cumin 1/4 tsp cloves 1 tsp cardamom 1/4 tsp cayenne (or to taste) 1/2 tsp cinnamon 1 14 oz can diced tomatoes 1 cup water, plus extra as needed 1/2 cup long-grain rice salt & pepper Method: Put on your beret – today you are going to be an artist, painting flavor with spices.  (Trust me, the beret is totally appropriate: Djibouti has been heavily influenced by France – it was French ruled until 1977) So.. like I said, get out your beret. Fat Rice with Beef & Carrots | Riz au Gras

Serves 6 This spicy one pot dish is a meal unto itself. If you have a band of merry-men coming over for dinner, serve them heaping spoonfuls of this hearty and wholesome rice and they’ll leave with full bellies and even merrier grins. While Riz au Gras is eaten throughout West Africa, 0ur version is from the Ivory Coast as taught me by Linda of Tropical Foodies. NOTE: You may cut down or omit the chili powder if you would like a mild dish. Black Beans and Rice | Gallo Pinto

Gallo Pinto is enjoyed by Costa Ricans year-round, for breakfast, lunch, or dinner. The beans and rice are mildly seasoned, however the Worcestershire sauce gives the dish an unusual kick. Ingredients: 2 1/2 cups leftover, cooked white rice 2 cans black beans, drained and rinsed 1 onion, chopped 4 cloves of garlic, crushed oil 1/2 tsp paprika 1/8 cup Worcestershire sauce 1 cup broth or water salt and pepper Method: Heat oil over medium heat. Add onion. After just a moment, the entire house will smell like “good.” Now we’re cookin’! Add the garlic… … and cook until onion is soft and turning slightly golden – or however you like to eat it. Coca Cola Rice | Arroz con Cola

Serves 2-4 Ahhh… nothing like a nice glass of cola. But what about in rice? The slightly sweet taste will leave you begging for more, especially when served with spicy food (as is common in Colombia). Ingredients: olive oil 1 small onion, chopped 1 cup rice 1 cup broth or water 1 cup cola salt pepper Method: Add a little oil to a small pot. Olive oil makes the world go round. Heat over medium and add chopped onion. Stir and cook for about five minutes. Once they are soft and starting to turn golden, add rice. Stir and cook another few minutes, until rice is hot. Sweet Peanut Butter Rice | Bouiller

Serves 2-4 If you’re looking for a sweet treat, but the pantry is rather dry, this African peanut butter rice might do the trick. The dish reminds me of peanut butter rice pudding – thick, sweet, and comforting. Ingredients: 1/2 cup white rice 1 1/2 cups water 1/4 cup natural peanut butter 1/4 cup sugar 1/8 cup water additional water, as needed Method: Bring water to boil. Add rice and simmer, uncovered for 15 minutes 2. Meanwhile, mix together peanut butter, sugar, and 1/8 cup water. Natural peanut butter is best because then you can control how sweet your dessert is. The people of Brunei are brilliant. I’ve got proof – the lontong. This compact, slightly perfumed packet of white rice, stuffed inside a banana leaf, is portable, sliceable, flavorful, and affordable. Oh, and cutting the rice logs up into neat coins makes for easy portion control. Well. Ok. I’ll be honest. The coins just make it easier to pop a hundred million of them into my mouth. Yum. Lontong represents everything I love about food around the world. Bolivian Peanut Soup (La Sopa de Mani)

Serves 4 Bolivian peanut soup is a delightful way to serve up good old fashioned meat and potatoes. Cook this soup gentle and slow. If you do, the beef will be moist and tender and the potatoes will bursting with the flavor of their juices. The most unusual part of this soup is biting into the occasional crunchy peanut. Serve with Bolivian Hot Sauce. Serves 2-4 Found both in the Caribbean and parts of Africa, coconut rice is rich and fragrant. The strong flavor goes particularly well with grilled meats and spicy sauces. We even used some leftovers in an asian-style salad with spicy peanut dressing. NOTE: Wondering how to make plain rice? The technique is the same, just substitute water for coconut milk. Ingredients: 1 cup coconut milk 1 cup water 1 cup white rice salt & pepper Method: 1. Heat coconut milk and water and bring to boil over medium heat. 2. Add rice and seasoning. Bajan Peas n’ Rice

Serves 4 Peas n’ Rice really is “beans” and rice. This savory side will go with almost anything – chicken, pork, fish, vegetables – especially grilled or roasted. In Barbados Peas n’ Rice is often served with fried fish. Ingredients: 2 Tbsp vegetable oil 1 onion, diced 1 Anaheim pepper, minced 1 habanero pepper, minced (optional) 3 cups water + extra as needed 1/2 cup dried black eyed peas, soaked overnight 1 1/2 cups rice 1 tsp salt 1/2 tsp pepper 2 Tbsp fresh parsley Method: 1. In a large pot, add oil and fry onion, Anaheim pepper, and habanero pepper (if using) until golden, about 15 minutes. Add the black eyed peas, stir and sauté for about 5 minutes. 2.
