Warm Hummus with Mushrooms & Caramelized Onion

Israeli folks know – loaded hummus is everything. An entire meal can be made from a cozy bowl of warm chickpea puree when loaded with caramelized onion and cumin-laced mushrooms. A raggedy pile of pita bread is the exclamation point on this edible yes. To get your fix in Israel you’d head down to a hummusia restaurant. There you can order up warm or cold hummus with your favorite filling – anything from cooked cauliflower, to ground beef or lamb. You can even find the classic tomato and poached egg dish, shakshouka, in the middle of hummus! But you don’t need to travel to Israel to bring these amazing flavors into your kitchen. Today’s hot mushroom filling is just the warmth a 25F degree freeze calls for, and is a welcome break from the heavy meals (and mountains of dishes!) of the holiday season. Real Talk: I need a cooking win. I’m 100% in the middle of a scary cooking carnival … in the last month of 2015 I made two bad lasagnas (in which the lasagna noodles actually dissolved), one excellent lasagna (finally!), …

Turkish Flatbread “Pizza” with Spiced Lamb | Lahmacun

Lahmacun is Turkey’s answer to pizza. The flavors are rich and deep, like an old love story. And, like any good love story, each bite makes my knees sink a little closer to the floor. Why? Because of the layers of flavor. This is no “jarred sauce” affair. This is no mess of waxy cheese. Lahmacun is pure, unadulterated ingredients – as fresh and intense as mother nature grew them. The version we made today includes lamb, olive oil, tomatoes, garlic, tomato paste, paprika, mint and parsley. There’s even a gated onion to provide a sweet background note. The flavors come together to create an unbelievable explosion of flavor. Once baked, Lahmacun is a DIY dream. Diners choose their own toppings and pile them on.  In Turkey, you can find everything from pickles and lettuce, to onions and lemon juice. It’s an awesome way to get kids involved and to work through dinner party doldrums. Ava had great fun adding onion, parsley and lemon juice to hers… plus a few sprinklings of sumac (a spice with a …

Burmese Coconut Chicken Noodle Soup | ohn-no-khao-swe

Oh, yes. Even on the hottest day in steamy, tropical Myanmar, you’ll find gaping bowls heaped with noodles, chicken, and silky coconut curry. It doesn’t matter if you’re sick. It doesn’t matter if your skin is tacky with salty sweat.  “Ohn no khao swe” is what’s for dinner. . You can call it Coconut Chicken Noodle Soup, if you’d like. To a local, this curry topped with egg and a garden of garnishes is breakfast, lunch, or dinner. It’s as easy to find in rambling shacks as it is in roadside stalls. I can’t get over how easy it is to make. Chop a few things, toss them in a pot and simmer. After a happy mingle serve with noodles and enough garnishes to bring out even the Grinch’s smile, not to mention little Miss Ava (have I told you lately how much kids like to help build their own meals?). . The secret to making a great ohn-no-khao-swe is in the toppings. More specifically, in assembling your own bowl, just as you like it. If you do …

Kenyan Stewed Beef | Nyama

Serves 4 Hello, sky. Have you been outside lately? It’s amazing. The sky wants to swallow me up into a great big smile. Go ahead – check it out – take a look. See if it does the same thing to you, too. And the coolest part? That same sky you’re looking at – I’m looking at it, too. We’re all looking at it. Together. Over here, in Oklahoma-land, we’re tiptoeing into fall. I know because I recently felt the first chill of winter – the one that hits you upon walking outside in flip flops and a t-shirt. The chill that sends you straight back into the house for sneakers and a coat, even though you’re already ten minutes late. In this sudden shift, memories of Oklahoma’s outrageously scorching summer already seem vague and distant – replaced by fresh, cool air.  And here’s the deal: I can’t stop eating stews. Today’s meaty stewed goodness greets us all the way from Kenya. It’s all about hearty love and fall flavor. Or fall love and hearty flavor. Or …
