Baba Ghanoush with Roasted Garlic

When I’m at parties I like to dip, dip, dip. You’ll recognize me immediately – I’m the one in the corner, filling up on dip before the meal ever comes. And if, for some reason, I’m not? Just know that’s where I really want to be. When it comes to dips, baba ganoush is everything I never thought it would be.  Roasted eggplant, far from bitter, transforms into a smoky and smooth treat , able to fill my belly in just the right sort of way – without that greasy, pop-out-my-bellybutton feeling some foods leave me with. In fact, baba ganoush strikes me as one of those diet foods that is actually as comforting and every bit as delicious as French fries. But I’m crazy like that. Lemon-Garlic Hummus

Makes 2+ cups You know how you think you know something…. Like the earth is round. Or flowers bloom. Or hummus goes into a bowl? … only to have your vision shattered? Your dreams crushed? Yeah. Turns out not everything is as it seems. The earth is not perfectly round. It’s a “bumpy spheroid” according to Scientific American. And flowers don’t always bloom. Especially when it’s over 100F for well over a month. My crispy garden is testament to that. And hummus doesn’t go in a bowl. It goes on a plate. I learned that from the Israelis. Tabbouleh

Serves 4 If you’re feeling a bit cloudy, a bit rainy, a bit under the weather – let the bright flavor of lemons and parsley uplift you. Tabbouleh is a quintessential Middle Eastern salad recipe. No mezze is complete without it. While most authentic recipes include more parsley than bulgur, you can play around until you have the quantity you like best. NOTE: All parsley, green onion, and mint quantities came out rather heaping (see photos) Ingredients: 1/2 cup bulgur (I used coarse, but medium or fine is traditional) 1/2 cup fresh lemon juice (measured, then strained) 1 bunch parsley, minced (1 heaping cup) 2 tomatoes, diced 3 green onions, minced 1/4 heaping cup minced mint 1/3 cup olive oil salt Method: Rinse bulgur in a little water. Then add to a bowl and pour on the strained lemon juice. Set aside while you prepare the other ingredients. The bulgur will absorb the lemon juice as you work. Makes 1 block of cheese Cheese lovers, come closer. I have a secret to tell you. I never thought I’d be able to do this. I thought it would be hard. I thought I’d just waste a bunch of milk. I didn’t. The truth is, the only thing standing between you and great cheese is a half gallon of milk, salt, and a little lemon juice. That’s pretty ridiculous. And empowering. Trust me. Tart Rhubarb Soup (chilled)

Serves 2-4 Friends, when rhubarb season calls, you must answer. This cold rhubarb soup from Iceland is like a big sip of sunshine. It tastes like lemonade. It tastes like rhubarb. It tastes like “good.” We only have a little more time in rhubarb land until next spring, so hop over to the grocery store and get some! Ingredients: 4 cups chopped rhubarb (cut into 1″ pieces) – about 1 bunch 2 cups water 3/4 cup sugar, more as needed 2 tsp lemon juice Method: Rhubarb, rhubarb, rhubarb. It makes me happy. Almost as happy as these pictures make me… just look at his mane. It’s enough to make any pony jealous Once you chop up the rhubarb, there’s almost nothing left to do. Grilled Greek-Style Lamb

Serves 4 When I started this Adventure I was seriously grill-challenged. Today, I am a new woman. I’ve learned how marinades can transform bland meat into craveable hunks of goodness, as with the intensely lemony Georgian Chicken recipe we made a few weeks ago. And now, today, I bring you Greek lamb… I would choose to eat these lamb chops over eating out any day of the week. The key is to slowly marinate the meat until it practically tingles from the inside out with garlic, lemon and a hit of rosemary. West-African Inspired Watermelon Lemonade

Makes 1.5 quarts Gulp, gulp, slurp. A quart and half of homemade Watermelon Lemonade lasts 13.3 minutes in this house. When served out of half a melon? It’s gone quicker than a cat’s meow. As the pitcher empties, our bellies swell – Mr. Picky’s most of all. He loves the stuff. He’s been known to drink an entire cup in one long draw, his eyes grinning over the rim. Today’s recipe is inspired by the flavors of Ghana, where heavy watermelons pile up in the markets all summer long. Garlic and Walnut Sauce | Garo

Makes 4 cups This bold tasting spread/sauce from Georgia will have your mouth asking “What is in this!”  I couldn’t decide what it reminded me of, which I find exciting (trying new flavors is the purpose of eating the world, A-Z!). The bold flavor of cilantro and walnut are the main body of flavor, with an earthy, almost bitter note from the spices. You can knock the bitter profile back a bit if you use less fenugreek seeds. Georgian Chicken

Serves 2-4 I’ll be honest. I don’t have great luck with grilled chicken. Usually it’s bland, overdone and, as much as I hate to admit it, I’m usually to blame. Naturally, I was delighted when I found this foolproof Georgian recipe in Laura Kelley’s The Silk Road Gourmet: Volume One: Western and Southern Asia – it’s a giant bright bite of lemony goodness. The crazy strong flavor comes from an extra long marination – 24 hours. If you’d rather a milder flavor, try just a few hours instead.
