Cassava Pudding

I secretly love it when a word like “pudding” takes on a whole new meaning than “the sweet chocolate goop  found in the refrigerator cases of American supermarkets” (although I do enjoy that sort of pudding as much as the next sugar crazed mom). I love surprises like this because they teach me not to take so much for granted. They remind me that there are people all over this beautiful world who have different ways of doing things. And, in case you didn’t get the memo, different is a beautiful thing. Imagine how boring our world would be if we all looked the same, talked the same, and… ate the very same pudding? In Solomon Islands and throughout Oceania, pudding is any goupy mixture that’s been grated and baked. Or sometimes steamed. Confused? Let’s get specific. Yucca Fries

Serves 2-4 I never thought the day would come. I never thought I would conquer the mighty yucca. This tuber has made sweat, cry, and is quite possibly be the reason why I blacked out and went crashing to the floor one night after eating way too many Bâton de Manioc – out cold for a good thirty seconds. To be fair, the next day the doctor blamed dehydration. Regardless, given my terrible past with this tuber, I have a deep need to remedy my track record, this time with yucca fries. Who can mess up fried yucca, right? As far as fried food goes, it’s healthier than a potato but gives you the same indulgent fix. So, dip it in the oil until golden, sprinkle some salt and satisfy those munchies! Ingredients: 1-2 yucca vegetable oil, for frying salt, to taste Method: Make sure you’re very hungry. Oil Down with Yucca

Serves 6 Stressed out? Time for a Caribbean Oil Down – and I don’t mean massage. This heavy duty dish is made by stewing cassava or bread fruit in coconut milk and curry. The result is a thick, indulgent stew worthy of any party. Our version is vegan, but pork bits are typical. With such rich ingredients, Oil Down seems more suited to a ski slope than a beach party, but, still, Grenadians eat this dish in their bathing suits. Brave, brave people. Oil Down is so rich that you may be able to stretch this one pot dish a lot further than six people. Especially if said people are teeny weeny or even tall, yet thin. The stew gains its richness thanks to the coconut milk which is a defining feature of this popular Caribbean meal. Serve with rice. Ingredients: 3-4 yucca/cassava, about 2 lbs 3 carrots 2 stalks celery 1 onion vegetable oil 1 Tbsp curry powder 1 whole hot pepper, optional 2 cans coconut milk (about 31/2 cups) 2 cups water salt …

Yucca/Cassava Balls | Getuk Lindri

Makes two dozen Mildly sweet, bite-sized balls of mashed, sweetened cassava (yucca). This unusual treat is a big hit in Brunei. Read on to learn my struggles with this dessert. My first epic fail. Ingredients: 1/2 cup sugar 1/8 cup water 1/2 tsp vanilla extract 1 pound cassava root, peeled, rough fibers removed, and cubed 1/4 tsp salt red & green food coloring Method: 1. Peel and cube cassava (yucca). Steam for 30 minutes or until cooked. 2. Add sugar, water, and vanilla extract to a small saucepan. Heat over low until sugar dissolves. This is unbleached organic sugar, which is why it looks a little darker. Vanilla extract is possibly the best thing in the whole wide world. Don’t forget that bit of salt. 3. Now, let the games begin. I fought and fought to get my cassava (yucca) smooth, creamy, and without fibers. The battle ended with a food mill, but I’m not sure, even then, that I got everything out. Yucca/Cassava Sticks | Bâton de Manioc

Serves 8 What is a Bâton de Manioc? The pounded flesh of the yucca root, wrapped in banana leaves and steamed for several hours. These dense yuca sticks are great cut up and eaten with stew. They take on the flavor of the banana leaves (which taste like steamed artichoke). Note: Do NOT shred the tough fibers in the center of the cassava, as these are unfit to eat and may contain traces of cyanide (just like apple seeds).   Ingredients: 2 lbs cassava tubers banana leaves or aluminum foil Method: 1. Peel tubers. 2. (This step is optional in the US) Soak the cassava tubers in a bucket of water for about 3 days. Rinse off. 3. Using a grater, shred the tubers into a large bowl. Again, be careful NOT to shred the tough fibers in the center, as these are unfit to eat. Then, using a pastry cutter (or potato masher), pound into a paste. NOTE: If you have a large enough mortar and pestle, you can use this as well. 4. Place about 1/4 cup of the paste …
