Ginger & Rocoto Ceviche

Last week I spoke with “Kelly,” a short, black-haired Peruvian restaurateur whose father had a thing for Western names (he also named one of her brother’s Kennedy – and, as she admitted with downcast eyes, another brother “Hitler”). If that wasn’t enough to blow my mind, she added in her thick, rolling accent that halibut ceviche is the “Dunkin’ Donuts” of Peru. I asked her twice to repeat herself. Each time her smile grew bigger and her words clearer. Ceviche is the Dunkin Donuts of Peru. Ceviche- Peru’s pride and joy – is light, fresh, and healthy, so I found the comparison strange. Unlike the doughnut, which takes a dip in a bubbling cauldron of oil, the seafood “cooks” in the acid of lime or lemon juice. Nothing could be cleaner. Each bite is bright, flavorful, and often spicy with the addition of the rocoto pepper (although any hot pepper can be used to taste) and a hit of fresh ginger. My pantry’s name is Patty.* She’s actually just a shelf in the laundry room, above the vacuum cleaner and mop, but I love her all the same. Vegan Spiced Yellow Split Peas | Dhal Baht

If you wake up in Nepal, chances are you’ll be eating Dhal Baht. In fact, you’ll probably also eat Dhal Bhat as the sun bobs below the horizon. Nothing wrong with eating the same dish twice in one day. There’s a beautiful simplicity in waking up and knowing that, as certain as the sun will circle the sky, there will be Dhal Bhat. Ah, yes. There’s something to be said for consistency. And for not having to make quite so many decisions during the day. I’m not sure what in my life is that certain. Perhaps my daily cups of tea. All day long I drink glass after glass of the stuff. This fancy name simply means lentils, split peas, or other pulses (dhal) with rice (baht), but each bite reveals so much more. Today let’s stove top travel to Nepal, sit in the afternoon sunshine, and make our own little mountain ranges, good enough to eat. Momos are carefully folded dumplings, each crease like a ridge in the most glorious of mountains, Mount Everest. (Did you know Nepal has 8/1o of the world’s tallest mountains?) Mango & Ginger Chutney

Sometimes life throws us some pretty major “boulders” – huge, overwhelming problems we can’t seem to solve, let alone nudge out of the way. In Namibia, you can find a lot of these boulders, literally. Strangely out of proportion, these massive stones perch atop bald, widswept vistas. I like to think of these formiddable boulders as mangoes. Yes, mangoes. Something that, if given enough time, will soften and sweeten and delight you. Why can’t all problems be this way? Today’s recipe combines three beloved Namibian ingredients: mangoes, ginger, chili pepper flakes. The resulting chutney tastes great with meats, veggies, breads… you name it. It’s quite sweet, vinegary, and mildly spicy. Burmese Coconut Chicken Noodle Soup | ohn-no-khao-swe

Oh, yes. Even on the hottest day in steamy, tropical Myanmar, you’ll find gaping bowls heaped with noodles, chicken, and silky coconut curry. It doesn’t matter if you’re sick. It doesn’t matter if your skin is tacky with salty sweat.  “Ohn no khao swe” is what’s for dinner. . You can call it Coconut Chicken Noodle Soup, if you’d like. To a local, this curry topped with egg and a garden of garnishes is breakfast, lunch, or dinner. It’s as easy to find in rambling shacks as it is in roadside stalls. I can’t get over how easy it is to make. Chop a few things, toss them in a pot and simmer. After a happy mingle serve with noodles and enough garnishes to bring out even the Grinch’s smile, not to mention little Miss Ava (have I told you lately how much kids like to help build their own meals?). . Burmese Ginger Salad | Gin Thoke

If we can’t open our hearts to the “weird” things in life, we’re not living fully. The girl who wears rain boots in the snow. The man that studies a bustling ant hill for an hour. Swahili Ginger n’ Milk Tea

Whether the sun is blistering or the snow is falling, Mozambique has the answer for you. Ginger – crazy ginger tea. The beauty of this drink is in the simplicity. There’s no long list of spices, as with Indian Chai (although, goodness do I love and adore a good cup of Chai). It’s purer than that. Every mug gently cradles steeped black tea and fresh grated ginger, topped off with creamy milk and sweet spoonfuls of sugar. It’s a little bit spicy and a whole lot of comfort. Served cold, this tea makes for an incredible poolside sipper. Served hot, this tea will warm your spirit as well as your fingers during a snowy sunset. If there is one recipe that reflects the Mauritian potluck of global flavors, this is it. Rougaille. Let’s take a walk through the flavors of this unusual sauce – I have a feeling you just might make friends. First, imagine a simple, homemade tomato sauce. The deep red goodness smells sweet and fresh. This sauce can be found in homes all across the world. Tomatoes, onion, garlic. Standard fare. Until you take a bite. I almost can’t believe how easy it is to chat with people from around the world now a days – to get to know each other – to learn from each other – to celebrate each other. Beef Rendang is an art. And I could eat it every single day of my life. While there are many ways to make this flavorful curry, there are two things for certain – the dish must be slow-cooked until the flavor absorbs completely into the meat, and – secondly – the curry must explode with flavor. In a good way. The flavor part is the easiest. In fact, there are so many amazing ingredients – galangal, ginger, lemongrass, kaffir lime leaves to name a few – that you can’t help but make an amazing curry just by throwing them in a pot together. Makes 1 quart Do you know a picky eater? Are you a picky eater? Even I have my moments… I’m here to warn you that kimchi is one of those dishes – a Mount Everest for some culinary Adventurers and a potential moon landing for our beloved but stubbornly picky eaters. Here’s why: Kimchi is fermented, pickled, fishy, spicy, and totally funky.  It can take months and months to make, fermented in large vats with such delicacies as raw oysters or fish chunks. Astonishingly, the end result shouldn’t be overly fishy but mildly sweet and sometimes spicy, although there’s a little residual zing from the fermenting.
