Tunisian Grilled Salad with Tuna | Salata Mishwiyya

Usually, the food we grill stays whole. We put it on a bun, or we eat it with our hands. But today’s Tunisian Grilled Salad takes a different approach. The charred vegetables – peppers, onion, tomatoes – are pulsed together into a chunky mixture, then served with flaked tuna, and hard boiled egg. This salad has body. Much of the intensity comes off the grill,  from the raw garlic, hot chili peppers, and the caraway seeds, all of which can be tempered to taste. Please, please, please… let this salad meld for at least an hour before eating. This will give the bite time to mellow.   Because you wouldn’t want to serve your guests a grouchy salad. Mellow is much nicer. UPDATED 2015: Caraway cut down from 1 Tbsp to 1 teaspoon. Adapted from Clifford A. Wright’s A Mediterranean Feast. Spiced Tea | Ainar

I drink a lot of tea, so I would have thought I’d seen it all. Apparently not. Introducing Ainar, the tea brewed especially for baby mama’s and the guests who stop in to dote on their pretty newborns. In case you didn’t know, Mamas need lots of things after having a baby. Rest. Love. Good, warm food. And this tea. The cool thing about Ainar is the treat at the bottom of the cup. Nuts. After cooking a bunch of warming, fragrant spices like cinnamon, caraway, anise, and nutmeg in a large pot of water, the hot tea is splashed over assorted nuts as as much sugar as you can stand. Walnut, almond, and pine nuts are the most common. The super hot tea softens the nut and the total effect is something like spiced nuts… mixed with “good.” Rumor has it that the anise in ainar is supposed to help moms recover after childbirth. Czech Potato & Pickle Soup | Polévka okurková

Serves 6-8 One bowl of this soup takes the bite out of winter. Thick, creamy, and vegetarian, you’ll be amazed at how well the flavors meld. Special thanks to Clifford A. Wright who shared a version of this recipe in his book, The Best Soups in the World. As he states in the recipe introduction: As they spoon some soup, your guests won’t be able to put their finger on what they like so much… Ingredients: 2 lbs potatoes *I used Yukon Gold, peeled & diced 2 1/2 quarts water 1 tsp lightly cracked caraway seeds salt 1 cup sour cream 1 cup flour a handful of chopped dill 4 sweet gherkins, chopped Method: In a large pot, add water to cubed potatoes… splish, splash, splosh… Then, if you’re in the mood, lightly crack caraway seeds in a mortar in pestle to release their aroma. Rye Bread

Makes 1 large loaf, or 2 small My husband called this “the best rye bread I ever ate.”  A nice, dense crumb, with a mild rye flavor. The sugar and honey make this loaf wonderfully addictive. Ingredients: 1 1/4 cups warm water 3 tablespoons honey 1 Tbsp sugar 2 1/4 teaspoons instant yeast 1 3/4 cups rye flour 2 teaspoons salt 3 tablespoons unsalted butter, melted 2 3/4 cups King Arthur Unbleached All-Purpose Flour Optional: caraway seeds (for top of loaf) Method: 1. Place dry ingredients into bread machine. Then wet. (unless your manufacturer recommendations are different) 2. Set on dough cycle. After bread dough is kneaded, check consistency – dough should be smooth and a bit wet. Not shaggy (although it will be shaggy during the first part of kneading) 3. Let rise in bread machine for about 1 1/2 hours. 4. Form into a ball, roll in caraway seeds let rise on a baker’s peel or baking sheet for about 30-45 minutes.
