Gingered Pineapple Ice Cream Sundae with Toasted Coconut

Let’s travel to Sub-Saharan Africa, where the flavors of the tropics make an ordinary ice cream sundae outstanding. Start by harvesting real vanilla beans from Madagascar to make the ice cream. Then head to Nigeria to pluck a heavy, sweet pineapple and a knob of ginger root. Nigeria is the world’s 8th largest producer of pineapple and the 4th largest producer of ginger.* Chunk up the golden fruit, then cook it with brown sugar and a whisper of the freshly grated ginger. Ten minutes on a flame will release the pineapple juices into the brown sugar, making a sticky, caramel-like sauce. Venezuelan Fruit Punch | Tizana

Crack open just about any Venezuelan fridge and you just might find a pitcher of tizana. Tizana is as much a drink as it is a fruit salad. The fruity concoction keeps for nearly a week, which makes it perfect for impromptu scooping. Though perhaps not traditional, I’m guilty of digging into the pitcher at breakfast time, dessert time, and, of course, at midnight. I can see how having tizana in the fridge would be a great way to get my daily allotment of fruit, especially when in a hurry.   So how is it made? For starters, you’ll need about… an entire orchard. Chopped. The kinds of fruit varies, but most recipes seemed to include one or more kinds of melon, pineapple, grapes, bananas, and apples. We may be in the heart of autumn here in Tulsa, Oklahoma, but no celebration of Rwanda is complete without a sliver of tropical fruit. This is the most popular way to end in a meal in Rwanda. Varieties include mango, pineapple, papaya, passion fruit, banana, and even buttery avocado: Although Mukamana says she and her husband cannot afford to purchase all the fruits needed to make a salad every day, they buy enough produce to make sure everyone at home eats a banana, an orange, or a piece of pineapple after every meal. Pineapple Horchata

This summer I’ve seen almost everything. Laughter in sad moments. Tears in happy moments. Life is a bumble-all-over-the place, as it should be when temperatures screech up into the 100’s. What I haven’t seen? Purple-feathered dancing ladies. This Pineapple Horchata is certainly the closest I’ll get to this sort of carnival fun. And every summer should have a little carnival fun, don’t you think? The recipe is a cooked horchata (homemade rice drink), different from the amazing no-cook Strawberry Almond Horchata we made for our Mexican Global Table. In this drink, the Pineapple skin and core simmers with the rice and water to extract maximum flavor. Then I added extra pieces of pineapple goodness to amp up the flavor. Pineapple Papaya Coco Sipper

It took Micronesia to get me excited about a smoothie. Don’t get me wrong – I love smoothies. After a while, though, they all taste the same. Until now. This smoothie blushes, straight from the easy, breezy islands. Why? Because out of the soft, sweet flavor of papaya and pineapple comes the daring zip of fresh lime juice. Adding lime juice to a smoothie may sound strange, but Micronesians know – this is like adding a hint of key lime pie to your drink. A bit of soprano to your alto. A bit of shine to your sun. And then there’s the fact that it’s mixed with coconut water. Healthy, healthy, healthy. So come on, let’s take off our shoes, slide our feet in the sand, and sip a smoothie til we blush. Serves 4 In the Ivory Coast, the people enjoy juicy, fresh fruit after their meals (if they eat dessert at all). Sweet mango and pineapple are common choices. Clearly, people of my own heart! Ingredients: 1 mango, cubed 1/2 a pineapple, cubed (or 1 20 ounce can of cubed pineapple) Method: First, slice up the mango. I’m going to show you how to cut a mango, step by step. There is a pit in the center, so cut with the flat side, being careful to stabilize the mango and not cut your fingers. Here’s the second side. Note my bizarroid finger stance. Iced Hibiscus Drink with Fresh Pineapple | Bissap a la Bonne Dame

Makes 1.75 liters (plus the pineapple) Chilled hibiscus tea is light and refreshing. The natural floral tang is a wonderful counterpart to sweet pineapple chunks. Kids will love fishing out the fruit in this totally and wonderfully decaffeinated iced tea. VARIATION: Some recipes call for equal parts lemonade to hibiscus tea. We tried this “pink lemonade” and loved it! Ingredients: small handful hibiscus flowers (or 4 teabags) 6 cups boiling water 4 cups ice 1 pineapple, cubed Method: 1. Pour boiling water over hibiscus flowers or teabags. Let steep about 30 minutes. Hibiscus puts on a wonderful show as the purplish dried leaves turn the water vivid red. Strain into ice to speed up cooling. Trust me, you won’t want to wait any longer than you have to! Serve chilled with chunks of pineapple. I made my chunks large. I couldn’t help it. Aussie Burger

Serves 8 We had great fun with the Aussie Burger at our barbecue. Follow my tips to help you if you are expecting a big group of people. The pickled beetroot is a lot like pickle, so don’t be shy! Ingredients: 8 hamburger buns 8 beef patties (or turkey) Toppings (all to taste): cooked bacon sliced cheddar cheese red onion, sliced thin into rings tomato, sliced thin pickled beetroot (beet), sliced thin lettuce pineapple rings 8 fried eggs, sunny side up Method: 1. Grill beef patties on a hot grill until done to your preference. A minute or two before taking the meat off of the grill, top burgers with  bacon and cheese. Toast buns on the grill. 2. Assemble burger in the order given, starting with bacon and ending with eggs. Enjoy! TIPS: How to make fried eggs for a crowd Oil a sheet pan or cookie sheet. Kangaroo Bites with Mango and Pineapple

Serves 10 The longer kangaroo ages, the stronger the flavor. If you like less gamey meat, purchase frozen kangaroo. To keep the meat moist and tender, marinate overnight and don’t cook too long. This recipe produced meat that tasted a lot like steak (to me). Ingredients: 2.5 pounds kangaroo loin, cut into 1″ cubes skewers – about 20 1 large mango 1/2 pineapple cubed or pineapple tidbits Mango marinade: 1/2 cup whole milk yogurt 1 cup mango juice 2 garlic cloves, crushed 1 tsp salt 1/2 tsp black pepper Pineapple marinade: 1/2 cup whole milk yogurt 1 cup pineapple juice 2 garlic cloves, crushed 1 tsp salt 1/2 tsp black pepper Method: 1. Divide kangaroo between 2 containers. I made more mango than pineapple, but you can do whatever works for your family. 2. Make the two marinades. Add one marinade to each container. Stir to combine. Tropical Curried Chicken Salad on Baguette

Serves: 4 This chicken salad is incredible. The intense curry melds with the grilled chicken, while sweet bursts of pineapple and raisin leave you begging for more. For the best flavor, serve on a rustic baguette brushed with olive oil and toasted on the grill. YUM! Ingredients: 3 cups of grilled boneless chicken breasts, shredded (about 4 chicken breasts. Grilling the chicken just adds more flavor.) 1/2 cup raisins 16 oz pineapple tidbits 1/2 cup mayonnaise 3 Tbsp mango chutney 1 Tbsp curry powder 2 lemons, juiced salt pepper 1 head red boston lettuce 1-2 rustic baguette – depending on your appetite! (a rustic baguette is wider than a traditional baguette – holds more filling) Method: 1. In a large bowl, combine chicken with raisins and pineapple. 2. In a small bowl, stir together mayonnaise, chutney, curry, and lemon juice. 3. Pour over chicken and stir to combine.
