Māori Fish Salad & the legend of New Zealand | Ika Mata

One of the largest fish ever caught is the stuff of Māori legend. Today, this fish is known as New Zealand’s north island. The fisherman able to haul in such a prize?  Māui, the mythological hero. As the story goes, Māui paddled his canoe far out into the ocean in search of a big catch. He used his ancestor’s jawbone as a fish hook, coating it with blood from his nose. Down, down, down went the hook, into the depths of the deep blue waters.  After some time, the slack line tightened. It took all Māui’s strength to reel in the heavy fish. Stumbling under the effort,  Māui had to brace himself on the edge of his canoe as he pulled the line up, up, up. When the fish finally rose out of the water, Māui gasped. It was the largest sea creature he’d ever seen, big enough to blot out the horizon, with shiny green scales. Warm Hummus with Mushrooms & Caramelized Onion

Israeli folks know – loaded hummus is everything. An entire meal can be made from a cozy bowl of warm chickpea puree when loaded with caramelized onion and cumin-laced mushrooms. A raggedy pile of pita bread is the exclamation point on this edible yes. To get your fix in Israel you’d head down to a hummusia restaurant. There you can order up warm or cold hummus with your favorite filling – anything from cooked cauliflower, to ground beef or lamb. You can even find the classic tomato and poached egg dish, shakshouka, in the middle of hummus! But you don’t need to travel to Israel to bring these amazing flavors into your kitchen. Today’s hot mushroom filling is just the warmth a 25F degree freeze calls for, and is a welcome break from the heavy meals (and mountains of dishes!) of the holiday season. Labneh

For much of December I found myself being entertained rather than entertaining. It was a nice, relaxing way to spend two weeks but I find myself – even now that we’re well into the New Year – looking for a way to make someone else feel special and cared for.  After some recipe rummaging, I had my answer: Labneh. Soup might comfort, jelly might wibble-wobble, but Labneh delights. This Middle Eastern thickened yogurt appetizer seems oh so fancy but is really a set-it-and-forget-it kind of affair – exactly what I need to pay it forward during a busy time of year. It’s mild and tangy – but if you use full fat yogurt, very creamy and indulgent in a… healthy way (it’s made with yogurt, after all). Does your mind ever wander when you cook? Mine does. Feast of the 7 Fishes | Linguine with Baccalà Sauce

A lump of salt cod (baccalà) just might be everything. To use the tough, leathery fillet – more hide than flesh – the cod must first be soaked in fresh clean water. Gradually the salt leaks into the water and clouds it. A change of water, then more salt comes out. Several more water changes. A couple of days go by. The cod becomes soft. Mild. Tender. Italians know: these steps cannot be skipped or the meal will be ruined. I find myself sifting around for meaning this year. Did you notice that Christmas came with Halloween and Thanksgiving was just a speed bump on the road to black Friday (which actually began before the dishes were done or the meal had settled)?  With all the fuss happening earlier and earlier in the year, the excitement of Christmas feels dilute. Fattoush, a Levantene Salad for Kahlil Gibran

“The astronomer may speak to you of his understanding of space, but he cannot give you his understanding … the vision of one man lends not its wings to another man.” – Kahlil Gibran The best teachers’ lessons stay relevant long after their deaths. Such is the case with the Lebanese poet Kahlil Gibran (1883-1931). Often, when I’m at a loss for what to do, I’ll pick up his book The Prophet. Despite living a nearly hundred years ago, his wisdom still disarms me. That’s just one of his many beautiful lines. I love the idea that the fresh produce we eat not only becomes a part of us, but improves us – brings us to life. The work of modern nutritionists back up Gibran – this is not just poetry, it’s science. So this week I’m making him a salad. Zambia’s Spiced Tilapia Stew

  “Leading a race does not mean that you will win it.” Zambian Proverb It’s a chilly, wintery, blustery sort of day. Even the trees shudder, their leaves falling down in chatterings. Thankfully, Zambia makes quick work of dissipating the cold, with this Spiced Tilapia Stew.  Each bite pops with fresh lime juice, tomatoes, and Napa cabbage. A dusting of cumin, mustard seeds, fresh ginger and garlic give the broth depth. But it’s the Thai Bird chilies that’ll clear your sinuses.  Even just one in the pot promises a mellow tingle in every spoonful.   This is another kind of DIY soup, because of the garnishes. Children will especially enjoy squeezing lime juice on their soup and sprinkling their bowl with parsley.  Adults will enjoy seeing how many Thai Bird chili peppers they can handle. My husband added an entire sliced chili to his bowl; though he was sniffling and coughing from the heat, he then proceeded to add more. Turkish tabbouleh | Kisir

What happens when you eat a lot of international food, but still get in a rut? Is it like when you live by the sea but get tired of looking at the lapping waves (is that even possible?). It’s so easy (and delicious), to return to old favorites like stuffed grape leaves, hummus and tabbouleh, but sometimes a little shakedown is in order. We’re big tabbouleh eaters in this house, so when I found out there’s a Turkish version of this popular bulgur salad, you can bet I jumped on board. This guy knows what I’m talking about… He’s been waiting for a bite for nearly three centuries. What makes kisir different from mainstream Tabbouleh is the addition of two ingredients: tomato paste and pepper paste. These stain the bulgur grains orange-red, and gives the finished dish a rich, earthy flavor. If you use hot pepper paste, the kisir will also go down with a lovely burn. Turkish Flatbread “Pizza” with Spiced Lamb | Lahmacun

Lahmacun is Turkey’s answer to pizza. The flavors are rich and deep, like an old love story. And, like any good love story, each bite makes my knees sink a little closer to the floor. Why? Because of the layers of flavor. This is no “jarred sauce” affair. This is no mess of waxy cheese. Lahmacun is pure, unadulterated ingredients – as fresh and intense as mother nature grew them. The version we made today includes lamb, olive oil, tomatoes, garlic, tomato paste, paprika, mint and parsley. There’s even a gated onion to provide a sweet background note. The flavors come together to create an unbelievable explosion of flavor. Once baked, Lahmacun is a DIY dream. Diners choose their own toppings and pile them on.  In Turkey, you can find everything from pickles and lettuce, to onions and lemon juice. Trini Stew Chicken

Many a good thing requires we throw our all into it. Swimming, for example. If we don’t swim with our all, well… we sink. Fast. When it comes to food from Trinidad and Tobago, adding a ton of flavor goes a long way to making unctuous and irresistible stew chicken. And when I say a “ton of flavor”, I mean, we’re going to throw our all into it.  Just about everything your market (and your herb planter) has to offer goes into stew chicken. The basis of Stew Chicken is Green Seasoning. We made green seasoning back when we cooked Guyana. There are hundreds (thousands!) of recipes for green seasoning, so I thought it’d be fun to make up a second batch with this recipe. I used a different mix of herbs and aromatics, like ginger, garlic, tomato, green onion, and thyme. These flavors speak to Trinidad and Tobago’s preferences… and go wonderfully with this chicken. For this recipe, I used four whole chicken legs, which weighed about 2 lbs total. This sauce is enough to serve with 4 lbs …

South Sudanese Tomato Salad

The South Sudanese love a good, chopped tomato salad on the side of their meals. Often, it’s no more than tomato, onion, and hot, green chili peppers… perhaps a spot of parsley… But other times, a bit of peanut butter and lime juice makes for a grand dressing… and tastes just like home, if you happen to be from South Sudan. When I was deciding which of the two recipes to try, the choice was clear: if peanut butter is involved, the answer is yes. Most definitely, yes. You can make this vegan recipe as spicy as you’d like by adding more (or less) chili peppers. I thought two Thai birds made a nice, mild/medium heat (bordering on hot if someone bit directly into a piece of pepper). For little ones, you can always leave the chili peppers out. In the end, the lime juice makes the salad tangy and bright, while the peanuts give it that African flair. I call a recipe like this, all kinds of wonderful. And so does Ava. Inspired by this …

Paella

Making Paella is quite the trick. Making authentic paella is even harder. My mission this week was to make a simple, yet flavorful paella for our Spanish Global Table. Something easy enough for a Monday, but special enough for a Friday. One that would be rather… well… business in front, party in the back. Or maybe not. Friends, I did my research. In fact, I spent a lot of time reading mediocre online reviews of what should have been amazing paella recipes. These recipes were crafted by chefs and superstars yet, without fail, half of the commenters complained of the paellas being bland, while the other half loved the bold flavors. I was mystified, until I happened upon this comment: “If you’re going to use saffron, then use it.” The recipe had, like so many, called for a “pinch” of saffron. After speaking with friends, we agreed that a “pinch” of saffron might lead someone to add three meager strands of saffron.. whereas another might grab a hefty pinch more equitable to a teaspoon (think of Emeril Lagasse’s “BAM” style). …

Bean n’ Barley Soup | Ričet

Slovenia is known for her soups – each bite captures the taste of the earth and sky, rolling hills and grand mountains. They are the answer to frosted windows, the worst sort of bone-chill, and that scratchy feeling in the back of the throat. Slovenian soup is the sunshine to your snowy day. Today, in particular, we explore Ričet, one of the more beloved soups found throughout Slovenia. She’s made with barley, a soft, earthy grain that reminds me faintly of pasta, but chewier and more wholesome. When paired with beans, carrots, potatoes, onion, and garlic, an entire meal is made. A slice of rye bread on the side would be grand. While Ričet could certainly be made vegan, traditional Slovenian soups would include sausage or, as I have done, bacon. This adds another layer of complexity, making it all the more likely that I’ll be reaching for a bowl of Ričet when the winter snows float down.
