Argentine Beef Stew in a Pumpkin | Carbonada en Zapallo

In 2011 a young Argentine man went viral in a 6-second video when he laughed about the cost of a burger at a soccer stadium. His exact words were: Con quince peso me hago alto guiso.pum For 15 pesos I could make quite the stew. To put this young man’s remarks in perspective, 15 Argentine pesos is just under $2 USD. It seems as though, relatively speaking, overpriced stadium food is a shared phenomenon – as common as rainy days and sunny dispositions. What is remarkable – and what made the young man’s comment go viral – is the assumption that good, homemade stew can be made for the cost of an overpriced burger. I looked into his logic: here in the USA an overpriced stadium burger in Silicon Valley goes for $12. Surely, I could make a soup for less than $12, even shopping at costly American grocery stores. Harvest Stew | Dimlama

If it were up to me, every gardener would know about Dimlama, the Uzbek one-pot answer to harvest-time (no canning required). While every Uzbek family makes it a little differently, potatoes, carrots, peppers, and tomatoes are standard fare, as is a hearty sprinkling of whole cumin seeds. The key to dimlama rests in the layering. First of all, lamb is browned, then onions are added in the mix. One they submit to browning, the remaining vegetables are layered (and, once they’re added, you never stir the pot!). The final layer is always cabbage, which helps seal in the moisture. When the vegetables release their juices, they drip down to the bottom of the pan and deglaze all those nummy browned bits. The result? A luscious brown gravy worthy of being sopped up by a nice piece of Central Asian Yogurt Naan. Rosemary & Lemon Harissa Kebabs

Summer still catwalks through the August air, unabashed and sizzling. There’s still time to grill, still time to sit out under the stars without a coat, or even a hoodie. There’s time to wear out those flipflops and kick back in sunglasses. And there’s still time to try Uganda’s kebabs, adapted  from Marcus Samuelsson’s beautiful cookbook Discovery Of A Continent – Foods, Flavors, And Inspirations From Africa.  The flavors are intense. Bright lemon juice starts of the explosion. A long marinade brings out bright sparks from the citrus. Then there’s a needling burn from the Harissa, a traditional spice often found in North African cooking. How much heat is there? As much as you can handle. Or as little as you’d like. Tip: You find Harissa mix at Whole Foods in the spice aisle (to be combined with water, olive oil, and crushed garlic), or you can buy a canned paste at a Middle Eastern market. Turkish tabbouleh | Kisir

What happens when you eat a lot of international food, but still get in a rut? Is it like when you live by the sea but get tired of looking at the lapping waves (is that even possible?). It’s so easy (and delicious), to return to old favorites like stuffed grape leaves, hummus and tabbouleh, but sometimes a little shakedown is in order. We’re big tabbouleh eaters in this house, so when I found out there’s a Turkish version of this popular bulgur salad, you can bet I jumped on board. This guy knows what I’m talking about… He’s been waiting for a bite for nearly three centuries. What makes kisir different from mainstream Tabbouleh is the addition of two ingredients: tomato paste and pepper paste. These stain the bulgur grains orange-red, and gives the finished dish a rich, earthy flavor. If you use hot pepper paste, the kisir will also go down with a lovely burn. Paraguayan Cheesy Cornbread | Sopa Paraguaya

Rumor has it, no meal is complete in Paraguay without a slice of warm, cheesy cornbread. While sopa means soup in Spanish, this is definitely bread and… traditionally, all mixed up with a happy bundle of homemade cheese. One of our readers – Emily – says everyone in Paraguay makes their own cheese so that this would be no big deal to a local. I read up on the origins of this bread… there are two main versions. In the first version, Don Carlos ( President of Paraguay from 1842-62) requested his favorite white soup for dinner – one made with cheese, egg, corn flour, and loads of milk. One day the chef put too much corn flour in the soup and decided to bake it up as bread in cast iron. The new dish became a hit and Don Carlos dubbed it Sopa Paraguaya. Pakistani Mixed Bean Salad

Next time you go to a potluck,  spice up everyone’s life with pakistani mixed bean salad. Each bite has bits of chickpea, northern white beans, tomato, onion, and peppers. The salad can be spicy or mild, tart or savory. It all depends on how you mix it. Either way, it’s fresh, healthy, and – thanks to being seasoned with lemon juice, cilantro, and garam masala –  just on the other side of unusual. Be sure to make this salad at least a few hours before you need it, to give time for the flavors to meld. Overnight is best. Recipe adapted from Laura Kelley at Silk Road Gourmet. Logistically speaking, peppers make for really great dinners. They’re healthy. They’re big on sweet, juicy flavor. The don’t go bad quickly. And they go with nearly anything. Roasted Pepper & Eggplant Salad

While I’ve always loved a good ratatouille, there’s something so … soft about it. While that’s fine for a cloudy sort of day, on bright, cheery days, I’m in the mood for definition. Clear edges. Decisiveness. Which brings us to today’s roasted salad, from the Macedonian Global Table. She’s all of those things while still being easy-breezy. The reason she’s so defined? The eggplant and peppers are pre-cut and roasted, which gives good browning and clean edges. Once tossed with fresh tomatoes and a sprinkling of lemon juice, this salad just begs to be eaten with crusty bread and a glass of wine (Macedonia has long produced good wines and CNN even called her the new Napa Valley in 2010). Char-grilled Red Pepper Dip | Muhammara

Makes 3 cups If you’re wilting and melting and generally crying for a reprieve from the heat, try Muhummara. This Middle Eastern roasted pepper dip takes the heat out of summer in the most fingerlicking way. The walnuts add body, but you don’t taste them. The pomegranate syrup gives a slightly tart tang and the cumin gives earthy warmth, but the ingredients are so balanced and subtle you’ll be seduced before you know it – and you won’t exactly know why. Just like falling in love with the most wonderful person you know. NOTE: Some like to add hot paprika or cayenne to this recipe. I liked the mellow sweetness without the spice, but feel free to punch it up a notch.
