Pineapple Papaya Coco Sipper

It took Micronesia to get me excited about a smoothie. Don’t get me wrong – I love smoothies. After a while, though, they all taste the same. Until now. This smoothie blushes, straight from the easy, breezy islands. Why? Because out of the soft, sweet flavor of papaya and pineapple comes the daring zip of fresh lime juice. Adding lime juice to a smoothie may sound strange, but Micronesians know – this is like adding a hint of key lime pie to your drink. A bit of soprano to your alto. A bit of shine to your sun. And then there’s the fact that it’s mixed with coconut water. Healthy, healthy, healthy. So come on, let’s take off our shoes, slide our feet in the sand, and sip a smoothie til we blush. This recipe is inspired by the tropical fruits of Micronesia…but not any one particular recipe. Iranian Cucumber Salad

Serves 2-4 Would you like to create a mosaic in a bowl? Capture the beauty of Iran in a bite? This bright, crunchy, sour Iranian side dish is at once cooling and hydrating – perfect for these dog days of summer. Also, it tastes a heck of a lot like a quick pickle. If you add the big bits of coarse ground pepper, you’ll be bitten by a teasing taste of heat. Recipe adapted from The Silk Road Gourmet by Laura Kelley. Mojito

Makes 1 drink The bold flavor of mint, lime juice, and sugar come together in this classic Cuban drink. If you have time, a simple syrup made of water and sugar cooked together is another possibility for sweetening the drink. Ingredients: 1/8 cup superfine sugar a handful of fresh mint 1/2 lime, juiced 1 shot rum crushed ice Method: Gather your ingredients… Drop a healthy handful of fresh mint leaves into a glass. Add the sugar and mash it together with the mint. Renowned author Mark Bittman says that there should be enough mint pieces to chew on. Squeeze in the juice of a lime for that tangy wow-factor. Heart of Palm Salad

Serves 4 This beautiful arranged salad is perfect for a family-style dinner party. You could also make individual portions. However, if all this seems like too much muss and fuss, feel free to chop and toss, without taking time to do the careful arrangement. Everything will still taste wonderful. Promise. Ingredients: 1 head romaine, sliced 1 tomato, sliced into wedges 1 orange pepper, sliced thinly 1 jar heart of palm, each one sliced in half lenthwise 1/2-1 lime, juiced olive oil, to taste Method: Get yourself a beautiful platter. Pile it high with crunchy, crispy, lovely romaine. Add tomatoes in a circle, around the outside. Sprinkle the peppers over the top, towards the center. We’re making a masterpiece here. Slice up your heart of palm. Not your heart. Here’s what they look like… they come whole, as you see on the left. I sliced them lengthwise, as you see on the right. Mango Daiquiris

A puckering combination of tart and sweet, the frozen Daiquiri blends ripe fruit, rum, and fresh lime juice with a mountain of shaved ice. Spiked Coconut Water

Makes 1 drink Although I came up with this name, the drink idea came to me from Jimmy Buffett. He recommends this refreshing blend for the slightly tropical, headache free, sipping pleasure it provides. He probably doesn’t use coconut rum, but I like my drinks sweeter than stout, so I went for the Parrot’s Bay. Go with your instincts when making yours. Ingredients: 1 shot chilled coconut rum or plain, Caribbean rum 2 shots chilled coconut water (available at whole foods) 1/2 a lime, juiced crushed ice lime wedge for garnish Method: 1.
