Falafel Scotch Eggs – Snacking with Selkies

Let’s travel to Scotland and enjoy a traditional Selkie legend paired with a Selkie-friendly recipe for Scotch Eggs. But first… what is a Selkie? On the cold, northern shores of Scotland you’ll find smoke-grey seals basking on the wet rock, backs glistening with ocean spray. On an ordinary day the seals might sit for a time then slip into the water, hardly making a sound as they go about … well… whatever it is that seals normally do. But when the light is dim or fog blankets the horizon, some report having seen the seal skins drop away, revealing men and women of great beauty, whose big, brown eyes give their gaze a look of dewy grace. These are Selkies – merfolk who can shed their skins and walk about on land. But there’s a catch with the Selkie’s freedom: if they lose their skin, they cannot return to their natural form. Tuna & Chickpea Salad | Atum com Grão

Paulo from Portugal told me Atum com Grão is the salad he served at his wedding. The wedding was in France, but they wanted to imbue the reception with a taste of his homeland. Being a very visual person, I immediately imagined his elegant, windswept bride in flowing white gown, chowing down on tuna and chickpeas tossed with onion, lemon juice, and parsley. To be honest, I relish the thought of a bride with tuna and onion breath. How brave. How confident! How awesome these people honor their traditions above and beyond all else. I love it. So here’s to crossing a bridge to new beginnings with the security of tuna and chickpeas on your side. If they can do it, so can we. (P.S. Pakistani Mixed Bean Salad

Next time you go to a potluck,  spice up everyone’s life with pakistani mixed bean salad. Each bite has bits of chickpea, northern white beans, tomato, onion, and peppers. The salad can be spicy or mild, tart or savory. It all depends on how you mix it. Either way, it’s fresh, healthy, and – thanks to being seasoned with lemon juice, cilantro, and garam masala –  just on the other side of unusual. Be sure to make this salad at least a few hours before you need it, to give time for the flavors to meld. Overnight is best. Recipe adapted from Laura Kelley at Silk Road Gourmet. Spicy Chickpea Soup | Hummus bi’l Kammun

Serves 2-4 Hummus bi’l Kammun is velvety smooth. The smoky blend of cumin, paprika, harissa, and garlic make this soup a wintertime treat. As a special bonus, this soup is vegan. NOTE: Much like chili, our soup benefits from a day of rest while the flavors deepen. When reheating, thin to desired consistency with a little water. Ingredients: 2 15 oz cans drained and rinsed chickpeas (or 3 cups prepared, dried chickpeas) 4 garlic cloves, crushed 1/4 cup olive oil 1 tsp ground cumin 2 tsp paprika 1 tsp harissa (or more to taste) 2 Tbsp tomato paste 1 quart cooking water salt pepper Method: 1.     In a large pot over medium heat, add garlic, olive oil, cumin, paprika, harissa, tomato paste, salt and pepper. Simmer for 5 minutes. Add water and chickpeas (reserve ¼ cup chickpeas for garnish if using shallow bowls). Stir to combine and bring to a simmer. 2.     Use an immersion blender to make a coarse puree. Simmer gently, uncovered, for an hour.
