Malaysian Herbed Rice Salad | Nasi Ulam

Do packaged herbs ever go on strike at the back of your fridge? Now, thanks to Malaysian Herbed Rice Salad, bundles of herbs can finally go to work in a dish that everyone will love. When herbs go on strike I wonder how many partially used packages of fresh herbs lay wilting at the back of fridges across America. I’ve certainly been there. Even though I “store” my herbs in the garden, disgruntled leaves occasionally congregate behind the eggs and mustard (the few remaining upright stems looking like picket signs). The problem? Outside of a putting basil in pesto or parsley in tabbouleh, it’s hard to use most fresh herbs up. To give our herbs a chance, we need to rethink how we use them. A pinch here or there doesn’t really do the trick when it comes to adding flavor or using them up. Before I do, call your friends and family because today’s recipe is a Vietnamese food party. The star? The DIY Fresh Spring Roll. Here’s how it works: Every guest gets to pick and choose their fillings, from cucumber and sprouts, to vibrant mint, thai basil, and cilantro. The best part? Everyone gets to cook their meat at the table in a vinegar and lemongrass broth. You can do this in a crock pot, a fondue pot, or, if you don’t have any of these, simply cook the beef in the kitchen right before dinner. Turkish tabbouleh | Kisir

What happens when you eat a lot of international food, but still get in a rut? Is it like when you live by the sea but get tired of looking at the lapping waves (is that even possible?). It’s so easy (and delicious), to return to old favorites like stuffed grape leaves, hummus and tabbouleh, but sometimes a little shakedown is in order. We’re big tabbouleh eaters in this house, so when I found out there’s a Turkish version of this popular bulgur salad, you can bet I jumped on board. This guy knows what I’m talking about… He’s been waiting for a bite for nearly three centuries. What makes kisir different from mainstream Tabbouleh is the addition of two ingredients: tomato paste and pepper paste. These stain the bulgur grains orange-red, and gives the finished dish a rich, earthy flavor. If you use hot pepper paste, the kisir will also go down with a lovely burn. Turkish Flatbread “Pizza” with Spiced Lamb | Lahmacun

Lahmacun is Turkey’s answer to pizza. The flavors are rich and deep, like an old love story. And, like any good love story, each bite makes my knees sink a little closer to the floor. Why? Because of the layers of flavor. This is no “jarred sauce” affair. This is no mess of waxy cheese. Lahmacun is pure, unadulterated ingredients – as fresh and intense as mother nature grew them. Stuffed Grape Leaves | Warak Enab

Time and time again I’ve failed to entice Ava with stuffed grape leaves. I tried back when we cooked Armenia, when the grape leaves were laced with an intoxicating blend of cinnamon, allspice and currants and she was an innocent, unquestioning 8-month old. Let’s just say she wasn’t ready – neither for the somewhat chewy outer “skin,” nor the mystery of what was inside. Little kids like to know what mom is feeding them. Not one to give up easily, I spent the last 3 years casually pushing them onto her plate whenever we stopped by the Whole Foods salad bar for a quick meal. Grilled Kofta with Zucchini Sauce

This week we dove into a summery garden spread from Oman. Kofta are grilled hand-formed sausages enjoyed in Oman and neighboring countries. In fact, versions of kofta are enjoyed as far east as India (although these are typically served in meatball form). These Omani kofta sizzle with earthy cumin, warm flutterings of cinnamon, and are rounded out by coriander seed, fresh parsley and cilantro. The sauce – entirely vegan, by the way – is loaded up with fresh zucchini, garlic, parlsey and such a little sprinkle of mint, noone will know what your secret ingredient is. You can make it as spicy as you’d like with red pepper flakes (or go wild with cayenne, if you must). P.S. This sauce would be great for a variation on our vegetarian Shakshouka that we made back with Israel. Shakshouka is also enjoyed in Oman. Minty Garlicky Yogurt Sauce

Minty Garlicky Yogurt is an oddball recipe. An oxymoron. Personally I love loads of garlic. I don’t mind dragon breath. I don’t mind scaring away the cat. So, I suppose Minty Garlicky yogurt sauce is good for people with garlic regret. As you eat it, the garlic infuses your breath but then – woops – the mint comes along for the ride, sweetening things up in the background. Of course, you’ll probably still need to brush your teeth after eating this dip. You’ll find similar recipes all over north Africa, central Asia and beyond. The nomadic peoples of Kyrgyzstan have no shortage of dairy, thanks to their herding lifestyle. To keep things interesting they blend yogurt with either mint or cilantro and plenty of fresh garlic. The secret is to let this mixture sit overnight or the garlic will be much too harsh. Lemon-Limeade with fresh mint | Israeli Juice

Dilutes up to 1 gallon Have you ever sipped on the sun? First you have to chill it, so it doesn’t taste as much like a “ball of fire.”  The compression of all the heat particles actually makes it sour. Like lemon sunshine. Then you squeeze it and sweeten it. I’ve read somewhere that limes are actually cooled moonbeams. They go well with the sunshine, especially with a handful of mint. That’s what’s happening with Israeli juice – summer sunshine in a glass, with a hint of funky nighttime. Ingredients 3/4 cup lemon juice (3 large lemons) 1/4 cup lime juice (1-2 limes) 1 cup (tart)- 1 1/2 cups (sweeter) sugar 1/4 cup water 3-5 sprigs of mint ice and water, as needed (for diluting) Method: Hello summer. Let me cover up my paper cuts, so we can become acquainted. First, squeeze enough lemons and limes to make 1 cup of strained juice. Do it while overlooking a sun-shiny, water-lapped town. Israeli Fruit Salad

Say “camel” and the first word that comes to mind is hump. Please tell me I’m not alone in this. I don’t even have to be in the desert – I could be standing in a pool with a large, cold drink in my hand – but just thinking about camels makes me incredibly thirsty. And jealous. A camel doesn’t need to hold their drink. They don’t even need to use their mouth to hydrate.  They just stand there, continually refreshed by their built-in portable hydration hump. Camel humps are huge (weighing up to 80 pounds) and can keep a camel hydrated for up to seven months in the winter. Seven months without a sip of water! Sigh. Now. Don’t become discouraged. Even though we’ll still need to pick up our glasses to drink from them, there is another clever way to hydrate. Tabbouleh

Serves 4 If you’re feeling a bit cloudy, a bit rainy, a bit under the weather – let the bright flavor of lemons and parsley uplift you. Tabbouleh is a quintessential Middle Eastern salad recipe. No mezze is complete without it. While most authentic recipes include more parsley than bulgur, you can play around until you have the quantity you like best. NOTE: All parsley, green onion, and mint quantities came out rather heaping (see photos) Ingredients: 1/2 cup bulgur (I used coarse, but medium or fine is traditional) 1/2 cup fresh lemon juice (measured, then strained) 1 bunch parsley, minced (1 heaping cup) 2 tomatoes, diced 3 green onions, minced 1/4 heaping cup minced mint 1/3 cup olive oil salt Method: Rinse bulgur in a little water. Then add to a bowl and pour on the strained lemon juice. Set aside while you prepare the other ingredients. The bulgur will absorb the lemon juice as you work.
