Gradually the salt leaks into the water and clouds it. A change of water, then more salt comes out. Several more water changes. A couple of days go by. The cod becomes soft. Mild. Tender. Italians know: these steps cannot be skipped or the meal will be ruined. I find myself sifting around for meaning this year. This week we dove into a summery garden spread from Oman. Kofta are grilled hand-formed sausages enjoyed in Oman and neighboring countries. In fact, versions of kofta are enjoyed as far east as India (although these are typically served in meatball form). These Omani kofta sizzle with earthy cumin, warm flutterings of cinnamon, and are rounded out by coriander seed, fresh parsley and cilantro. The sauce – entirely vegan, by the way – is loaded up with fresh zucchini, garlic, parlsey and such a little sprinkle of mint, noone will know what your secret ingredient is. You can make it as spicy as you’d like with red pepper flakes (or go wild with cayenne, if you must). P.S. In Namibia, you can find a lot of these boulders, literally. Strangely out of proportion, these massive stones perch atop bald, widswept vistas. I like to think of these formiddable boulders as mangoes. Yes, mangoes. Something that, if given enough time, will soften and sweeten and delight you. Why can’t all problems be this way? Today’s recipe combines three beloved Namibian ingredients: mangoes, ginger, chili pepper flakes. The resulting chutney tastes great with meats, veggies, breads… you name it. Welcome to golden, fire-breathing sunshine. This is piri piri, a famous hot sauce in Africa which has hundreds (thousands!) of variations. Today’s rendition comes from Mozambique, where bright lemon juice meets smooth olive oil, tiny hot peppers, and a healthy scoop of red pepper flakes. Piri Piri has her roots in Portuguese culture, whose influence is still felt today in Mozambique. Keep in mind that you can make piri piri by mincing a mountain of hot peppers, if you’re brave. In that case you might not even need the red pepper flakes. It’s all about what you feel like. The more peppers, the thicker the sauce, which can be nice (and is, in many ways, more traditional). Makes 1 giant bowl. Vinegar lovers unite! With very little effort you can have this Salvadoran slaw at your next barbecue or gathering. To be authentic, serve slightly “pickled” – about 1-3 days after making it. This should be vinegary and with the slightest hint of heat. Serve with pupusas. Ingredients: 1 cabbage, cored and sliced thinly 1/2 red onion, sliced thinly 2 carrots, grated 1 tsp dried oregano 1/2 tsp red pepper flakes 1/4 cup white wine vinegar 1/8 cup olive oil salt and pepper, to taste (I put in 2/3 tsp salt) Method: Time to get out all your aggression on some red onion, cabbage, and carrot. Chop, chop, chop like there’s no tomorrow. Well really… slice thinly. Chopping is a bit too coarse for this recipe. When you’re done, mix the vinegar with olive oil, red pepper flakes and oregano. Serves 4-6 as a condiment This side dish from north china is crispy, spicy and tart. A great condiment for heavy meat dishes. Ingredients: 1 Asian or English cucumber, sliced on a bias 2 tablespoons sesame oil 1 1/2 tsp ginger, minced 1 1/2 tsp garlic, minced 1 chili pepper, crushed 3 mushrooms, sliced 2 Tbsp rice vinegar 2 Tbsp water 2 tsp brown sugar Method: Heat sesame oil over medium heat. The smell is wonderful and nutty. Add garlic… And ginger.. As soon as it starts to smell like heaven … Add mushrooms and chili pepper Cook until mushrooms are soft. Then add vinegar and sugar.
