Grapefruit & Avocado Smoothie

Makes a quart Want a smoothie, but tired of all the “normal” options? Try this Domincan treat – a tantalizing blend of grapefruit juice and creamy avocado. The “ice” green color will have you cooled off in no time. (Thanks to the Facebook Fans who voted for this recipe) Ingredients: 3 avocados 2 1/2 cups grapefruit juice 1/2 cup sugar water (or extra grapefruit juice) for thinning to desired consistency Method: Take yourself to that special place, where the sun is shiny (shiny is one degree better than shining), the air is warm, and avocados are perfectly ripe and creamy. Now, wait a day. On this day the sun might or might not be shiny, but your avocados are really, really soft. Which is exactly what we need for this smoothie. See? Toss them in a blender (after removing the pits and the skins, of course). Splash on the grapefruit juice. Avalanche some sugar on top.  You might need more than me if you have a big sweet tooth. You might need less, if you like things …

Mulled Wine | Gløgg

Makes 1 1/2 quarts (6 cups) Bottoms up! The orange peel brightens up this warm holiday drink, while cinnamon gives it familiar festive flavor. NOTE: If you’re making this for a potluck, just keep it warm in a crock pot! Ingredients: 1 cup water 3 slices fresh ginger the peel of one orange 3 cardamom pods 5 cloves 2-4 cinnamon sticks 1 bottle red wine (750 ml) 1/2 bottle port (375 ml) 1/4 cup sugar Garnish, for each glass: Raisins (to taste) Almonds, skinned (to taste) Method: Put on some holiday music or… even better… take a moment to dance around the tree, just like the Danish (wow, they actually use real candles on their tree – so beautiful and … daring!). When you’re sufficiently filled with cheer, coat the bottom of a pot with spices and the orange peel. Mr. Picky says “When in doubt, add more cinnamon.” Splash in the water and bring to a simmer. Cook for 15 minutes to let the spices release their flavor into the water. Then, let the sugar …

Mojito

Makes 1 drink The bold flavor of mint, lime juice, and sugar come together in this classic Cuban drink. If you have time, a simple syrup made of water and sugar cooked together is another possibility for sweetening the drink. Ingredients: 1/8 cup superfine sugar a handful of fresh mint 1/2 lime, juiced 1 shot rum crushed ice Method: Gather your ingredients… Drop a healthy handful of fresh mint leaves into a glass. Add the sugar and mash it together with the mint. Renowned author Mark Bittman says that there should be enough mint pieces to chew on. Squeeze in the juice of a lime for that tangy wow-factor. And a shot of rum. This is my faithful “Planet Hollywood” shot glass one of my brothers got me years ago. Remember when every kid had to have a Planet Hollywood t-shirt? I’m into the retro cool factor. Add crushed ice, stir well and drink! Minty fresh… Now, if only you can get your dentist to approve it! Celebration Drink | Bambus

Makes 1 serving Bambus is a creative way to help make poor wine pass. Simply sweeten with equal parts cola and wine. This clever technique is popular in Croatia, as well as many neighboring countries. Ingredients: 1 part cola 1 part “cheap” wine Method: Get a bottle of “cheap” wine. I was looking for Two Buck Chuck, but the liquor store I went to apparently doesn’t sell booze that “cheap,” so I was stuck paying $5 for this Cabernet Sauvignon. The cola was a bit easier to find … Pour together into a glass. We used a wine glass since they are prettier and, plus, there’s still a great deal of wine in this drink! Give it a taste and see… does it make that “cheap” wine taste better? Hmm. What does Mr. Picky think? Here, have a glass. You can play this game, too! Colombian Oatmeal Smoothie | Avena

Makes 1 liter of “concentrate” Sweet and thick oatmeal drink can be made ahead for stress-free (and kid-friendly) brunch. Simply thin with extra milk before serving. Ingredients: 1/2 cup oatmeal 4 cups milk (plus extra for thinning drink) 1/4 cup brown sugar 1/2 tsp cinnamon Method: Heat milk in a large pot. Bring to a simmer… Add oatmeal. I used “3 minute” Irish oatmeal. Season with a big dollop of cinnamon. Smells like autumn joy. Then add sugar – white or brown, your preference. Simmer for about 10 minutes and then give a buzz with an immersion blender. You could also puree it in a regular blender too. Chill in the fridge. When ready to drink, add extra milk to thin to desired consistency and stir. Serve with some extra cinnamon and a big grin. After all, you just made the tastiest drink in town! Coconut Milkshake

Serves 2 Slurping this Cape Verdean inspired coconut milkshake is a lesson in the happy things sugar can do for us. The cinnamon sticks are the best part – as you dunk them in the milkshake and lick them clean, the cinnamon flavor fills your mouth. Try it! Please note:  this recipe is just for fun – inspired by the authentic recipe from Cape Verde for Coconut Milk. You’d be more likely to find this at a resort on the island than in someone’s home. Ingredients: 3 cups ice cream 3/4 cup coconut milk 1/4 cup milk (optional – depends how thick you like your shakes) cinnamon or cinnamon sticks for garnish Method: Scoop your ice cream. Keep going until you have 3 cups! Add the ice cream to your blender… Pour in the coconut milk… And the regular milk – if you like your shake on the thinner side… Blend and serve immediately. Make sure you garnish with cinnamon sticks or the whole recipe is ruined. I’m not kidding. Coconut Milkshake Votes: 0 Rating: …

Mango Daiquiris

A puckering combination of tart and sweet, the frozen Daiquiri blends ripe fruit, rum, and fresh lime juice with a mountain of shaved ice. This slushy sip of paradise makes it five o’clock everywhere. It’s true. I’ve tested it myself. The original daiquiri from the early 1900’s was nothing so complicated – a plain, stout mixture of sugar and lime juice poured over (or shaken with) ice. Over the years, the drink gained popularity and traveled around the world from Cuba to Cameroon. Today we honor Cameroon’s wonderful mango groves with a flexible recipe for a frozen Mango Daiquiris. You’ll see the proportions generally say “to taste.” This is because some like it strong with a little ice, while others don’t want any alcohol, but enjoy a great amount of ice. By leaving the mango and lime quantities static, everything else is easy to play with. My goal is to provide you with basic guidelines to get you poolside with your favorite drink, as soon as possible. So grab your blender. Let’s play! Makes up to 1 …

Iced Hibiscus Drink with Fresh Pineapple | Bissap a la Bonne Dame

Makes 1.75 liters (plus the pineapple) Chilled hibiscus tea is light and refreshing. The natural floral tang is a wonderful counterpart to sweet pineapple chunks. Kids will love fishing out the fruit in this totally and wonderfully decaffeinated iced tea. VARIATION: Some recipes call for equal parts lemonade to hibiscus tea. We tried this “pink lemonade” and loved it! Ingredients: small handful hibiscus flowers (or 4 teabags) 6 cups boiling water 4 cups ice 1 pineapple, cubed Method: 1. Pour boiling water over hibiscus flowers or teabags. Let steep about 30 minutes. Hibiscus puts on a wonderful show as the purplish dried leaves turn the water vivid red. Strain into ice to speed up cooling. Trust me, you won’t want to wait any longer than you have to! Serve chilled with chunks of pineapple. I made my chunks large. I couldn’t help it. This was the sweetest pineapple I’ve had in a long time. Yum! Cheers! I hope you the last bit of your summer is splendid! Iced Hibiscus Drink with Fresh Pineapple | Bissap …

Iced Fruit Drink | Kompot

Makes 3-4 liters Many eastern European countries enjoy Kompot all year round. This sweet, chilled drink is refreshing on a hot summer’s day and, in the winter, Bulgarian children enjoy kompot as part of the Christmas celebration. Feel free to use your favorite fruit to make this recipe your own. Mint could even be added for fresh flavor. When serving, be sure to give everyone a few bits of fruit at the bottom of their glass! Ingredients: 10 cups water 1 cup sugar 6 oz prunes 4 oz currants (about 3/4 cup) 3 oz dried apricots 4-8 cups ice 1. Add all ingredients, except ice, to  a large pot. First the prunes – not just for old ladies, you know! I keep prunes in my fridge door for snacking on. I can only get Keith to eat them if I call them dried plums. Go figure. Next, the dried apricots. This particular brand is organic. I’ve never seen such dark, sultry apricots before – they look like fireplace embers, right before they burn out. Then, …

Brazilian Iced coffee | Mocha-Cola

Serves 4 Brazilian iced coffee has the spirit of a root-beer float. Rich chocolate milk and fizzy cola sweetens the drink, while the coffee gives it a nice kick (although decaf is a great option, too)! Kids will love the novelty of plain old chocolate milk with cola, without the coffee. Feel free to top with vanilla ice cream, instead of whipped cream. Mmm…. Ingredients: 1 cup double strength coffee 12 oz can cola 3 cups chocolate milk Whipped cream or vanilla ice cream Method: 1. Brew coffee twice as strong as package recommendations. I used instant because I haven’t been drinking coffee lately, but you can, and should, use the best quality you have. Chill coffee. I placed mine in the freezer for 15 minutes and that took the edge off. 2. Combine coffee, cola, and chocolate milk. 3. Pour over ice and  top with whipped cream. Serve immediately.
